Running Well, Wedding Bells + Internet Hell August 16, 2009

Yep, that pretty much sums up my weekend.

Let’s start with the good stuff – I got up at 7am bright n’ early on Saturday morning and ate a nice carb-heavy pre-run meal consisting of a 1/2 cup Special K with 1/2 cup skim milk and a chocolate chip granola bar.  There is no better running fuel than pure white carbs.

Then, yours truly did what she has NEVER done before – run 16 miles!

The first 9 miles went well despite the Minnesota heat and humidity.  I made sure to make frequent water stops (also stopping to splash water on my head to cool down) before returning back to my friend Ashley’s where I popped 3 Clif Black Cherry Shot Bloks and some Diet Cherry Pepsi (don’t judge).  Then Ashley headed out with me to finish the last 7 miles, and my other friend Megan joined us for the last 3 miles.  My friends are seriously the best :).

In the end? The run went AWESOME.  I finished in my marathon pace of just under 10:00 minutes/mile, equaling about 2 hours and 40 minutes.  I seriously think I could have gone even further. It was that kind of glorious running day.

Seriously…if I could marry Indian food I would.  Shhhhh, don’t tell McMac I am cheating on him ;).

After lunchie, it was off to IKEA –  ummm, holy anxiety!  Soooo many people, soooo many things to look at and tooooo little time.  Luckily, I had my trusted Meggy Moo in tow.  If this isn’t a friend, I don’t know what is:

Then, I gussied myself up and headed off to my girl Charlotte’s wedding!  Charlotte and I studied abroad together in college in London, and we’ve pretty much been soulmates ever since.  LOVE that girl.  I also got to see Brittany (who also studied abroad with us) for the first time in years.  LOVE that girl too.

Yeah, that’s right.  My girl Char had a plethora of CHEESECAKES at her wedding instead of regular ol’ wedding cake.  That is reason #4,276 that we are friends.  Brittho and I may have split an additional piece of Key Lime Cheesecake.  Just sayin…

When I got home, I crashed harder than Lindsey Lohan’s career.

After almost 10 hours of glorious sleep, I woke up to coffee and a lovely chat with Ashley.  Then, right as I started contemplating eating Ash’s carpet, it was 10:30am and time for me to meet another fabulous lady you all know – Ms. Angharad!

We met at the Uptown Diner…looks like a total dive from the outside, but inside you will find such fabulous delicacies such as this…

After brekkie, I skedaddled back on the road (wasn’t I just driving?) back to Madison.  Five LONG hours later, I arrived safely.  After successful shopping trip #2 at the co-op (including a free coupon for a French Meadow bread product and a bottle of organic agave syrup – score!), I made it back to my apartment to find the Internet still not working.

WTF?!?!?!?!

I can’t handle this.  ATT is apparently coming on Tuesday to fix it, but that means another two days of paying for coffee at the cute coffeeshop for free Wi-Fi.  I guess there could be worse thangs…

I just scrolled through the post and realized it’s practically a marathon long, which by the way, the Twin Cities Marathon is in T-minus 49 days.  Eeeeeeek!

After lunch, I got the job answer I had been waiting for!  I decided to take the job offer I got this last week!  Woowoo!  The only slightly sad part is that the job is back in Madison, Wisc. (my ol’ college stompin’ grounds), which means I have to leave Minnesota, which is so sad.  I have to leave new friends, like my fabulous new bloggy bud Angharad as well as my besties and family.  However, I am firm believer that everything happens for a reason – so I look forward to seeing what the future holds!

Suddenly, after I had made the decision, I was hungry again (haha!), hence this lovely…

After work (in which I could not concentrate the rest of the day – my mind was swinging from limb to limb thinking of the bajillion things I need to do), I ran home quickly then met my friend Brad for dinner.  He’s leaving in two days for Michigan (hollllaaaa Miss K!) for grad school, so we had one last get together at Azia Restaurant, a delicious restaurant which prides itself on “Asian spice meets Minnesota nice,” love it!

Brad = suriously one of the funniest peeps ever.  Hence why, two hours later I found myself laughing hysterically, tearing up in laughter and definitely drunkity drunk drunk drunk on red wine.  He also pointed out that yesterday, I accidentally wrote I was meeting up with people from my, pubic relations internship” instead of what it should have been – “public relations internship.”  Just a slight difference between the two – he referred to it as a “hairy” situation ;).

After dindin, I may just have had a couple spoonfuls of vanilla ice cream to seal the deal for the night.

 

Now, I am feeling excited, overwhelmed and nervous for all the changes ahead.  I start my new job August 10th – eeeeeekkkk, that’s like less than a couple weeks!  So much to do, so little time.  I didn’t run 3 miles today like planned – I figured another day off to celebrate wouldn’t be the worst thing in the world :).

HAPPY 4th OF JULY EVERYONE!

Greetings from the state of cheese – Wisconsin!  Before I begin on the shenanigans of the day, it is only appropriate to start at the beginning!  Yesterday, I was a total cleaning machine.  Mid-afternoon, I broke for a lil’ snackie to keep me fueled as I whipped the house into tip-top shape.  Enter a hot mess…

After putting in a hard days work (I sound like I’m living in like year 1890, BTW), I met up with these two lovebirds for some apps & drinks before hitting the road to Wisconsin:

Ashley and Maxx got engaged exactly one week ago from today!  They are seriously too cute :).  Maxx’s sister was actually in town as well, so the four of us met up at MOTO-I, a Japanese restaurant in Uptown Minneapolis, for some yummy drinks and eats.  You could easily pass this restaurant if you weren’t looking for it, but it is the only place outside Japan that brews their own sake.  Pretty cool, no?

I started with a MN-brewed Summit Oatmeal Stout with some kaffir lime-spiced peanuts (shared amongst us all)…

Then a sampler platter of assorted eats (l-r): a Tofu, Ponzu & Sweet Chilli Steamed Bun, sticky rice and a sweet potato pancake thingy (I don’t think that’s the technical term…).

The restaurant was super yummy, and the best part?  They had SHUFFLEBOARD!  Oh yeah, us four definitely squeezed in a game before we had to part ways.  After lots of chatting, it was finally time to hit the road to head home to the fam.  Of course, when traveling, snacks & beverages are a MUST.  If I am going to be driving 3 hours dang it, I’m going to need some good tunes, good munchies and good caffeine – a pint of blueberries (I am a serious fruit fiend today) and a Almond Joy blondie (soooo good!):

Finally I arrived to good ol’ home sweet home.  Then went straight to bed.  For real.

After a glorious night’s sleep in my own bed (aka best thing ever), I woke up and shocker of shockers! didn’t have coffee this morning.  Instead, I guzzled a big glass of water in preparation for today’s 10-mile run as well as a classic Holly breakfast – PB+B on toasted Ezekiel!

A funny thing happened – at home, my parent’s buy Skippy Natural peanut butter, which was totally my old FAVORITE PB.  Seriously.  I used it for breakfast this morning however, and I couldn’t believe how kind of artificial and odd it tasted after only eating the good stuff (PB made only from peanuts + salt) for like a year now.  I didn’t like it at all – one of those little things that kind of show you where you’ve been and where you are now :).

Then it was time for the weekly long run – this time, the big 1-0 for mileage.  Luckily, Mama Everythingtarian (she’s totally one hot  fit mama) ran the first 7 miles with me, which made the time go by so fast.  Then the last 3 miles, I stepped my game up and hoofed it – completing the 10 miles in just about 100 minutes (10:00/mile).  I took her at an easy pace and felt really good!

When I got back, I guzzled water and stretched for a good 15 minutes.  After about another 1/2 hour, I was ready to eat and devoured a yummalicious lunch…Blueberry + Banana Smoothie (1 cup skim milk, 1 cup frozen blueberries, 1 banana + 1 huge handful spinach) plus a Jumbo Salad (spinach, tomato, broccoli, cucumber, peppers + drizzle Newman’s Light Balsamic) and a Berry Oatmeal Almond Blondie!

After the pool, it was totes time to whip up some dindin!  I helped Barbie in the kitchen and chopped veggies like I’ve never chopped them before.  I was totally getting snacky, so I had a Tahini Cookie (x2) and a string cheese to tide me over until chow time.

Look at this lovely array of dinner eats – I love coming home for a plethora of reasons (I swear Mom & Dad!), but one of my favorites it getting spoiled with yummy eats I can’t afford myself (i.e. salmon).  On my plate:  1/2 garlic breadstick (from the fab Amish bakers at the farmer’s market), grilled salmon, roasted veggies & sweet potato fries!

Dessert was equally fab.  You’ve just got to love a holiday where you can celebrate your independence and chow down at the same time – thank you America!  Enter strawberry shortcake + Almond Joy Blondie + vanilla ice cream.  Seconds, anyone?

Me Time June 28, 2009

Here is where I parked my buns today…but more on that in a bit ;).

Yesterday, after the big 9-mile run, I showered, purtied myself up then headed off to a food blogger’s mecca…

WHOLE FOODS!!!

While I was shopping around for the goods, one of my best friends Ashley called me.  I answered my obnoxious ring, then  the conversation went something like this:

“Hey Ash,” I said.

“Hi Hol,” Ashley replied.

“What’s up?”  I asked.

“I’m engaged!!!” she shrieked.

Crash as my green Whole Foods basket dropped to the ground.

“Ahhhhhhhhhhhhhhhhhhh…..shut up, are you serious?” I asked.

“Yes,”  she said.  “He asked me this morning.”

“Shut up.  Oh my gosh.  Shut up!  Oh my God – congratulations!  I am soooo happy for you!”

That was a shortened version of the obnoxious convo (lots of screaming in Whole Foods went on).  Since Ash only lives about 5 minutes from Whole Foods, I did a quick shop, hit up the hot bar (because I needed a lil’ afternoon sustinence) and raced over to Ashley’s place!

That would be about 1 cup each Curried Tofu + Balsamic Roasted Veggies.  Yum and yum.

I couldn’t arrive over to Ashley’s without some kind of congratulations gift, so naturally I headed to the Whole Foods bakery before I left and brought over a piece of Chocolate Lava Cake (my girl Ash loves her chocolate!) to congratulate the adorable couple.  Emphasis on adorable.  The three of us chatted for a good hour or two, split the cake between us and honestly – they look soooo happy.  It made me tear up a bit :).

I skedaddled to let the fiancees revel in their love and headed home to make some dinner.  Taking the rest of last night’s unused rice, I made a lovely Fried Rice with Eggs.  Fried rice is super simple and can be really healthy as long as you take a couple precautions, most of all not overdoing it on the oil or the soy sauce.

I sauteed onion, carrot, tomato, asparagus & spinach in 2 tsp. of canola oil with about 1/2 tbsp. garlic.  While this was cooking, I started the eggs by frying two of them in about 1 tsp. canola oil.  Then, I added about 3/4 cup rice to the veggie mix, added 1 tbsp. soy sauce and a pinch of ground ginger and stirred it all together.  To plate, I took the rice & veggies, then layered them with the two fried eggs (slightly runny – yum!) and topped with green onion.  Voila!

After dinner, I accomplished one of my weekend want-tos: seeing Food, Inc.!

After having read both “The Omnivore’s Dilemma” by my semi-crush Michael Pollan and “Fast Food Nation” by Eric Schlosser, I figured I had a pretty good idea of what to expect.  And I was right.  The movie followed a lot of the same themes/people/scandals that both books did; however, this movie is really a testament to the power of visual imagery.  You read about animal cruelty, mishandling of meat and food products, lack of regulation by the FDA, etc.,  but when you put them together with real life images, it’s really quite impossible to ignore the magnitude of the problem we face in the U.S.A. of food.  We no longer know what we are eating and what is healthy anymore.

I will have a larger review later on (in Holly Investigates) but you must see it: EVERYONE MUST SEE THIS MOVIE.

On a happier note, after the movie, I met up with my older sister for a drank, which she paid for.

Then we both headed home to hit the hay, and when I woke up this morning, I made one of my all-time fave blogger recipes…Oaty Cakes from Miss Polly!

After breakfast, my sister and I headed over to my aunt’s house to see my cousin’s new baby.  What a lil’ smiley girl that Julia is!  After visiting with the fam for awhile, I headed over to a late brunch with  my old college roomies Jess  and Jamie (+ their significant others).  I didn’t eat anything because I had eaten breakfast only a couple hours before, but it was so good to catch up with them after the wedding a couple weeks ago.

After brunch, it was finally beach time!

Ahhh…nothing beats a solo day at the beach, except a Vegan Mixed Berry Muffin from Whole Foods obv!

Let’s be real – just because this muffin was “vegan” does not mean it was that healthy.

Pros

  • No eggs/butter/shortening
  • Lotsa big hunks of berries

Cons

  • White flour
  • Vegetable oil

A.k.a. the moral of the story is, just because something says “vegan” or “organic” or “all-natural” doesn’t necessarily mean it’s healthy for you.  Be smart.  Become a label reader.  Then eat it anyways :).

Now I am back home, gettin’ things done: laundry, cleaning, watering flowers, freelance writing and job applications – all on the agenda this afternoon.  Then it’s dindin time and some yoga/pilates with a sub teacher (she better be good!) – hopefully I will see ya later tonight otherwise catch ya bright and early in the morn!

That includes me, my dinner and my hair.  Wowza – it’s pretty darn der hot up herre in Minnesota, yah.

Okay, so today is a scorcher – it’s like 90 degrees+, and I think it’s making me a bit loopy, to say the least.  You’d think with a solid brekkie (thanks to Erin for reminding me what a fabulous word this is!) like this, that wouldn’t happen!

1/3 cup rolled oats + 1 tbsp. oat bran

Monday was Monday – I had some e-mails to answer, things to organize and projects to continue, and this lil’ bugger helped me get through it all.  I’ve never tried this flavor before, but it was good.  The actual bar was a bit chewy and gummy (imagine Stretch Armstrong then imagine a raw organic bar – same concept), but it did have like 14 grams of fiber!  Nuff’ said.

For lunch, I skipped my usual walk to save my co-workers from having to see me with a huge afro/bird’s nest/I stuck my finger in a light socket after venturing into the humidity.  Instead, I was a good girl and ate my lunch while putting in job applications.  Fun?  Not so much.  Productive?  Fo sho.

And for lunch?  A yummy PB+B sammie with a strawberry vanilla Tootsie Pop for dessert (heavenly!).

Snackytime was extra delicious – I took my favorite yogurt combo (lemon yogurt + fresh berries) and added a sprinkle of coconut on top.  Ummmm…lemon + strawberry + coconut = A WINNING TRIO!

Ugh – rush hour traffic was horrid again today, because they closed one of the major exits, shutting things down to two lanes.  If you learn one thing about me, know that traffic is the bane of my existence.  Nothing gets me more heated/angry/frustrated than traffic.  I know it’s totally dumb because I can’t control it, but it really irks this girl…

And deep breath…dinner was truly a hot mess of several items.  I threw together last night’s tofu/veg mixture (from the not-so-good lettuce wraps) along with a can of Asian mixed veggies (bean sprouts, water chestnuts, mushrooms, etc.) and the rest of my Thai peanut sauce.  The result?  Definitely hot, messy and uber-delish!

Now, I am chomping on a rando combo of a handful of my Archer Farms Organic Heartsmart cereal, a splash of vanilla oat milk, 1 small sliced banana and a hunk o’ love peanut butter.

Ohhh now it’s 6:40pm – what to do with the rest of the night?  I’m thinking some Bachelorette (who else is mad Ed voluntarily went home last week?!?!), a little bit of reading then a sunset walk before bedtime.  Sounds like a perfect night to moi

What would your perfect night be like?  Ideally, mine would also end with ice cream, but unfortunately I don’t think that will happen this evening :).

Mondo-Filled Fun, Part 2

This post needs to start out appropriately…HAPPY (belated) FATHER’S DAY to my dad, as well as all you other dads out there!  Props for always being there when us daughters need it :).

Now, picking up where I left off…

After I finished volunteering at the Special Olympics, I met up with my mom and sisters (who came into town) for some bumming around and shopping.  Of course, we happened to pass up an old-time creamery and stopped in for some afternoon ‘scream.  I got a small cinnamon ice cream…if you haven’t tried cinnamon ice cream before, do it!  It is a glorious combo.

From family time to friend time…me and my ladies got together for a lil’ dindin/baseball game outing.  Unfortunately, I didn’t have time to change to I look like a cross between Britney Spears (during her darker days), a homeless person and a 70’s afro disco dancer.  Whatcha gonna do?  We grabbed dinner at The Loon Cafe in downtown Mpls. where I started things off with a lil’ Leinie’s Honeyweiss (instead of paying $10 a the game for a brew).

Dinner was delish too (almost as delish as the beer, haha): Kathryn’s Chicken Salad – coconut-crusted chicken over mixed greens, hardboiled eggs, avocado, tomato, artichoke hearts and dressed with a light honey mustard.  It was really good!

I went home and slept like I had never slept before.  It was glorious.  “I see Blue.  He looks glorious.”  Name that movie.

Breakfast in the morn was a quick bowl of cereal – my new Tarjay Heartsmart cereal, 1 sliced banana, sprinkle of slivered almonds and vanilla oat milk.  I LOVED the cereal!  It was organic, full of protein & fiber, still had a bit of sweetness to it and all around, delicious.

Then it was off to the water park!  The lazy river at the waterpark near my aunt’s house is open almost every morning for people to walk against the current (aka killer resistance workout), so my aunt, cousin, mom, sister and I went for an hour-long water walk.  After the hour was up, my legs were done for.  Awesome morning change-it-up.

For lunch, Mommy Everythingtarian and I hit up the grocery store for some (free) groceries + some salad bar.  I mixed up a side salad of spinach, onion, green pepper, cherry tomatoes, hardboiled egg, sunflower seeds, cucumber and balsamic + EVOO, along with a tuna avocado brown rice sushi roll.  Twas’ excellent.

After lunch, I got a few things done (including finally blogging Part 1!) and snacked on 1/2 Raw Organic Chocolate Coconut bar along with some mint tea, which is totally my new fave.

Later, I finally got to see my daddy, wish him a Happy Father’s Day and present him with his gift – card + bottle of yummy red wine + Crunch Bar Blondies!!!  He LOVED the blondies – chalk it up to another VeggieGirl win :).  Everyone totally enjoyed them, including moi – I couldn’t resist one more taste!

Dindin was so-so.  I tried concocting some Thai tofu lettuce wraps in honor of my time teaching in Thailand, but it didn’t come out quite as I wanted.  So, I will leave you with a picture but no recipe until I perfect it!

Since dinner wasn’t the most satisfying, I dug into the rest of my blackberries and my fave KIND bar (Walnut + Date) for an after-dinner treat…

After dinner, I headed to my fave Sunday night Yoga/Pilates Fusion class with Yoga Diva Deb, and it felt ah-may-zing!  It was exactly what I needed!  After yoga, this tired gal went home, made herself another cup of mint tea, read a little then crashed like a lil’ baby.

Now, it is Monday morning already, and where does the time go?  What did everyone else do this weekend?  I guess I will find out later for some of you when I get to do some much-needed blog reading.

Flippin’ Friday May 29, 2009

That’s right – T.G.I.F. baby!

This Friday morn, my day started out fabulously due to the other half of my green monster from last night.  It was just as good as last night, although I think next time I make it, I might add a smidge less avocado (maybe 1/2 – 3/4 of one).

A couple hours later, my tummy was grumbling for some more eats, hence this…

Delicious as always.  Since I had a bit of a later lunch, I munched on this gorgeous, juicy peach an hour or so later:

Luckily, I stayed pretty busy at work today (sometimes Fridays can be boorriinggg!).  Lunch today happened to be a treat – a coworker and I had a lunch “meeting” at one of my favorite local spots.  I had one of the specials of the day, the Chicken Cobb Salad.  Filled with mixed greens, red onion, cherry tomato, avocado, beets, egg, chicken and drizzled lightly with some buttermilk ranch, it was sooooo good!  I ate about 3/4 of the chicken and all of the salad.

The crusty white baguette didn’t hurt either :).

Back at work, I grabbed a small handful of these as a nice Friday treat.  One of my all-time faves, peanut M&Ms!

The rest of the afternoon, I jammed to James Morrison’s new CD “Songs for You, Truths for Me” (if you haven’t heard it, get your buns out there and get it now!) and waited for the clock to hit the ever elusive 5pm.  Finally, it happened and I darted out of there so fast, you would not believe!

When I got home, I broke open this lovely for dinner:

Then paired it with a organic nonfat plain yogurt/blueberries/coconut/blueberry muesli/drizzle of honey combo, and voila! – a delish, easy, nutritious and quick dindin.  Exactly what I need when I get home from work with no patience to cook!

Whew – I don’t think my brain can think anymore this week :).  I am soooo excited for the weekend!  I think tonight is going to be a fun ladies’ night on the town, so I am saving myself for perhaps a beer or two and LOTS of dancing.  Tomorrow I plan on getting lots of things done but squeezing in some fun as well.  I hope you all get to spend time enjoying the freedom of the weekend – my favorite weekend activity is going to the farmer’s market, which I think I am going to do tomorrow morning.  Alright, I am off to get myself beautified for my lovely ladies tonight!
