Oy vay…what a weekend!

After 3 hours of driving through Wisconsin country, I made it to the ‘rents house!  Tomorrow morn, I have an interview in Madison, which is much closer to Barbie + Ken’s house than MN.  Instead of a 4 hour drive, I will only have a 2 hour drive to get to Madtown for my 10am interview.  Whoop!

Alrighty, where did I leave off?  I believe you all got a recap of the wedding fun to be had in Part One, so I shall begin this morning upon my awaking.  Pretty tired from the 13 miles + night o’ dancing, I woke up at 8:30am to let out the beast one last time.  Then I opened the fridge and had a bit of this…

The fridge was quite bare.

After eating, I met up with two of my bestest friends in the world for perhaps the most perfect morning ever.  We grabbed coffee (and some extra sustenance for me) at a fabulous local coffeehouse called Spyhouse Coffee and headed off for a GLORIOUS morning walk around the lake.  Instead of a mom walk, it was a friend walk :).

After gabbing and walking about 5.5 miles (we went around twice – we had LOTS of catching up to do), we finally parted ways.  I headed straight to one of my greatest weaknesses in the world: Whole Foods!

After lunchie, I organized and packed all my stuff up at my cousin’s apartment, blogged Part One of the weekend and said my goodbye to Angus the Beast with a big ol’ kiss.  Who am I kidding? There was no kiss.  Dogs are growing on me after my childhood attack by my neighbor’s show poodles, but I am not making that much dog progress.  I threw Angus an extra treat instead :).

Then, I purtied myself up and headed off to my friend’s wedding shower.  I’ve known Miss Lisa Soon-To-Be Smith since 3rd grade…we go wayyyyyy back peeps.

Between the norm present opening and games (which by the way, I broke my 5 shower winning streak tonight, ugh!), I munched some nom nom nom shower food:

Then, I hit the road for 3 hours of cruising through God’s country Wisconsin, haha ;).  Not before snacking on my fave Lara of course…

It’s been such a busy last couple weeks (and an obv busy day planned tomorrow!), I’ve decided to make some mini-goals for the week to try and re-prioritize to make some time for me to decompress and RELAX!

  • YOGA! I haven’t been to a real class or done a real yoga sequence (minus some stretches here and there) in more than two weeks.  Honestly, I can feel a real difference in my body, and I am dedicating myself to doing two 1-hr. yoga seshes this week!
  • Block out time on the planner – this upcoming weekend is the first weekend in almost two months that I haven’t had anything planned (minus another bloggy meet-up with Angharad, which totally counts as decompressing – in the form of food of course). So, my goal is to keep it that way!  An open weekend here I come – please yell at me if I try to plan anything!

What are your mini-goals for the week? If you don’t have any (which I normally don’t), think of two things you would like to get accomplished this week, and we’ll all make it happen together.  Holllllaaaaa!

So…totes props to you all if you made it through both Part 1 AND Part 2 of this crazy weekend I call my life.  Lots of fun was had, lots of laughing was done, lots of droppin’ it like its hot happened, and I couldn’t be more excited to crash into bed tonight. I have to say, I’m definitely feeling especially quite gypsy-like these past couple weeks.  Between all these weekend getaways, running here and there, barely having time to get all my ish done (much less train for a marathon!) and workin’ the 9-5, this gal wants nothing more than to put on a headscarf and bejeweled sarong, sing “Gypsies, Tramps and Thieves,” and dance my way to Europe.  Ahhhhh….if only….

It’s probably a good thing that it was only the “Men Tell All” for The Bachelorette tonight.  My to-do list is a gazillion things long and watching pointless, dramatic, trashy reality TV that’s totally awesome can wait another week.

Then I ate my afternoon snack mid-morning because I was feelin’ snacky (to the tune of “Bossy,” of course) – Zoe’s Peanut Butter bar with PB frosting and topped with a flair of creativity…

Last week, I went administrative assistant turned nutrition counselor when Bryan, one of my co-workers, needed a dessert recipe that was chocolate & dairy-free for a BBQ he was heading to.  After a bit of scouring, I found a recipe for Lemonade Cupcakes from MyRecipes.  FYI: the recipe is not remotely healthy – it’s a BBQ people!

Well, Senor Bryan saved me a cupcake from the weekend since I gave him the ingenius recipe.  Turn down a cupcake?  Virtually never.

I was most def about 7 months preggers after this meal.  However, I didn’t feel gross full – just contently full of delicious, nutritious and fabulous eats.

Finishing up the night, I headed out for a 6-mile run, which I finished in just under an hour.  Since my marathon training is a bit off (due to the past week’s vacay getaways), I am planning my long 12 mile run for tomorrow (to make up for the weekend), taking Wednesday or Thursday off, then hopefully resuming the norm Hal Higdon plan.

Gotta go take care of my cousin’s beast of a dog – pics to come tomorrow.  Seriously dudes…Angus (the dog) is a BEAST!

Shopping is My Cardio June 27, 2009

This is perhaps my #1 reason why I love Carrie Bradshaw, Sex and the City + SJP so much :).

After work, I cruised home jai hoing and listening to the stellar beats of the “Slumdog Millionaire” CD.  Suddenly, I knew exactly what I wanted for dinner – INDIAN!


I picked up my all-time fave Indian eats – Baingan Bhartha (eggplant mashed with tomatoes & spices) – and devoured this delicious dish along with a side of whole wheat tandoori roti on the glorious outside deck of my friend Megan’s house.  I ate all of the Baingan Bhartha & roti and none of the rice (it was nothing special).

After dindin, Meg & I went shopping at the mall squeezed in our cardio.  But not before we made a quick stop to enjoy a treat just because it tastes oh so good


Dairy Queen Krunch Cone anyone?  It’s Mama Everythingtarian’s fave, and one of mine too!  Lots of nummy sprinkles, crunchy peanut bites and rice krispies on a vanilla cone.

The night also included a 2nd trip to Tarjay (oops!) where I picked up some much-needed bananas + yogurt, but seriously dudes, my fridge and pantry are bare bones.  Otherwise, I was a good girl and didn’t buy anything else at the mall.  Although, I was tempted by a new pair of running shoes :).  Meg & I got in some lovely friend bonding last night before she headed off for a weekend at the cabin – so jealous!

After sleeping 10 hours last night, I woke up this morning feeling well-rested (although my hair was another story…) and dug into a quick and simple brekkie (shoutout to my new British bloggy friend, Angharad!) of Target Heartsmart cereal, sliced banana + skim milk along with a cuppa joe + skim milk.


Then it was time for 9-miler.

For the first 6 miles, the run was nothing special.  I kept it at a slow 10:00/mile pace and just enjoyed being outside, soaking in the fresh air.  However, the most mysterious thing happened.  At about mile 6, I started feeling mondo good.  The last three miles, I probably ran at an 8:00/mile pace and finished up feeling ah-may-zing!  I came home, chugged a whole Nalgene and indulged in more PB art…

Now I am watching Barefoot Contessa – one of my faves – on the Food Network but need to go shower and get ready to enjoy whatever I want to do with the rest of the day!  Woowoo – this has not happened in a long time.

Do you have a favorite TV cook/chef?  Mine is definitely Ina Garten – that Barefoot Contessa may not always be healthy, but I love her classic, simple and use of whole ingredients.


Wednesday Night TV Date May 6, 2009

Upon waking up this morning, I was ultra excited to have breakfast with the other half of that Chocolate Coconut Larabar goodness from last night…I present to you Banana Coconut Chocolate Oatmeal!

1/3 cup rolled oats + 1 tbsp. oatbran
1/2 cup vanilla soymilk + water
1 medium banana
2 tbsp. unsweetened shredded coconut
1/2 Chocolate Coconut Larabar
drizzle of honey


Ummm…YUM!  With the help of the regular cuppa joe with skim milk, the morning went by fine.  Then I took a longer lunch today to meet my mom, sister and grandpa for lunch!  My fam came in town for the day, so I grabbed my Italian Roasted Eggplant Tomato Penne leftovers and shared the wealth.  Even my gramps (who has a fondness for Spam and all things meat) gave the dish two thumbs up!  Plus a 1/2 Banana Bread Larabar for dessert split with my mom – she loves these things now too!














The rest of the afternoon was the norm…a little bit of this, a little bit of that.  Three to 4:00pm, which I call “the witching hour” because it lasts FOREVER, didn’t feel as long today.  Maybe that was because I packed some snacks to munch on throughout the afternoon, partly because I knew I’d be going on a nice 5-mile run later!

First, about 1-ounce of Wisconsin Raw Goat Cheddar with TJ’s Rice & Bean Chips; then pre-run, about 3 Black Mission Figs with a couple True North Almond Clusters (which I ate half of before remembering to take a picture!).














After work, I met up with my dearest friend CharChar Binks for a nice 5-mile run, dindin and some Wednesday TV time!  Unfortunately, the five miles didn’t go as well as we had hoped because of stupid side cramps (what’s up with them anyways?), but dinner MORE than made up for it!

I took the main dish helm and concocted Sundried Tomato and Spinach Stuffed Chicken, while Binks took care of the side items – corn on the cob and sauteed red potatoes (a la daddy Binks)!  Yum, yum and yum!  You probably noticed I don’t eat a lot of meat, but when I do, I like to make it as organic/free range as possible.  I found these AWESOME chicken breasts at Tarjay.

After dinner, we munched on some pineapple (about 1 cup for me) and peanut M&Ms (about 1 handful for me) – two of my very favoritest things in the world! – while watching America’s Next Top Model and LOST.  Unfortunately, my fave Celia got kicked off ANTM, but LOST keeps getting BETTER and BETTER!  I love me some Jack and Sawyer!

Leftovers Love May 4, 2009

Hey dudes!  Hope everyone had a good Monday – fortunately, mine flew by fast and was full of good eats.  Unfortunately, like I predicted, I was DRAGGING this morning from my lack of sleep Saturday night (but again, all for a good cause). First on the agenda this morning?  A cup of coffee with skim milk and then a coconut banana breakfast cookie (recipe here)!


Then I got to work and had ANOTHER mug of coffee.  Not going to lie, it was a definitely 3-4 cup morning!


For lunch, I really wanted to use up the rest of the vegetarian refried beans I still had in the fridge.  So I took about 1/2 cup beans, mixed in 1/4 cup salsa and dipped in with my new TJ’s Rice & Bean Chips with Adzuki Beans.  It was good!  The chips were light and airy while at the same time hearty and yummy.  They were quite pretty too!  Along with a Pecan Pie Larabar – it was a quick and easy lunch!














I took a good, leisurely 30 minute walk at lunch (great for the mental sanity!).  Work was really slow, then all of a sudden, I had a million things to do!  Before I knew it, it was 3pm: SNACKTIME.  I busted out my new Stonyfield Farms (one of my Favorites!) Organic YoCalcium yogurt in Wild Berry.  OMG…the Wild Berry was delish!  Especially with blackberries, strawberries and the Cascadian Farms granola!


The rest of the day flew by fast, which is so odd because Mondays usually drag on forever!  Woowoo!  It was a gorgeous day out today, so I am posting this early so I can go get a walk/run/something outside.  I just ate some leftovers of the Italian Roasted Eggplant Tomato Penne from last night, along with a yam (poked & nuked in the microwave for 5 minutes) with a bit of butter and a hefty sprinkle of cinnamon.


Most likely, the night will go like this: workout, post-workout snack, cup of tea, shower, a bit of organizing and then off to bed as EARLY as I can.  This gal has got some sleep to catch up on!

Sunday Shenanigans May 3, 2009

After not even 5 hours of sleep last night, this gal is exhausted!  Of course my reliable ol’ body clock woke me up at 9am this morning, and I know those 5 hours are really going to hit me tomorrow.  Luckily, us ladies were treated to a nice breakfast after the party last night.  I don’t know how I was still hungry from last night, but I had a blueberry waffle with a light drizzle of maple syrup and a cup of coffee with skim milk (not pictured).


I got home a little after lunch and had a little snacky – carrots & apple slices with almond butter :).


Then I headed to the grocery store with two missions, (1) research for tomorrow’s Holly Investigates (don’t forget to check it out!), and (2) purchase FIVE new items/products I’ve never bought before.  Since I won’t be eating out the rest of this month, I thought it would be a fabulous time to try out new things.  Here are the five items I picked up from the first round of my personal “5 New Things” challenge!

I’ve definitely tried mangoes and figs before (love them both!) but thought it would be fun to experiment recipes using them.  I think I’m most excited for the chips – that might be part of tomorrow night’s dinner!  Back from the grocery store, I was a wee bit hungry so I had a small bowl of the granola (about 1/2 cup) with some vanilla soymilk.  Verdict: The granola was good, but it was pretty standard honey and oats flavor.  I think it will be perfect with yogurt!


Finally, it was time to enjoy the beautiful day!  I munched on this little bar as I took over an hour long walk in the neighborhood.  Ms. Lara can do no wrong I swear!  The Banana Bread flavor, I swear to you, tasted almost exactly like the real thing.  YUMMY!  I picked up a couple flavors I haven’t tried before, so look for a Larabar rankings list later this week with my faves!


When I got back, I grabbed a beach towel and parked my butt on the deck in the warm, heavenly sun.  There was some Riesling wine left in the fridge, so I thought what the hell?  Let’s use it up!


Ain’t she pretty?  For dinner, I concocted a nice Italian mix, which I hereby title Italian Roasted Eggplant Mozzarella Penne!  First, I sliced a large eggplant into 1/2″ slices and sprinkled with salt to let them sweat (it drains the bitterness out of them so when you cook it, all you taste is eggplant deliciousness).  Then I lightly coated them with EVOO and popped them in a 450 degree oven to roast.  Meanwhile, I boiled some water for the penne pasta and got started on the sauce.

In a medium saucepan, heat 1 tbsp. EVOO and 1 tsp. minced garlic until fragrant.  Then I added 1/2 diced yellow onion, and let it sweat for several minutes.  Next, I added one 28-ounce can diced tomatoes, one six-ounce can tomato paste, some leftover chopped spinach (from another recipe you will see this week!) and mixed it all together.  I seasoned it with 1/4 – 1/8 tsp. each (as desired) dried oregano, dried basil, dried thyme and dried sage.  Seasoned with salt and pepper, I let it simmer to all mix together.

To serve this delectable dish, I plated a heaping serving of the Barilla Plus penne, 1 cup of the Italian tomato sauce, four slices of the roasted eggplant and topped it with two ounces of fresh mozzarella.  Buono!


The best part?  I have TONS of leftovers for this week – meal planning well done!  Since I had enough dessert yesterday to last me awhile, I had one of my fave Yummy Earth suckers for dessert.  This time it was watermelon!  I let my food rest for a bit then headed to yoga, which I hadn’t DONE IN MORE THAN A WEEK!  Oh man, being back felt good!  I go to a yoga/pilates fusion class, and I LOVE the teacher! 

Okay, now I’m really tired…off to bed!
