Let Freedom Ring, Part 1 July 5, 2009



Greetings from the state of cheese – Wisconsin!  Before I begin on the shenanigans of the day, it is only appropriate to start at the beginning!  Yesterday, I was a total cleaning machine.  Mid-afternoon, I broke for a lil’ snackie to keep me fueled as I whipped the house into tip-top shape.  Enter a hot mess…

1/4 cup Optimum Pumpkin Granola Cereal
1/4 cup Kashi GoLean
1/4 cup rolled oats
1/2 cup skim milk
1.5 tbsp of PB


After putting in a hard days work (I sound like I’m living in like year 1890, BTW), I met up with these two lovebirds for some apps & drinks before hitting the road to Wisconsin:


Ashley and Maxx got engaged exactly one week ago from today!  They are seriously too cute :).  Maxx’s sister was actually in town as well, so the four of us met up at MOTO-I, a Japanese restaurant in Uptown Minneapolis, for some yummy drinks and eats.  You could easily pass this restaurant if you weren’t looking for it, but it is the only place outside Japan that brews their own sake.  Pretty cool, no?

I started with a MN-brewed Summit Oatmeal Stout with some kaffir lime-spiced peanuts (shared amongst us all)…


Then a sampler platter of assorted eats (l-r): a Tofu, Ponzu & Sweet Chilli Steamed Bun, sticky rice and a sweet potato pancake thingy (I don’t think that’s the technical term…).


The restaurant was super yummy, and the best part?  They had SHUFFLEBOARD!  Oh yeah, us four definitely squeezed in a game before we had to part ways.  After lots of chatting, it was finally time to hit the road to head home to the fam.  Of course, when traveling, snacks & beverages are a MUST.  If I am going to be driving 3 hours dang it, I’m going to need some good tunes, good munchies and good caffeine – a pint of blueberries (I am a serious fruit fiend today) and a Almond Joy blondie (soooo good!):















Finally I arrived to good ol’ home sweet home.  Then went straight to bed.  For real.

After a glorious night’s sleep in my own bed (aka best thing ever), I woke up and shocker of shockers! didn’t have coffee this morning.  Instead, I guzzled a big glass of water in preparation for today’s 10-mile run as well as a classic Holly breakfast – PB+B on toasted Ezekiel!


A funny thing happened – at home, my parent’s buy Skippy Natural peanut butter, which was totally my old FAVORITE PB.  Seriously.  I used it for breakfast this morning however, and I couldn’t believe how kind of artificial and odd it tasted after only eating the good stuff (PB made only from peanuts + salt) for like a year now.  I didn’t like it at all – one of those little things that kind of show you where you’ve been and where you are now :).

Then it was time for the weekly long run – this time, the big 1-0 for mileage.  Luckily, Mama Everythingtarian (she’s totally one hot  fit mama) ran the first 7 miles with me, which made the time go by so fast.  Then the last 3 miles, I stepped my game up and hoofed it – completing the 10 miles in just about 100 minutes (10:00/mile).  I took her at an easy pace and felt really good!

When I got back, I guzzled water and stretched for a good 15 minutes.  After about another 1/2 hour, I was ready to eat and devoured a yummalicious lunch…Blueberry + Banana Smoothie (1 cup skim milk, 1 cup frozen blueberries, 1 banana + 1 huge handful spinach) plus a Jumbo Salad (spinach, tomato, broccoli, cucumber, peppers + drizzle Newman’s Light Balsamic) and a Berry Oatmeal Almond Blondie!




Then, it was POOL TIME!

After the pool, it was totes time to whip up some dindin!  I helped Barbie in the kitchen and chopped veggies like I’ve never chopped them before.  I was totally getting snacky, so I had a Tahini Cookie (x2) and a string cheese to tide me over until chow time.


Look at this lovely array of dinner eats – I love coming home for a plethora of reasons (I swear Mom & Dad!), but one of my favorites it getting spoiled with yummy eats I can’t afford myself (i.e. salmon).  On my plate:  1/2 garlic breadstick (from the fab Amish bakers at the farmer’s market), grilled salmon, roasted veggies & sweet potato fries!


Seriously. So. Good.

Dessert was equally fab.  You’ve just got to love a holiday where you can celebrate your independence and chow down at the same time – thank you America!  Enter strawberry shortcake + Almond Joy Blondie + vanilla ice cream.  Seconds, anyone?

Wild Weekend Wedding Wrap-Up June 7, 2009

Whew – I cannot believe it’s Sunday already!  I hate how the weekends just fly.

This weekend was SO MUCH FUN!  Since I had Friday off from work, I took full advantage to gets tons of stuff done.  The morning began in a rush however, as I forgot to fill up my gas tank.  Sooo…between getting gas, hitting traffic, getting lost and having no food in the house, I was more than a 1/2 hour late for my 8am meeting.  Ugh!  I hate being late.

The worst part was I had to scramble for breakfast at the gas station.  I was in such a hurry but yet still found an extra 5 minutes to browse the energy bar section for the best pick.  (I guess you know you are a food blogger when…)  I decided on a banana and Powerbar Harvest bar in Toffee Chocolate Chip (which was fine – not bad, not great)…


 At my meeting, there was a large coffee consumed.  I needed it.  Badly.

When I got back, I snacked on some graham crackers with AB+J while I paid my bills, bills, bills…


I also took a couple minutes out of my Friday to admire my lovely new pedicure…


I was so glad I took Friday off – I was so productive and got a lot of things done I had been procrastinating waiting to do for a long time.  Since I knew the rehearsal dinner would be later than I normally ate dinner, I had a bigger lunch to hold me over until then.  Making good use of the rest of my refridgerator, I concocted a black bean salsa (black beans, onion, tomato, cumin, garlic powder, S+P, drizzle of EVOO & lime juice) with some Triscuits, as well as some sweet potato fries, sprinkled with cinnamon and drizzled with maple syrup.  Yummmm!


 And a handful of dark chocolate-covered raisins (okay, two handfuls!) after…


 Rehearsal dinner time!

The groom’s family had arranged a FABULOUS dinner cruise on the river.  So, we spent several hours chugging up and down the river, enjoying beautiful blue skies and some cool, refreshing breezes.  Here are all the bridesmaids together before the big day:

Don’t worry – I didn’t forget the best part: the chocolate-covered strawberries!  My plate had one, but throughout the evening I believe I consumed about 5 or 6 :).  I couldn’t resist – soon they wanted to get rid of the last few and were like, “Go find Holly!  She’ll eat them!”  And I did.

 Finally…Saturday (AKA WEDDING DAY) came!

 Just to warn you, I didn’t take any food pictures on Saturday.  Honestly, I was too busy having fun/helping the bride/running errands/gettin’ myself pretty to even think about it.  My food intake wasn’t the greatest (not necessarily unhealthy, but lots of it!).  There were lots of snacks, treats and yummy food though, along with a couple beverages of choice from a certain open bar, of course.

Jess seriously looked stunning!  She was a hella gorgeous bride, and well, Brad didn’t look to shabby either :).

After the ceremony, it was time to get down to business and dance!  I loved the fact that I knew so many people at the wedding – from family to friends to family friends, it was so much fun to see everybody.  Throughout the night, I sipped on a couple glasses of red wine, along with a beer and a mixed drink.  By the end of the night, I was chugging water because we were sweating so much on the dance floor.

 Oh man…we literally did not leave the dance floor from about 8pm to midnight.  I woke up this morning to find that my abs, calves and legs are totally sore.  Dancing is a stellar workout – and wayyyyyy more fun than the gym!

This morning/afternoon, we regathered (looking all quite tired, haphazard and joyful from our awesome night) for the present opening.  We were lavished with a wonderful brunch array, in which I downed a couple pancakes, some mini cinnamon rolls, lots of fruit and two cups of coffee.  Oh man, I felt great after that brunch!  After present opening, it was lots of catch-up errand running and whatnot, as well as the movie Up (which you must see – it’s adorable!).

Since I ate all that around noon, I wasn’t really even hungry until dinnertime.

Oh Happy Humpday! May 27, 2009

First things first…yours truly did in fact get her buns out of bed make it to 5:30am yoga this morning!  The big shocker?  I was even EARLY to yoga.  And early to work this morning!  Deb (instructor/yoga diva) even gave me bonus points for coming in the morning and is going to hold me accountable (per my request) for coming every Wednesday.  Don’t ya find it easier to go workout when you know someone is expecting you there?

Well, since I am always immediately hungry when I wake up, I relied on the old standby of banana + raw almond butter to last me through the 60 minute Vinyasa Flow class…


Followed by a special Fitnessista breakfast cookie (my favorite, strawberry + coconut) post-yoga…


Honestly, I felt SOOOOO good after morning yoga.  Not only did my achy 1/2 marathon muscles feel amazing afterwards, but I was in such a happier, joyful mood all day.  I seriously believe there is nothing better than a good sweat and endorphin flow first thing in the morning.  I am going to try and remember that next Wednesday when my alarm goes off at 4:45am :).

Since I woke up at the crack o’ dawn, I grabbed a lunch that I knew would be easy to pack.  Introducing, my very first Amy’s Indian Samosa Wrap!  I swear this girl can do no wrong.  My burrito was chockful of potatoes, peas and tofu.  I would buy this again in a heartbeat.  Along with one of my new Heart Thrive date vegan energy bars, lunch was light and good.



The New York Times crossword always makes for an enjoyable lunch date!  Work went on as usual today…I am still quite undecided about where my job/life/everything is going right now but no worries, more on that later.  All I know is I for sure have my administrative assistant job until the end of September, then who knows?  I believe Jenna reiterated it best when she said, if you want to make God laugh, tell him your plans.

After lunch, I was feeling like I just needed a little something more. So I had a cup of my favorite green chai tea (which they lovingly stock for us at work) along with a small handful of trail mix.


Later in the afternoon, I had one of my staple snacks: yogurt + berries + some form of granola.  The reason I make it a staple snack is because it really is the right mix of protein + carbohydrates to keep me from dipping into the communal candy bowl.  And if you are anything like me, the snack monster tends to attack just around the 3:00 hour.  Today, it was Fage nonfat Greek yogurt, a drizzle of honey, 3/4 cup blueberries and 1/4 cup TJ’s blueberry muesli.  One of the best mixes yet!


Wednesday night means beach volleyball league night!  After work, I rushed over to my friend Ashley’s house to concoct a little dinner teamwork style.  Since I had some of my TJ’s Thai Yellow Curry sauce leftover, we created a nice Thai Chicken Veggie Coconut Curry mix.  We sauteed zucchini, pepper, sweet potato and spinach in olive oil, then added the sauce and 1 medium chicken breast diced.  Served over brown rice and topped with yummy salty peanuts, it was the perfect pre-volleyball fuel.

After dindin, we scrambled to our volleyball match.  I am not going to lie to you guys – we aren’t good.  In fact, we’ve won 1 out of 9 games (ouch!). Me, out of everyone, may be the worst.  However, we decided today that I don’t think there could be a worse team out there who has as much fun as we do.  That’s what it’s all about people.

After an early morning and an all-around good day, I am ready to sleep like a baby tonight.   Off to brush my teeth then go to bed!  Have a fabulous night everyone!

The title of this post completely tells it all.  It is one WINNNDYY day here in Minnesota!

Besides announcing my very FIRST giveaway, the day started out like any other.  Since I’m heading to Madison this weekend, I’m trying to use up all the things I have in my pantry.  This is why today’s breakfast might look eerily similar to yesterday’s…


That’s right – a little AB+J on toasted Ezekiel bread with raspberries!

Mid-morning, it was the last of these kiddos (this one I found on sale at Kowalski’s for $0.88!)…


Work was work as usual…at nooner I broke for lunch.  Along with a steamed sweet potato (fork holes all around it and nuke it for 5 minutes) and grape tomatoes, I devoured a yummy Avocado-Chickpea Mash sandwich.  It was 1 small avocado mashed with 1/2 cup chickpeas, plus salt + pepper.  Lunch today however, was enjoyed on the floor by the front desk.  The lunch room was getting crowded, and quite frankly, I enjoy my peace & quiet lunches.  So I ate next to lovely Laurie, who graciously offered to take my picture and let me sit by her…



After lunch, I went on a windy, windy walk!  I believe the skirt I was wearing even flew up a couple times (I hope nobody got a peek!).  After 30 minutes, I feel like I even got a mini-workout because fighting the wind totally felt like resistance training!  When I got back, I had a cup of Good Earth Sweet & Spicy tea with some of my TJ’s raw, vegetable-laden Righteous Rounds chocolate chip cookies.


The rest of the day flew by fast, and I got to leave early!  I had a doctor’s appointment so I skedaddled out of work at 3:30pm to take care of business.  Unfortunately, I did not pack an afternoon snack, and it totally bit me in the butt later.  By the time I got home at 5pm, I was starving and dug into this while my pasta was boiling…


Oops!  And this…


I started dipping the TJ’s cookies in the almond butter, then in shredded coconut!  Gosh, it was heavenly!  However, I did feel slightly out of control while doing this.  Between not having eaten, having it be around that time of the month and 1/2 marathon training, I definitely overdid it by eating almost 10 cookies like this.

On top of that, I also scarfed down dinner, which was leftover Italian pasta sauce from last week over Barilla Plus penne pasta, sprinkled with some goat cheese.





















Even worse, after dinner, I said what the hell and finished the last of the cookies (about 5).  I’m not going to lie, the end of the day today was not my best eating day.  But it happened, and I am sure it will happen again.  I’ve spent many hours over the past couple years beating myself over doing something like this – binging and feeling out of control.  We’ve all been there.  Right now, I feel lethargic, gross and just all over icky.  Quite frankly, it’s a great reminder of why I do eat healthy (most of the time :)).  Eating healthy makes you feel good, energetic and happy!

Right now, I am sipping on some mint tea to settle my stomach, going to head off for a short walk (walking after binging is shown to actually help reduce the side effects!) and then it’s beach volleyball league tonight.  There is so much more to live for than food. 

So here I am, brushing it off and remembering…tomorrow is always a new day.

***Update:  Since honesty is the best policy, I also had some DQ ice cream (courtesy of Megan) after dinner…a free Peanut Buster Parfait?  I could not resist.  I ate about 1/2 – 3/4 then threw the rest away – I was full and not feeling so hot.  Luckily, last night’s beach volleyball game was a good one.  Hopefully I burned off some of those cals from today!


A Spray Tan First May 19, 2009

Happy Tuesday (I almost wrote Wednesday!) – like I said, man how time flies!  Today was HOT here in Minnesota!  I am talking like 90+, and it felt fabulous.  I forget sometimes how I miss a good cathartic sweat!

I’m trying to use up all my groceries before I leave town on Thursday, so this morning was easy AB+J toast with about 1 cup of raspberries.  Oh man – those raspberries were sweet and delicious!


Throughout the mid-morning I snacked on the last of my Cascadian Farms Oats + Honey granola with a generous sprinkle of coconut…such a fabulous combo!


For lunch, I ate the rest of my leftover Thai Coconut Curry from last night – it was just as good reheated the next day!  Along with a Diet Cherry Coke (just tastes so good sometimes!)…


























After lunch, I took a nice 40 minute walk.  Of course, I was totally sweating in my work clothes when I got back, but hey, a little smell is worth the fresh air, right?  Mid-afternoon, I busted out my fave LarabarMiss Cherry Pie!  She was extra chockful of almond chunks today – extra delicious!


I was eager to bust out of work at 5pm, which I did, because I was meeting my college roomie Jamie.  I promised her awhile ago I would try spray tanning (aka Mystic Tan) with her for the first time, so today was the big day!  We went out to eat at Cafe Latte – the BEST little cafe with totally amazing desserts in St. Paul.  I know, I know I am not supposed to be eating out (I mean, come on Holly, three times in the past week?), but I did :).

My dinner was soooo good!  I got the Salsa Salad (romaine, black bean spread, guacamole, tomato, onion, salsa, cheddar cheese and a dollop of sour cream), which came with tortilla chips and a whole wheat roll.  I ate all of the salad (such a good combo!), 1/2 the chips and 1/2 the whole wheat roll.

























And I present to you…dessert for two!


Yeah, that’s right, MANGO BLUEBERRY CHEESECAKE!  Enough said right there.

After dinner, we went spray tanning, which I was totally nervous about.  I thought for sure I would screw it up (anybody remember Ross from Friends?).  It was really easy, and I should start seeing some color in a couple hours.  Although I smell a bit, I’m excited to see what it turns out like – hopefully not orange by the way!

Jamie and I shopped and walked around the area for probably around an hour and compared arms post-spray tan…


Still nothing yet, but we will see tomorrow…don’t forget to come back tomorrow morning for some fun, fun stuff!


The Perils of Peanut M&Ms May 18, 2009

I think the title of the post says it all…but you’ll see the chocolate in a bit :).

This morning, I started out with one of my faves which I haven’t had in awhile…a BREAKFAST COOKIE!  Using Fitnessista’s genius recipe, I concocted a strawberry coconut cookie using berry acai hemp protein powder.  Strawberry + coconut = heaven.  With a cuppa joe & skim milk (not pictured)…


Unfortunately, this didn’t hold me over as long as I hope so I was just forced to enjoy this new, delicious Larabar a little earlier than usual…Peanut Butter Cookie!


I don’t know how Ms. Lara does it, but this tasted soooo much like a peanut butter cookie!  Each flavor I try tastes so much like what it is supposed to be but still uses under 6 ingredients and is soy-free, gluten-free, raw, unprocessed, etc. etc. etc.  If you haven’t tried these yet, you must!  They are a bit expensive but just think of it as a healthy treat!

Lunch was a semi-repeat from last night…Italian-style chickpea burger with cherry tomatoes and a cocktail of my TJ’s raw chocolate chip cookies (made with vegetable extracts!) and the last of my Black Mission Figs.


After lunch, I took a nice 30 minute walk in the GORGEOUS weather.  It was sunny and warm…finally!

For some reason, NOTHING was filling me up today.  There are certain times of the month where this just happens and ya gotta give in.  My stomach started grumbling about 2 1/2 hours after lunch, so I kind of snacked all through out the afternoon.  First up?  The last of my TJ’s Raisin Pecan bread


An hour later it was a perfectly juicy, sweet and delicious mango


Then another hour later, it was two handfuls of these babies…














Peanut M&Ms are seriously one of my faves!  Once I start, I often just can’t stop, which I why I try to stay away from them and enjoy in moderation.  Today I knew they would hit the spot, so I dug in and voila!  they did!  These suckers are easy to down so I kept it to 2 handfuls and planned on a healthy, nutritious dinner.

When I got home, I headed off for a 3 mile run.  I kept the pace slow (about 10:00/mile) and took her easy.  My legs were still feeling a bit fatigued from Saturday.

I don’t know if I mentioned this, but I actually got back last year from teaching English abroad in Thailand.  In other words, I had a hankering for some Thai!  I used the yellow Thai curry sauce I got from Trader Joe’s, I sauteed sweet potato, onion and tomato in canola oil and garlic.  Then I added the sauce and served it over the Lentil Biryani Rice pack (also from TJ’s), topped with cilantro and coconut.  Oooohhh…it was just spicy enough and HIT THE SPOT!














Now I am sipping tea, finishing watching some good trash TV – Dancing with the Stars and The Bachelorette.  This gal is in definitely need of a rest, so I am kickin’ back tonight and enjoying!  Hope you do the same!

P.S.  I know there was no edition of Holly Investigates… today, but no worries, it’s on its way!

***Update:  Since I was up kinda late (for me at least, haha!), I had a spoonful of almond butter right out of the jar (1-1.5 tbsp.), just like I did when I was a kid!


Woohoo… May 16, 2009

…for the weekend!  My weekend started out fabulously last night, but more on that later!  First things first people.  Yesterday morning, I was running late, which almost always happens on Friday mornings :).  So it was a quickie breakfast of 1.25 cups Kashi GoLean Crunch Honey Almond Flax (one of my Faves!) with 1 cup vanilla soymilk and a medium banana (1/2 sliced in the bowl, the other 1/2 eaten plain).














For lunch today, I decided to take my hour (plus some) and squeeze in a run!  I love that I have the flexibility to do this at work, so I try to take advantage of it at least once a week.  Pre-run I fueled up with the last of my Tarjay trail mix (pecans, yogurt raisins, goji berries, cranberries & raspberries).  Two days ago, I would have bought this mix again in a heartbeat, but I looked at the ingredients list more carefully yesterday and realized the dried fruit was sweetened 😦 – no need for that!


The 4.5 mile run was AWESOME!  The weather was perfect, the temperature was perfect, the timing was perfect – it was one of those days when the stars align, and it all just works!  I showered quickly (I belong to the fitness club just next door – very convenient) then headed back to work to enjoy…

a good ol’ PB+J sandwich, roasted root veggies (sweet potato + parsnip) from last night and a giant pickle (courtesy of a co-worker).  It was good!  Unfortunately, I ran out of my beloved TJ’s almond butter so I borrowed some JIF Natural from my friend – not my fave.  After having raw  nut butters with just nuts and/or salt, these taste sooo sweet and almost artificial.














After lunch, I was still yearning for a lil’ somethin’ somethin’ because I burned those cals midday with the run, so I snuck a Quaker Oatmeal Raisin granola bar from another co-worker (thanks Angie!) and had it with a nice cuppa Celestial Seasonings Sweet Coconut Thai Chai decaf tea.  Later in the day, I had the usual plain yogurt/granola/berries combo – hit the spot as always!














Then came by far the best part of the day….dinner out to eat (sorry TSL Challenge!) with one of my college besties Jess at the Cheeky Monkey Deli in St. Paul.  Jess and I had been planning to go here for months, pretty much because we saw this and knew we had to have it….

Now that is a foodgasm if I’ve ever seen one!  To balance out the nutritional profile of this meal a bit, Jess and I also split a salad: arugula, bacon, egg, red onion & blue cheese dressing.  It was good and had LOTS of arugula, which I loved.  This meal was definitely a Friday treat, but since I’ve been really good about eating at home and eating healthily, I honestly had NO qualms about enjoying this delish meal!


Later, us gals hit up the mall on this rainy Friday night and spent two hours browsing!  Jess is getting married in 3 weeks (ahhhh!) and naturally, we were on the lookout for rehearsal dinner attire, cute shoes, jewelry, dresses – the usual :).  Unfortunately, I found nothing but this cuppa decaf coffee with skim milk and almond anise biscotti!


Whew – I was tired last night!  Even more tired knowing I needed to tackle 11 miles this morning!  As soon as the mall closed at 9pm, I skedaddled home and jumped in bed, which I know is super cool of me to go to bed at 9:30pm on a Friday night, haha!  This morning I woke up at 7:15am, went downstairs to make myself some breakfast/prerun fuel.  For the life of me, I couldn’t decide what to have (everything involved my precious empty jar of almond butter!) so I decided on some toasted Ezekiel bread with JIF Natural peanut butter, a sprinkle of coconut and banana.

Now it’s off to finish up this post, get ready for the run (it’s cold and windy, argghhh!), run the 11 miles and then enjoy the rest of this Saturday!  Hope everyone has a fabulous weekend!
