Guess what I did for the first time ever today?  Yeah, that’s right – Miss Scatterbrained forgot her camera at home. The horror!

I guess it was bound to happen sooner or later, so yours truly has some bangin’ breakfast and dinner eats that will surely make up for the lack of lunchie + snack pics.

Since I’ve joined the bandwagon on Sarah’s breakfast challenge, I had to make something new.  Although the combos are faves, I usually don’t have them for brekkie.  I need to shake it up like this more often!

 

Mid-morning snack: Banana Nut Cheerios + sunflower seeds

Lunch: Green salad (1 big handful mixed greens, 1/2 avocado, 1/4 cup green pepper, sunflower seeds + drizzle of ranch dressing), Musselman’s Raspberry Acai applesauce + Tropical Fruit Tart Larabar

Mid-afternoon snack: 1 1/2 servings honey wheat pretzel twists + Pomegranate Chobani Greek yogurt

 

The Tropical Fruit Tart Larabar + Pomegranate Chobani = two new faves.  Seriously, pick these suckers up.  Now.

For dindin, I headed over to my friend Amy’s house, who I have known since 9th grade.  That doesn’t seem like that long, and then I remember I am 24 years old, which means I’ve known her for 10 years.  Yowza…I am a g-ma! With the help of our fellow Midwesterner Kristin, we had seriously one of the best dinners I’ve had maybe ever…enter Lemon Pepper Chicken with Artichoke Salsa!

That would be 1/2 Vegan Monster Chocolate cookie + 1/2 Vegan Chocolate Chip cookie over vanilla bean coconut milk ice cream each.  Perfect topper for a perfect dinner.

Whoa…I don’t know if in fact I did eat too much today, but I am seriously stuffed!  Must be all that marathon training workin’ up a large appetite :).

After dinner, I raced back to the apartment because one of my best friends Megan made a rest stop here tonight before continuing on a loooonnng car journey tomorrow.  She showed up wearing a t-shirt that says “Polish Kitchen,” which she got at a Polish festival she recently attended – love that girl.

Now, I need to go and snuggle with my Polish gal.  Night y’all!

She’s Like the Wind July 9, 2009

Or rather, time is like the wind because this day absolutely positivefrickinlutely flew by.  But I do still love a good “Dirty Dancing” reference.  Nobody puts Baby in the corner :).

Breakfast started out fantastically, thanks to the lovely Sarah from Running to Slow Things Down.  You see, this genius of a gal took the standard breakfast cookie recipe and turned it into Breakfast Drops!  (BTW – I can totally see why she didn’t call them Breakfast Balls – there is just something inherently wrong with that ;)).  Mine were of the ol’ strawberry + coconut variety, and I loved every last drop!

Like I said, the morning flew by and before I knew it – bam! – 11:30am and my tummy was rumbling!  Good thing for another killer sammie (same as yesterday) – 2 sliced toasted Ezek, 1/2 smashed avocado, cherry tomatoes, spinach + yellow mustard.  Along with two clementines, it was a good, satisfying lunch.

Work was supa busy today!  I would look at the clock and suddenly two hours had flown by.  That like never happens.  Unfortunately, I didn’t get out on a lunch walk today but instead worked on a freelance writing project.  Sometimes a girl has got to make sacrifices!

Luckily, my snack made up for the missed walk.  You know how I haven’t exactly been diggin’ the Zoe bars?  Well, I take that back because this Chocolate Delight bar was well – delightful!  It didn’t have any of the funny after tastes the peanut butter and peanut butter chocolate ones did and was perfectly chocolatey.  Nice work Zoe!

Since my 9 mile run was planned for after work, I had snacky #2 around 3:30pm as pre-run fuel.  The standard combo: Stonyfield vanilla + blueberries + Zoe’s Cranberry Currant granola.  I think my favorite way to eat Zoe granola is as a topper in yogurt – it gives the whole thing the perfect sweet crunch!

After work, I’m not going to lie – I was dreading the 9 mile run.  However, I tried not to think about it.  Instead, I got dressed, laced up the tennies and headed out the door (before I could rationalize not going, because if you give me long enough – I can rationalize ANYTHING).  The first mile was a lil’ rough but I fell into a groove after that.  However, it got raging hot out, my yogurt combo wasn’t sitting too well, and in the end, I had to stop at just over 5 miles.  I walked for another 1/2 mile or so, then guzzled this baby:

The Vitamin Water 10 was good – I am still a bit skeptical just how “naturally sweetened” it is.  They use rebiana (stevia extract) along with some others I am not sure about.  Anybody heard of erythritol or crystalline fructose?

I came home a sweaty beast and made this colorful concoction:

Tempeh Thai Red Curry!  Totally delish!  I made dinner for myself, my sissy and her boyfriend and it got rave reviews all around.  My sister – who FYI has a sensitive stomach, doesn’t like anything “weird” or “organic” and is not a spice monster – even ate it.  You don’t know how big of a day this is for me!  The mix included:

bean sprouts
onion

carrots
spinach
1 pkg. three grain organic tempeh

Soooo…this gal will be running her 9 miles on Sunday instead.  Ugh, lil’ upset over the run, but I think I might have the ultimate pancake concoction tomorrow morning that is going to blow Miss Chocolate-Covered Katie’s pancake contest out of the water!  Stay tuned tomorrow for all the monster (hint, hint!) goodness ;).

Shower, recipe research, grocery store, freelance writing, possible SYTYCD results show and off to bed.  Woowoo for the weekend – tomorrow is Friday!

Before I start talking about anything related to food, I want to say thank you all so very much for all your wonderful, lovely comments.  Last night, I got home after yoga, grabbed a banana smooshed with almond butter and sat on the couch, reading and rereading all you had to say.  I was actually pretty nervous about writing this post, so I couldn’t have been more touched by your support.  You all had such wise, eloquent things to say, and that is why I am so grateful and happy to be a food blogger.  I encourage you all to go here and read those comments.  At the end of the day, we are all in the same boat: trying to lead the best, healthiest lives we can.  We’ve all got issues and baggage, but in the words of Mimi from Rent, “I’m lookin’ for baggage that goes with mine…”  Your baggage is welcome here anyday.

 

After waking up and needing an IV drip of coffee ASAP, I scarfed down a bowl of Zoe’s Honey Almond granola with vanilla almond milk alongside a naner smooshed with almond buttah

Because of the post of yesterday, I didn’t get to fully review all my the new Zoe Foods yummies!  Check out my review for the Peanut Butter Chocolate bar by clicking here.  Yesterday, I tried the Peanut Butter bar and Cranberry Currant granola. Verdict?  So far, neither bar has rocked my world.  The peanut butter one tasted similar to a Luna Peanut Butter Cookie bar, but with a slightly funny aftertaste.

However, the granola?  YES PLEASE!  Their Zoe mix (made from flaxseed, oatmeal & soybeans) is the basis of all their granolas. It has a totally lovable crunch, a hint of sweetness, a touch of cinnamon and a whole lotta yum!  There were ginormous chunks of cranberries and currants in the mix too.  The honey almond was sweet and nutty  I would totes buy Zoe’s granola again!

Lunch #1 was another ah-may-zing sandwich:  two slices toasted Ezek, 1/2 smashed avocado, 3 halved cherry tomatoes, handful o’ spinach and yellow mustard.  Anything with avocado just can’t be bad, agreed?

A handful of work and a 30-minute walk later, it was lunch #2.  The norm yogurt parfait: Stonyfield Organic vanilla, mixed berries + Zoe’s Cranberry Currant granola.

I’m definitely diggin’ the mini-meals these days – gives me something to look forward to for those seemingly never-ending days at work :).  Work was work.  However, after work, I had to haul ace across town for out 6:15pm volleyball game.  While driving like a mad, road-raged woman a responsible young adult, I chowed down on these two lovelies:

I nuked Amy’s Spinach and Feta Pocket (seriously, soooo good people – go out and buy this now!) and chowed down on the road.  Not the best way to eat, but hey, this girl was in a rush!  After the pocket, I ate Zoe’s Harvest Apple bar and am so happy to report I liked this one!  It had a really good apple flavor but without the lingering odd aftertaste.  Woowoo!

I came home from volleyball to find my sister had concocted Monster Cookies – could I really resist?  I think not.  Not the best way to end the day healthwise, but I have some veggie-ful meals planned for tomorrow so we will make up for it then.  I am actually also going to run 9 miles (my long run of the week) tomorrow because I am heading to a friend’s cabin this weekend. In the end, it all evens out :).

Gosh, it is such a beautiful night out tonight. I just love me my summa, summa, summatime….in the words of our friend, the Fresh Prince.

Let Freedom Ring, Part 1 July 5, 2009

HAPPY 4th OF JULY EVERYONE!

Greetings from the state of cheese – Wisconsin!  Before I begin on the shenanigans of the day, it is only appropriate to start at the beginning!  Yesterday, I was a total cleaning machine.  Mid-afternoon, I broke for a lil’ snackie to keep me fueled as I whipped the house into tip-top shape.  Enter a hot mess…

1/4 cup Optimum Pumpkin Granola Cereal
1/4 cup Kashi GoLean
1/4 cup rolled oats
1/2 cup skim milk
1.5 tbsp of PB

After putting in a hard days work (I sound like I’m living in like year 1890, BTW), I met up with these two lovebirds for some apps & drinks before hitting the road to Wisconsin:

Ashley and Maxx got engaged exactly one week ago from today!  They are seriously too cute :).  Maxx’s sister was actually in town as well, so the four of us met up at MOTO-I, a Japanese restaurant in Uptown Minneapolis, for some yummy drinks and eats.  You could easily pass this restaurant if you weren’t looking for it, but it is the only place outside Japan that brews their own sake.  Pretty cool, no?

I started with a MN-brewed Summit Oatmeal Stout with some kaffir lime-spiced peanuts (shared amongst us all)…

Then a sampler platter of assorted eats (l-r): a Tofu, Ponzu & Sweet Chilli Steamed Bun, sticky rice and a sweet potato pancake thingy (I don’t think that’s the technical term…).

The restaurant was super yummy, and the best part?  They had SHUFFLEBOARD!  Oh yeah, us four definitely squeezed in a game before we had to part ways.  After lots of chatting, it was finally time to hit the road to head home to the fam.  Of course, when traveling, snacks & beverages are a MUST.  If I am going to be driving 3 hours dang it, I’m going to need some good tunes, good munchies and good caffeine – a pint of blueberries (I am a serious fruit fiend today) and a Almond Joy blondie (soooo good!):

Finally I arrived to good ol’ home sweet home.  Then went straight to bed.  For real.

After a glorious night’s sleep in my own bed (aka best thing ever), I woke up and shocker of shockers! didn’t have coffee this morning.  Instead, I guzzled a big glass of water in preparation for today’s 10-mile run as well as a classic Holly breakfast – PB+B on toasted Ezekiel!

A funny thing happened – at home, my parent’s buy Skippy Natural peanut butter, which was totally my old FAVORITE PB.  Seriously.  I used it for breakfast this morning however, and I couldn’t believe how kind of artificial and odd it tasted after only eating the good stuff (PB made only from peanuts + salt) for like a year now.  I didn’t like it at all – one of those little things that kind of show you where you’ve been and where you are now :).

Then it was time for the weekly long run – this time, the big 1-0 for mileage.  Luckily, Mama Everythingtarian (she’s totally one hot  fit mama) ran the first 7 miles with me, which made the time go by so fast.  Then the last 3 miles, I stepped my game up and hoofed it – completing the 10 miles in just about 100 minutes (10:00/mile).  I took her at an easy pace and felt really good!

When I got back, I guzzled water and stretched for a good 15 minutes.  After about another 1/2 hour, I was ready to eat and devoured a yummalicious lunch…Blueberry + Banana Smoothie (1 cup skim milk, 1 cup frozen blueberries, 1 banana + 1 huge handful spinach) plus a Jumbo Salad (spinach, tomato, broccoli, cucumber, peppers + drizzle Newman’s Light Balsamic) and a Berry Oatmeal Almond Blondie!

After the pool, it was totes time to whip up some dindin!  I helped Barbie in the kitchen and chopped veggies like I’ve never chopped them before.  I was totally getting snacky, so I had a Tahini Cookie (x2) and a string cheese to tide me over until chow time.

Look at this lovely array of dinner eats – I love coming home for a plethora of reasons (I swear Mom & Dad!), but one of my favorites it getting spoiled with yummy eats I can’t afford myself (i.e. salmon).  On my plate:  1/2 garlic breadstick (from the fab Amish bakers at the farmer’s market), grilled salmon, roasted veggies & sweet potato fries!

Dessert was equally fab.  You’ve just got to love a holiday where you can celebrate your independence and chow down at the same time – thank you America!  Enter strawberry shortcake + Almond Joy Blondie + vanilla ice cream.  Seconds, anyone?

It’s the freakin’ weekend June 4, 2009

For me at least :).

This weekend is the big wedding weekend, so naturally there is tons to do between now and Saturday, for example, manicures and pedicures!  But again, we get ahead of ourselves, let’s start where we left off this morning…

After a busy morning, I grabbed a quick, healthy on-the-go lunch from Kowalski’s, my neighborhood upscale grocer.  Their salad bar is FABULOUS!  Today, I decided on a small side salad (spinach, beets, carrots, tomato, sprouts, 1/2 hardboiled egg, golden raisins and sunflower seeds with a drizzle of balsamic + EVOO) along with a variety pack of brown rice sushi (veggie roll, crab roll, some other roll with seafood).  I downed the whole delicious thing.

There happened to be peanut butter cookies (my fave!) in the break room today…dangerous territory!

After work, I had a buncha errands to run, so I kept myself fueled with a slew of snacks.  First, it was a Chocolate Chip Clif Bar (really good!) on my way to go shopping…

Then it was a little trail mix while I was shopping/running errands/reading magazines at the drug store (I can’t help it – it’s one of my true guilty pleasures!).  I ate about 3/4 of the bag (3 servings?)…

Then it was manicure/pedicure time with my lover Jamie!  Nothing like getting primped with your girls!  Woowoo – I don’t get these as often as I would like, but man, those hand and foot massages are the best.  When I was teaching in Thailand, we would get manis & pedis for like $3 and 90-minute (yes, an hour and a half!) foot massages with pressure points for like $5.  My quality of life definitely went down when I moved back home to the U.S. of A. :).

Now, I am back home, relaxing and enjoying some honey graham crackers with a little bit of crack aka raw almond butter.  What can I say?  I’m addicted!  (Plus, it’s one of the few remaining foods left in the kitchen!).

The title of this post completely tells it all.  It is one WINNNDYY day here in Minnesota!

Besides announcing my very FIRST giveaway, the day started out like any other.  Since I’m heading to Madison this weekend, I’m trying to use up all the things I have in my pantry.  This is why today’s breakfast might look eerily similar to yesterday’s…

Work was work as usual…at nooner I broke for lunch.  Along with a steamed sweet potato (fork holes all around it and nuke it for 5 minutes) and grape tomatoes, I devoured a yummy Avocado-Chickpea Mash sandwich.  It was 1 small avocado mashed with 1/2 cup chickpeas, plus salt + pepper.  Lunch today however, was enjoyed on the floor by the front desk.  The lunch room was getting crowded, and quite frankly, I enjoy my peace & quiet lunches.  So I ate next to lovely Laurie, who graciously offered to take my picture and let me sit by her…

After lunch, I went on a windy, windy walk!  I believe the skirt I was wearing even flew up a couple times (I hope nobody got a peek!).  After 30 minutes, I feel like I even got a mini-workout because fighting the wind totally felt like resistance training!  When I got back, I had a cup of Good Earth Sweet & Spicy tea with some of my TJ’s raw, vegetable-laden Righteous Rounds chocolate chip cookies.

The rest of the day flew by fast, and I got to leave early!  I had a doctor’s appointment so I skedaddled out of work at 3:30pm to take care of business.  Unfortunately, I did not pack an afternoon snack, and it totally bit me in the butt later.  By the time I got home at 5pm, I was starving and dug into this while my pasta was boiling…

I started dipping the TJ’s cookies in the almond butter, then in shredded coconut!  Gosh, it was heavenly!  However, I did feel slightly out of control while doing this.  Between not having eaten, having it be around that time of the month and 1/2 marathon training, I definitely overdid it by eating almost 10 cookies like this.

On top of that, I also scarfed down dinner, which was leftover Italian pasta sauce from last week over Barilla Plus penne pasta, sprinkled with some goat cheese.

Even worse, after dinner, I said what the hell and finished the last of the cookies (about 5).  I’m not going to lie, the end of the day today was not my best eating day.  But it happened, and I am sure it will happen again.  I’ve spent many hours over the past couple years beating myself over doing something like this – binging and feeling out of control.  We’ve all been there.  Right now, I feel lethargic, gross and just all over icky.  Quite frankly, it’s a great reminder of why I do eat healthy (most of the time :)).  Eating healthy makes you feel good, energetic and happy!

Right now, I am sipping on some mint tea to settle my stomach, going to head off for a short walk (walking after binging is shown to actually help reduce the side effects!) and then it’s beach volleyball league tonight.  There is so much more to live for than food. 

So here I am, brushing it off and remembering…tomorrow is always a new day.

***Update:  Since honesty is the best policy, I also had some DQ ice cream (courtesy of Megan) after dinner…a free Peanut Buster Parfait?  I could not resist.  I ate about 1/2 – 3/4 then threw the rest away – I was full and not feeling so hot.  Luckily, last night’s beach volleyball game was a good one.  Hopefully I burned off some of those cals from today!

 

The Perils of Peanut M&Ms May 18, 2009

I think the title of the post says it all…but you’ll see the chocolate in a bit :).

This morning, I started out with one of my faves which I haven’t had in awhile…a BREAKFAST COOKIE!  Using Fitnessista’s genius recipe, I concocted a strawberry coconut cookie using berry acai hemp protein powder.  Strawberry + coconut = heaven.  With a cuppa joe & skim milk (not pictured)…

Unfortunately, this didn’t hold me over as long as I hope so I was just forced to enjoy this new, delicious Larabar a little earlier than usual…Peanut Butter Cookie!

I don’t know how Ms. Lara does it, but this tasted soooo much like a peanut butter cookie!  Each flavor I try tastes so much like what it is supposed to be but still uses under 6 ingredients and is soy-free, gluten-free, raw, unprocessed, etc. etc. etc.  If you haven’t tried these yet, you must!  They are a bit expensive but just think of it as a healthy treat!

Lunch was a semi-repeat from last night…Italian-style chickpea burger with cherry tomatoes and a cocktail of my TJ’s raw chocolate chip cookies (made with vegetable extracts!) and the last of my Black Mission Figs.

After lunch, I took a nice 30 minute walk in the GORGEOUS weather.  It was sunny and warm…finally!

For some reason, NOTHING was filling me up today.  There are certain times of the month where this just happens and ya gotta give in.  My stomach started grumbling about 2 1/2 hours after lunch, so I kind of snacked all through out the afternoon.  First up?  The last of my TJ’s Raisin Pecan bread

Peanut M&Ms are seriously one of my faves!  Once I start, I often just can’t stop, which I why I try to stay away from them and enjoy in moderation.  Today I knew they would hit the spot, so I dug in and voila!  they did!  These suckers are easy to down so I kept it to 2 handfuls and planned on a healthy, nutritious dinner.

When I got home, I headed off for a 3 mile run.  I kept the pace slow (about 10:00/mile) and took her easy.  My legs were still feeling a bit fatigued from Saturday.

I don’t know if I mentioned this, but I actually got back last year from teaching English abroad in Thailand.  In other words, I had a hankering for some Thai!  I used the yellow Thai curry sauce I got from Trader Joe’s, I sauteed sweet potato, onion and tomato in canola oil and garlic.  Then I added the sauce and served it over the Lentil Biryani Rice pack (also from TJ’s), topped with cilantro and coconut.  Oooohhh…it was just spicy enough and HIT THE SPOT!

Now I am sipping tea, finishing watching some good trash TV – Dancing with the Stars and The Bachelorette.  This gal is in definitely need of a rest, so I am kickin’ back tonight and enjoying!  Hope you do the same!

***Update:  Since I was up kinda late (for me at least, haha!), I had a spoonful of almond butter right out of the jar (1-1.5 tbsp.), just like I did when I was a kid!
