I’ve been doing lots of contemplating over the past few days. That’s what happens when (a) I am sick and have too much time on my hands, and (b) I have too much time on my hands.  Queen of over-analyzing right here.  My mom likes to say that I always need some kind of drama in my life.  But what does she know…

Since I got my handsome new computer, I’ve been meaning to take all the stuff off my old computer and put it on to the new babealicious one.  Going through my old Word files, I found a bucket list I made at the beginning of college:

This is the condensed version (the list was about twice as long as this – yes, I have the mind of a dreamer).  But looking at it, I often forget just how much of this I have already accomplished.  Sometimes, I forget to give myself credit for all the things I HAVE done.

So often we focus on what we haven’t done…ummm, I didn’t work out today!  Ughhh, why didn’t I eat the salad instead of that monster plate of pasta?  Shucks, why didn’t I take a chance and just say yes?

If you take anything away from this post, please take a moment and focus on all the good things you have or have done.  Because chances are, you’ve done a lot more than you give yourself credit for.  Case in point…

Yes, my list is heavily travel-focused (I channel Liz Gilbert when I say traveling may be the, “…the one true love of my life.”), but that is just me.  I’m sure everyone’s list will look completely different – heck, there are a couple things I would love to even add to the list:

  • Become fluent in Spanish
  • Pay off my credit card(s)
  • Live in the present (as much fun as planning future trips are…)

Take a moment, think of the good thangs and hold onto that positive love 🙂

Close-Ups August 23, 2009

Dudes…Sunday night, again?  Suriously.

Well, let’s see in the last 24 hours, I’ve really been diggin’ the extremo close-up food shots (hence post title).  When I left y’all last night, I was just about to make this fabulous dinner…

1 handful mixed greens
2 leeks, 1/4 green pep, 1/4 onion + 2 kale leaves
(sauteed in EVOO, balsamic + garlic)
1/2 grilled zucchini
1 tbsp. sunflower seeds
drizzle of balsamic vinegar

After dindin, I fell asleep from 7:30 to 11:30pm  got on my clubbin’ gear (fishnets + flourescent pink butt dress) and booty-danced the night away until 2am.

Yeah, that’s right.  Between the 15 mile run + allergies, I was toast.  I slept for 4 hours, woke up at 11:30pm to find 1 missed call + 2 text messages (this never happens), watched 4 episodes of Arrested Development free on MSN and ate a bowl of PB Puffins + skim milk before calling it a night for the 2nd time.

At 8am this morning, I woke up refreshed and ready to dive in for a classic bowl of oats…

1/2 cup oats
1 cup water
1 mashed naner
buttloads of cinnamon

I devoured this baby alongside another large mug of green tea + Emergen-C packet.  Allergies…you will NOT win!

Then I walked to a 9:30am 75-minute Go With the Flow Yoga class.  Holy standing splits.  It was just was just what my muscles, brain and body needed.  I need to get back on the yoga train…it always feels soooo good! (TWSS?)

I munched on a Blueberry PURE Bar + POMx Wildberry White Tea when I got home.  Many of you have asked how I liked both products.  I LIKE both, but I have two mayjuh issues: (1) PURE bars = small – sometimes I need a bit o’ quantity.  (2) I mentioned this in the last post, the tea is erythritol + fructose sweetened – read to find out what that’s all about.

Then I went to 3 (yes, 3) grocery stores to stock up on the goods…

First stop, Trader Joe’s.  Key purchases include:

  • TJ’s raw almond butter
  • Thai Red Curry sauce
  • 3-grain tempeh
  • almond meal

Next stop on the train…Whole Foods!

  • expeller-pressed canola oil
  • 5 for $5.00 Chobani Greek yogurt (that’s highway robbery!)
  • lunchtime sushi

Last stop, I walked to my local co-op where I purchased ALL locally-grown, organic produce (minus the avocados + bananas).

Damn Gina, I spent too much money!  However, a lot of stuff was stock-up thangs (I purchased more than outlined above) that I will eventually need.  End of story.

When I got home, I grabbed a Runner’s World mag my mom gave me and a Whole Foods mag to snuggle in my bed and read while I ate this:

Then I took an hour long nap.  You know I am sick if I take a nap.  I NEVER take naps.

Sometimes I consider myself more of a “slapdash cook” – one who throws random ingredients together hoping it will turn out because they don’t really know real technique.  Then there are days I just surprise myself by creating things like Coconut-Crusted Tempeh Island Salad.

She’s Like the Wind July 9, 2009

Or rather, time is like the wind because this day absolutely positivefrickinlutely flew by.  But I do still love a good “Dirty Dancing” reference.  Nobody puts Baby in the corner :).

Breakfast started out fantastically, thanks to the lovely Sarah from Running to Slow Things Down.  You see, this genius of a gal took the standard breakfast cookie recipe and turned it into Breakfast Drops!  (BTW – I can totally see why she didn’t call them Breakfast Balls – there is just something inherently wrong with that ;)).  Mine were of the ol’ strawberry + coconut variety, and I loved every last drop!


Like I said, the morning flew by and before I knew it – bam! – 11:30am and my tummy was rumbling!  Good thing for another killer sammie (same as yesterday) – 2 sliced toasted Ezek, 1/2 smashed avocado, cherry tomatoes, spinach + yellow mustard.  Along with two clementines, it was a good, satisfying lunch.



Work was supa busy today!  I would look at the clock and suddenly two hours had flown by.  That like never happens.  Unfortunately, I didn’t get out on a lunch walk today but instead worked on a freelance writing project.  Sometimes a girl has got to make sacrifices!

Luckily, my snack made up for the missed walk.  You know how I haven’t exactly been diggin’ the Zoe bars?  Well, I take that back because this Chocolate Delight bar was well – delightful!  It didn’t have any of the funny after tastes the peanut butter and peanut butter chocolate ones did and was perfectly chocolatey.  Nice work Zoe!


Since my 9 mile run was planned for after work, I had snacky #2 around 3:30pm as pre-run fuel.  The standard combo: Stonyfield vanilla + blueberries + Zoe’s Cranberry Currant granola.  I think my favorite way to eat Zoe granola is as a topper in yogurt – it gives the whole thing the perfect sweet crunch!


After work, I’m not going to lie – I was dreading the 9 mile run.  However, I tried not to think about it.  Instead, I got dressed, laced up the tennies and headed out the door (before I could rationalize not going, because if you give me long enough – I can rationalize ANYTHING).  The first mile was a lil’ rough but I fell into a groove after that.  However, it got raging hot out, my yogurt combo wasn’t sitting too well, and in the end, I had to stop at just over 5 miles.  I walked for another 1/2 mile or so, then guzzled this baby:


The Vitamin Water 10 was good – I am still a bit skeptical just how “naturally sweetened” it is.  They use rebiana (stevia extract) along with some others I am not sure about.  Anybody heard of erythritol or crystalline fructose?

I came home a sweaty beast and made this colorful concoction:


Tempeh Thai Red Curry!  Totally delish!  I made dinner for myself, my sissy and her boyfriend and it got rave reviews all around.  My sister – who FYI has a sensitive stomach, doesn’t like anything “weird” or “organic” and is not a spice monster – even ate it.  You don’t know how big of a day this is for me!  The mix included:

brown rice
TJ’s Thai Red Curry Sauce
bean sprouts
1 pkg. three grain organic tempeh 

And what’s dinner without somethin’ sweet?


That would be 1/2 Monster Cookie to be exact.

Soooo…this gal will be running her 9 miles on Sunday instead.  Ugh, lil’ upset over the run, but I think I might have the ultimate pancake concoction tomorrow morning that is going to blow Miss Chocolate-Covered Katie’s pancake contest out of the water!  Stay tuned tomorrow for all the monster (hint, hint!) goodness ;).

Shower, recipe research, grocery store, freelance writing, possible SYTYCD results show and off to bed.  Woowoo for the weekend – tomorrow is Friday!

After work, I skedaddled home on a mission: FREEDOM BAKING BONANZA 2009.  Since I finally made to the decision to go visit Barbie, Ken and the family in Wisconsin this weekend, I knew I had to bring some mayjuh treats for everyone to enjoy.  First up, a blondie bananza using Miss VeggieGirl Genius’s basic recipe.  I present…Berry Oatmeal Almond Blondies!


Then, my personal fave, Almond Joy Blondies (w/ dark chocolate chips, shredded coconut + slivered almonds)!


Then, I figured it was time to maybe come up with something on my own for a change.  In Wisconsin, where the fam lives, they have a stand at the farmer’s market that sells these amazing cookies.  I’ve been working on perfecting a recipe of my own based off of them, and gosh darn it, I think I finally got it!  I now present to you…Tahini Cookies!


These suckers are so good!  They are the perfect balance of sweet + salty and come in at about 120 calories (give or take).

While all the treats were a’bakin, I used a glorious bag of homegrown spinach & greens Ellie, one of my co-workers, brought me from her garden to  make a big ol’ salad.  It tasted so good and fresh!

2 big handfuls spinach/greens
1 zucchini, sliced
1/4 avocado, diced
1/4 cup shredded carrots
1 tbsp. sunflower seeds
1/4 cup tomato, diced
Hidden Valley Light Ranch (the best!)


Even though I sampled bites of batter in the cooking process, I knew I just had to make myself a sampler platter of all the goodies


Delish.  Delish.  And delish.  The only slight problem was with the berry blondies – I think the water content of all the fresh berries was a bit much for the dough.  In other words, the middle of the batch were pretty doughy.  But still delicious :).

After baking, I raced to downtown, picked my one of my best friend Ashley’s NEW fiancee and went to visit her at the bar she works at in Minneapolis.  Maxx and I had so much fun, and the bar was pretty dead, so we got to talk with our gal Ash most of the night.  Of course, being the stellar lady she is, she hooked us up with free eats and free drinks – dangerous!  I sipped on some new mixed drink they had (maybe drank 1/4 of it) then munched on some bar food – a bit of nachos, some tater tots and a bit of popcorn.  Honestly, I was so full by the end of the night, I was ready to have a little food baby.

However, we had so much fun, and I must have crashed pretty hard because I slept in until almost 10am this morning!  Literally dudes, I haven’t done that in YEARS.  When I woke up, I wasn’t very hungry (due to the above mentioned bar food) so I noshed on a fresh, juicy mango.


Then I ran a couple errands, including an unplanned trip to Caribou for some joe + 2% milk…


Who am I kidding?  That was totally planned.

When I got home, I mixed myself up a nice bowl of fresh berries because I still wasn’t that hungry.  How absolutely gorgeous are berries to photograph?  (Warning:  I got really berry happy this morn!)




Then, this gal got cleaning crazy!  I scrubbed the kitchen, cleaning the living room, watered the plants, wiped down the bathrooms, reorganized cupboards and hauled ace in my bedroom.  Again, just call me Martha.

Since I cleaned out my pantry area, I thought y’all might be interested in a look to see what staples I currently have on-hand.  Here is the spread:

Now, I gots to finish up blogging, run a bazillion errands, finish packing up for the trip cross the border and meet up with Ashley + Maxx (the newly-engaged ones) later for a quick bite before hitting the road home!

I promise more fun from Wisconsin – trust me, my family is uber-weird.  There is good stuff coming ahead.  Plus, I need to get some pictures with Ash & Maxx so you can see just how in love and happy these kids are.  Also, I need to go catch-up on blog reading – so much to do, so little time!

Can I Get a Woowoo? July 2, 2009

Let the good times roll on a 3-day weekend…can I get a woowoo?  WOOWOO!

My food stash is getting a bit paltry, but I managed to drum up enough ingredients to make killer PB+S (peanut butter and strawberry, obv) toast this morning, aka one of Papa GC’s favorites :).


I didn’t think this smashing combo of perfectly sweet + salty would hold me over for very long, but I was totally wrong.  My tummy didn’t start hankering for a snack until 11am, in which I brought out the big guns: Wisconsin Cheddar!


In anticipation for the weekend, I have literally been singing, “Let Freedom Ring” in my head all morning.  My legs are  also doing that antsy, annoying, can’t-stop-moving thing, and I have been skipping and sprinting around the office today.  After sitting at a desk all week, pent-up energy much?  Either that or ADD…hmmmmm….

At nooner, I couldn’t wait to dig in to my leftovers from last night’s Thai Tempeh Curry over brown rice.  The leftovers were, no lie, twice as good as last night.  I think the veggies + tempeh really had time to soak in the yellow curry simmer sauce, and everything had way mo’ flava yo.  Gotta love a dish in which the leftovers are even better than the originals!


After lunch, I enjoyed a leisure cup of organic black tea (which I found in the office stash – score!) with a bit of skim milk and a hint of pure white sugar.  It was delicious and brought me back to my study abroad days in London…


Using up the rest of my lunch hour, I bebopped over to the grocery store to pick up some baking ingredients.  Yes kids, be prepared for some swoonworthy treats around these parts in the next couple of days.  I have a brand new recipe, which I am pumped to show y’all as well as more VeggieGirl blondies (obv)!. Here are some of the goods I picked up: dark chocolate chips, tahini (sesame seed paste), raspberries, blueberries, organic evaporated cane juice, sunflower seeds, slivered almonds…

Prepare yourselves, because I, Holly the Healthy Everythingtarian, may have made one of the most delicious combos to ever be featured on this blog.  Bold statement?  Yes.  Completely true?  You know it.

1 cup Stonyfield Organic Oikos Greek yogurt
1/2 cup halved strawberries
1 tbsp. flax
2 mini whole wheat cherry chocolate chip muffins, crumbled


I kid you not, I licked the container clean in the privacy of my own cubicle at work :).

Now, I am asserting the rights my forefathers so graciously gave me by running with my freedom out the door and out of work.  Can I get another woowoo?  WOOWOO!

Computer Glazed July 1, 2009

You know when you sit behind a computer for way too long – everything starts getting fuzzy, you are glazed over like a big ol’ bakery doughnut and feel completely spaced out?  Well, that was me today :).  I had a total computer-based project I was doing all day, and I walked out of work like a total zombie.

Luckily, it was truly of breakfast of champions to start the day – toasted Ezekiel bread layered with peanut butter, smooshed naner and cinnamon.  Man, I LOVE me my cinnamon!


The haziness and glazed over eyes (doesn’t the word glazed just totally make you WANT a doughnut?  Seriously.) slowly but surely increased until I gave myself a break around 11am to eat Stonyfield Organic Blueberry Yogurt. Since I had another lunch date today, I just needed something small to tide me over a bit longer.  I love the color of blueberry yogurt – it’s one of those weird small things that just makes me happy :).


For lunchie, I met up with my hilarious friend Brad for some yummy eats at Cheeky Monkey Deli in St. Paul.  If you don’t remember, it’s where I devoured the famous Nutella + Banana Sandwich not so long ago.  The Cheeky Monkey is totally adorable – it is healthy, sources from local ingredients and has cucumber water.  Yes, I said cucumber water.  It was practically like being in a spa ;).

Today, I tried something new and went for the Roasted Veggie + Hummus sandwich on ciabatta, along with a side of pickles and I stole some of Brad’s yummy spiced potato chips.  Divine food, divine company, divine time!


The afternoon zoomed by, thanks in part to a long lunch and a lovely snack.  Lunch was totes filling, but I knew I when I got home I needed to hammer out 5 miles so I did a little pre-fueling.  If I come home hungry, you can forget about running.  Soooo…I prevented the hunger with my favorite Lara and a cup of lemon green tea:


When I got home, I entered the kitchen to the sweet smell of Megan throwing a baking party.  Dangerous!  She’s getting prepared for her 4th of July fiesta, which meant the kitchen was filled with chocolate Special K bars, rice krispie bars, muffins and other goodies.  Ummm..yum!  I got dressed and ran out the door to bang out my 5 miles, which took me about an hour (including walking an extra mile afterwards).

Then when I got home, I grabbed a whole wheat mini cherry chocolate muffin

I stretched, drank lots of water and watched the new TV show Dance Your Ass Off  prepared to make dinner.  On the menu tonight….some Thai food goodness!  Every week, I usually get nostalgic for my travels abroad and crave Thai food (even though, let’s be real, mine doesn’t even compare to the food I ate there).  Here is a picture of me at Wat Phra Kaew, which is on the grounds of the great Grand Palace in Bangkok…

One of my favorite dishes in Thailand was a good Thai curry.  So, I bought a premade Thai Kitchen yellow curry simmer sauce, mixed it with veggies and tempeh, then served it over brown rice for a little Yellow Tempeh Thai Curry.  Honestly, the yellow curry simmer sauce wasn’t the best, but it was still good nonetheless.


Then it was an after dinner cocktail to further hydrate…

10 oz. sparkling water
4 strawberries, pureed
1 tsp. lime juice
1 tsp. sugar


Looks gross & chunky but tasted ah-may-zing!  Probably would have tasted better with a splash of…I can’t quite put my finger on it…

Sorry dudes and dudettes, but this gal has got to run – I’ve gots a 10:15pm beach volleyball game coming my way tonight, which means I need to slam a Diet Coke take a nap to keep me up until midnight.  Let’s pray that we don’t lose all 3 games again tonight!  Happy (for real) humpday – 4th of July fun is just around the corner!

What are everyone’s plans for the 4th?  I might stick around MN or head to hang out with Barbie & Ken and the fam this weekend – haven’t decided yet :).


It’s Greek to Me June 12, 2009

All I can say is…


These past couple weeks have been so crazy and busy, I was beyond ready for Friday!  And here I am, finally planting my butt on the couch and surfing the TV for something good to watch.  Currently I am watching CNN + Iranian election (I know, huge dork :)).

Today started out a lot like yesterday…Kashi Honey Sunshine w/ vanilla almond milk with a banana and peanut butter.  It was quick, filling and yummy!


Between work, thinking about the MARATHON I will be running in 16 weeks and waiting for the weekend, the morning flew by fast.  I learned a couple new projects at work, and all my work was rewarded by a delicious lunch.  More leftover Tempeh Thai Peanut Stir-Fry and dark chocolate-covered raisins for a sweet finish.


Dum-dee-dum-the day went by….

…but not before I tried my very first Chobani Greek Yogurt, peach-style!  I ate the first bite plain – and thoroughly enjoyed it!  The peach flavor was perfect – not too strong but yet, still there.  The texture was thick and creamy, although I wished it was just slightly thicker.  I like mine uber-thick :).

Topped with strawberries and a Nature Valley honey + oats granola bar…holy yum (as they would say in the blogworld)!



How friggin’ yumma-licious does that look?  Trust me, it was good.

When the clock struck 4:30pm, I made like a banana and split!  Cruising home, I knew exactly what I was going to concoct for dinner.  My avocado twins have been sittin’ on the counter all week now, and they are perfect and ready to go.  I took one (rather large) avocado, mashed it with tomato, onion, lime juice and garlic to make a quick guacamole.  Served with Stacy’s Naked Pita Chips (sooo addictive!), I had a mini-Mexican fiesta dinner!


I most definitely had this amount of pita chips x2.  After dinner, I just couldn’t resist, (a) something sweet, and (b) dipping back into my Chobani stash.  Enter…

plain Greek yogurt with Kashi Honey Sunshine, 1 tbsp. organic peanut butter and a drizzle of honey!


Now I’m stuffed!  There is nothing on this gal’s agenda tonight but to laze about, and I couldn’t be more excited.  I honestly haven’t worked out too much this week, but I think my body was in dire need of the rest.  Tomorrow, the day is completely open and then tomorrow night, I have another bachelorette party!
