Scatterbrained August 20, 2009

Guess what I did for the first time ever today?  Yeah, that’s right – Miss Scatterbrained forgot her camera at home. The horror!

I guess it was bound to happen sooner or later, so yours truly has some bangin’ breakfast and dinner eats that will surely make up for the lack of lunchie + snack pics.

Strawberry Oikos + Strawbs alongside a AB+J on Sprouted Spelt Bread

My personal review of Strawberry Oikos?  AY-FREAKIN-MAZING!

Since I’ve joined the bandwagon on Sarah’s breakfast challenge, I had to make something new.  Although the combos are faves, I usually don’t have them for brekkie.  I need to shake it up like this more often!

Mid-morning snack: Banana Nut Cheerios + sunflower seeds

Lunch: Green salad (1 big handful mixed greens, 1/2 avocado, 1/4 cup green pepper, sunflower seeds + drizzle of ranch dressing), Musselman’s Raspberry Acai applesauce + Tropical Fruit Tart Larabar

Mid-afternoon snack: 1 1/2 servings honey wheat pretzel twists + Pomegranate Chobani Greek yogurt

The Tropical Fruit Tart Larabar + Pomegranate Chobani = two new faves.  Seriously, pick these suckers up.  Now.

For dindin, I headed over to my friend Amy’s house, who I have known since 9th grade.  That doesn’t seem like that long, and then I remember I am 24 years old, which means I’ve known her for 10 years.  Yowza…I am a g-ma! With the help of our fellow Midwesterner Kristin, we had seriously one of the best dinners I’ve had maybe ever…enter Lemon Pepper Chicken with Artichoke Salsa!

That would be 1/2 Vegan Monster Chocolate cookie + 1/2 Vegan Chocolate Chip cookie over vanilla bean coconut milk ice cream each.  Perfect topper for a perfect dinner.

Plus, a side of new puppy…

Whoa…I don’t know if in fact I did eat too much today, but I am seriously stuffed!  Must be all that marathon training workin’ up a large appetite :).

After dinner, I raced back to the apartment because one of my best friends Megan made a rest stop here tonight before continuing on a loooonnng car journey tomorrow.  She showed up wearing a t-shirt that says “Polish Kitchen,” which she got at a Polish festival she recently attended – love that girl.

Now, I need to go and snuggle with my Polish gal.  Night y’all!

It’s a Matter of Equations July 22, 2009

For the record, yours truly has always been a writing and English kind of gal.  Math and me, although acquaintances throughout grades K-12, could never quite solidify a close relationship.  Until now.

Apparently, it’s taken a love of healthy yummy food to reunite math and I in a well…loving, healthy relationship.  The key to our happiness?  Equations, of course!

1/3 cup oat bran + 1 (6-oz.) container Stonyfield French Vanilla yogurt + 1/3 cup skim milk +
2 spoonfuls unsweetened shredded coconut + 1/2 mashed naner

1/2 cup strawbs + spoonful raw almond buttah

Berrynananut Overnight Oat Bran

Without equations, how would I ever concoct the perfect bowl of Overnight Oat Bran (based off of Miss Snackface’s recipe)?  Hmmmm…I really need to reconsider math.  He has single-handedly revolutionalized the morning oatmeal industry and made Kath oat-famous ;).

Most of all, I would probably coming crashing down on my keyboard (with key indentations on my face) in the afternoons if it wasn’t for my yogurt-mixing abilities…courtesy of Mr. Math (obv).

1 container any type of yogurt + 1 cup berries (+/- 1/4 cup granola (optional)) = perfection

CIMG4349

fave afternoon schnack

The one place me and math differ?  M&M’s.  You can’t count them.  You just need to eat them.  Lots of them.  Preferably of the peanut or peanut butter variety.

M&M handful (x2) + chickety chai green tea = afternoon munchie perfection.

my fave are the yellows...probably b/c they are the worst artificial coloring

M&M handful (x2 or more) + 1 cup of chickety chai green tea
= a serious addiction

The best math however, involves both inanimate and animate objects.  In my case, that would be food + friends.  Probably one of the real tried and true equations there is out there.  Sorry Einstein….e=mc^2 just doesn’t cut it.

My final math equation:

X = breakfast
Y = all other food
Z = stress
a = friends
b = a job interview
c = handfuls of peanut M&Ms
d = going to bed

(X +3Y) x 3c

Threadbare Gypsy Soul July 20, 2009

Got myself a threadbare gypsy soul
Likes to dance and drink and go wherever the wind blows
Gotta little threadbare gypsy soul
Gotta little threadbare gypsy soul…

A lil’ Pat Green anyone?  One of my fave songs :).

I have to say, I’m definitely feeling especially quite gypsy-like these past couple weeks.  Between all these weekend getaways, running here and there, barely having time to get all my ish done (much less train for a marathon!) and workin’ the 9-5, this gal wants nothing more than to put on a headscarf and bejeweled sarong, sing “Gypsies, Tramps and Thieves,” and dance my way to Europe.  Ahhhhh….if only….

It’s probably a good thing that it was only the “Men Tell All” for The Bachelorette tonight.  My to-do list is a gazillion things long and watching pointless, dramatic, trashy reality TV that’s totally awesome can wait another week.

Breakfast was a bowl of Overnight Oat Bran a la Snackface

1/3 cup oat bran
1 (4-oz) container Yo Baby Pear yogurt
1/3 cup skim milk
1 sliced naner

(soaked overnight)

1/4 cup blueberries
1/4 cup Zoe’s Honey + Almond granola
blob o’ AB

CIMG4305

Bluenanapear Overnight Oat Bran

Then I ate my afternoon snack mid-morning because I was feelin’ snacky (to the tune of “Bossy,” of course) – Zoe’s Peanut Butter bar with PB frosting and topped with a flair of creativity…

I heart food art.

I heart food art.

Last week, I went administrative assistant turned nutrition counselor when Bryan, one of my co-workers, needed a dessert recipe that was chocolate & dairy-free for a BBQ he was heading to.  After a bit of scouring, I found a recipe for Lemonade Cupcakes from MyRecipes.  FYI: the recipe is not remotely healthy – it’s a BBQ people!

Well, Senor Bryan saved me a cupcake from the weekend since I gave him the ingenius recipe.  Turn down a cupcake?  Virtually never.

I also heart cupcakes.

I also heart cupcakes (even if it's just 1/2).

Some berry love munched on while running lunchtime errands…

CIMG4309

Strawberry lovin' - similar to McLovin, anyone?

Warning: most rando salad combo eva ahead!  Weirdly enough, some of the strangest combos seem to be the most satisfying…hmmm…I might have to raise the eccentric stakes for next salad…

baby spinach
cauliflower/broc/carrot mix
1 box raisins
TJ’s AB+PB+J trail mix
Newman’s Sesame Ginger Vinaigrette

CIMG4311

A salad for afternoon snack? YES AGAIN.

Dindin was quite glorious, if I do say so myself. Let’s just call it healthified Eggplant Parmesan!

CIMG4314

Two slices toasted Ezek, 2 Dominex Eggplant Cutlets, marinara sauce + sprinkle of Swiss cheese = HOLY YUM.

CIMG4315

A buttery croissant (courtesy of my sister's dinner) to sop up the rest of the sauce...

CIMG4316

...one chicken/veggie kebob (minus the shrooms for me), also courtesy of sister Katie...

CIMG4318

...finished up with a lil' AB+PB+J+chocolate chips trail mix foe somethin' sweet.

I was most def about 7 months preggers after this meal.  However, I didn’t feel gross full – just contently full of delicious, nutritious and fabulous eats.

Finishing up the night, I headed out for a 6-mile run, which I finished in just under an hour.  Since my marathon training is a bit off (due to the past week’s vacay getaways), I am planning my long 12 mile run for tomorrow (to make up for the weekend), taking Wednesday or Thursday off, then hopefully resuming the norm Hal Higdon plan.

Gotta go take care of my cousin’s beast of a dog – pics to come tomorrow.  Seriously dudes…Angus (the dog) is a BEAST!

Peace out peeps.

Happy humpday (at least for me :)) everyone!

Since I don’t have to work on Friday, I just need to get through 2 more days of work before a loooong weekend!  Breakfast started with a bang this morning – courtesy of Polly.  It was the other half batch of Oaty Cakes I made from Sunday, and they were just as good today.  Topped with peanut buttah, banana & raspberries – perfection!

CIMG3916

These lovelies held me over fabulously all morning (downed with a cuppa joe + 2% milk of course!), and I broke for 1/2 Cherry Pie Larabar around 11am.  I knew I was meeting one of my college roomies, Jess, and her mom for lunch at noon so I needed a lil’ something to get me by until then.

CIMG3918

Us ladies headed over to a lovely local restaurant where their food is seriously soooo good.  It’s like an upscale bar & grill, so the food isn’t greasy and crappy but rather fresh, yummy and creative.  I had the Goat Cheese & Chicken Salad containing : mixed greens, candied pecans, jicama, goat cheese, tomato, grilled chicken along with a hunka burnin’ love bread.

CIMG3920

The salad was super yummy, but the problem was I only ordered the half, which was not big at all (despite the size it looks in the picture).  I knew as soon as I ate up every last morsel, I was going to be hungry not too long after.  Unfortunately, usually when I go out, my lunches are bigger so I didn’t plan ahead and pack any additional snacks with me to work today.  Tsk tsk Holly, tsk tsk!

When I got back to work, I ate the other 1/2 of the Larabar and hit up the vending machine for the healthiest thing I could find, a Nature Valley Oats + Honey Granola Bar.  Not the worst, but definitely not the best either.

CIMG3921

I might have even snuck a Diet Cherry Coke, secretly hoping the carbonation would fill me up a bit :).

Around 4pm, I was getting ravenous so I hit up a lil’ trail mix.  It’s got a good assortment of nuts (hazelnut, cashew, peanut & almond), not too much chocolate and a couple raisins.  However, I’m educated enough to know this mix probably also contained extra doo-dads I don’t want.  Live and learn peeps!

CIMG3922

Thankfully, dinner more than made up for my poor planning.  On my drive home, I single-handedly concocted this wonder using the big ol’ brain Barbie + Ken (yes, my parents names are Barbie and Ken) so generously blessed me with.  Layer by layer, here we go:

1 slice toasted Ezekiel bread
BBQ sauce
lettuce
tomato
1/4 avocado
Sunshine Burger Falafel Patty
1 oz. English Mature Cheddar
1 slice toasted Ezekiel bread

CIMG3923

Thanks mom & dad – my brainiac combo served me well!

With a nummy 22-calorie Yummy Earth Organic Mango lollipop afterwards…

CIMG3926

I am supposed to run 3 miles according to the marathon schedule, but I think me and my friend Megan are going to hit up Latin Fusion class instead…aye que fabulosa!  As long as this gal gets some cardio in, I will be a happy camper.  If my hips don’t lie, and I work hard enough tonight, there could even be a late night snack posting in all of our futures!

Happy humpday Tuesday everyone! 😉

Mondo-Filled Fun, Part 2 June 22, 2009

This post needs to start out appropriately…HAPPY (belated) FATHER’S DAY to my dad, as well as all you other dads out there!  Props for always being there when us daughters need it :).

Now, picking up where I left off…

After I finished volunteering at the Special Olympics, I met up with my mom and sisters (who came into town) for some bumming around and shopping.  Of course, we happened to pass up an old-time creamery and stopped in for some afternoon ‘scream.  I got a small cinnamon ice cream…if you haven’t tried cinnamon ice cream before, do it!  It is a glorious combo.

CIMG3771

Not the prettiest pic ever, but remember I was dancing my arse off for 5 hours previously in the raging heat :).

From family time to friend time…me and my ladies got together for a lil’ dindin/baseball game outing.  Unfortunately, I didn’t have time to change to I look like a cross between Britney Spears (during her darker days), a homeless person and a 70’s afro disco dancer.  Whatcha gonna do?  We grabbed dinner at The Loon Cafe in downtown Mpls. where I started things off with a lil’ Leinie’s Honeyweiss (instead of paying $10 a the game for a brew).

CIMG3772

Dinner was delish too (almost as delish as the beer, haha): Kathryn’s Chicken Salad – coconut-crusted chicken over mixed greens, hardboiled eggs, avocado, tomato, artichoke hearts and dressed with a light honey mustard.  It was really good!

CIMG3773

Then, it was game time!

CIMG3777

We lost…ugh…but we still had some good times – of course, I couldn’t leave without a group shot of all the ladies!

CIMG3778

I went home and slept like I had never slept before.  It was glorious.  “I see Blue.  He looks glorious.”  Name that movie.

Breakfast in the morn was a quick bowl of cereal – my new Tarjay Heartsmart cereal, 1 sliced banana, sprinkle of slivered almonds and vanilla oat milk.  I LOVED the cereal!  It was organic, full of protein & fiber, still had a bit of sweetness to it and all around, delicious.

CIMG3783

Then it was off to the water park!  The lazy river at the waterpark near my aunt’s house is open almost every morning for people to walk against the current (aka killer resistance workout), so my aunt, cousin, mom, sister and I went for an hour-long water walk.  After the hour was up, my legs were done for.  Awesome morning change-it-up.

For lunch, Mommy Everythingtarian and I hit up the grocery store for some (free) groceries + some salad bar.  I mixed up a side salad of spinach, onion, green pepper, cherry tomatoes, hardboiled egg, sunflower seeds, cucumber and balsamic + EVOO, along with a tuna avocado brown rice sushi roll.  Twas’ excellent.

CIMG3784

***Note my mom’s hand already grabbing the sushi before I could finish taking a picture…

After lunch, I got a few things done (including finally blogging Part 1!) and snacked on 1/2 Raw Organic Chocolate Coconut bar along with some mint tea, which is totally my new fave.

CIMG3785

Later, I finally got to see my daddy, wish him a Happy Father’s Day and present him with his gift – card + bottle of yummy red wine + Crunch Bar Blondies!!!  He LOVED the blondies – chalk it up to another VeggieGirl win :).  Everyone totally enjoyed them, including moi – I couldn’t resist one more taste!

Dindin was so-so.  I tried concocting some Thai tofu lettuce wraps in honor of my time teaching in Thailand, but it didn’t come out quite as I wanted.  So, I will leave you with a picture but no recipe until I perfect it!

CIMG3787

Since dinner wasn’t the most satisfying, I dug into the rest of my blackberries and my fave KIND bar (Walnut + Date) for an after-dinner treat…

CIMG3788

After dinner, I headed to my fave Sunday night Yoga/Pilates Fusion class with Yoga Diva Deb, and it felt ah-may-zing!  It was exactly what I needed!  After yoga, this tired gal went home, made herself another cup of mint tea, read a little then crashed like a lil’ baby.

Now, it is Monday morning already, and where does the time go?  What did everyone else do this weekend?  I guess I will find out later for some of you when I get to do some much-needed blog reading.

HAPPY MONDAY EVERYONE!

Wild Weekend Wedding Wrap-Up June 7, 2009

Whew – I cannot believe it’s Sunday already!  I hate how the weekends just fly.

This weekend was SO MUCH FUN!  Since I had Friday off from work, I took full advantage to gets tons of stuff done.  The morning began in a rush however, as I forgot to fill up my gas tank.  Sooo…between getting gas, hitting traffic, getting lost and having no food in the house, I was more than a 1/2 hour late for my 8am meeting.  Ugh!  I hate being late.

The worst part was I had to scramble for breakfast at the gas station.  I was in such a hurry but yet still found an extra 5 minutes to browse the energy bar section for the best pick.  (I guess you know you are a food blogger when…)  I decided on a banana and Powerbar Harvest bar in Toffee Chocolate Chip (which was fine – not bad, not great)…

CIMG3448

At my meeting, there was a large coffee consumed.  I needed it.  Badly.

When I got back, I snacked on some graham crackers with AB+J while I paid my bills, bills, bills…

CIMG3451

I also took a couple minutes out of my Friday to admire my lovely new pedicure…

CIMG3457

I was so glad I took Friday off – I was so productive and got a lot of things done I had been procrastinating waiting to do for a long time.  Since I knew the rehearsal dinner would be later than I normally ate dinner, I had a bigger lunch to hold me over until then.  Making good use of the rest of my refridgerator, I concocted a black bean salsa (black beans, onion, tomato, cumin, garlic powder, S+P, drizzle of EVOO & lime juice) with some Triscuits, as well as some sweet potato fries, sprinkled with cinnamon and drizzled with maple syrup.  Yummmm!

CIMG3452

And a handful of dark chocolate-covered raisins (okay, two handfuls!) after…

CIMG3459

 Rehearsal dinner time!

The groom’s family had arranged a FABULOUS dinner cruise on the river.  So, we spent several hours chugging up and down the river, enjoying beautiful blue skies and some cool, refreshing breezes.  Here are all the bridesmaids together before the big day:

CIMG3465

Dinner was good too!  I loaded up with the following…

small chicken breast
herb butter potatoes (soooo good!)
fruit salad
wheat bun
salad with Italian dressing

CIMG3469

Don’t worry – I didn’t forget the best part: the chocolate-covered strawberries!  My plate had one, but throughout the evening I believe I consumed about 5 or 6 :).  I couldn’t resist – soon they wanted to get rid of the last few and were like, “Go find Holly!  She’ll eat them!”  And I did.

Me and two of my college roomies: Jamie + Jess (one of 3 Jessicas!).

CIMG3470

 Finally…Saturday (AKA WEDDING DAY) came!

To give you a small preview of this ridiculously gorgeous wedding, here is the bride’s AMAZING callalily bouquet…

CIMG3489

And the gorgeous bride herself (along with yours truly)…

CIMG3496

Just to warn you, I didn’t take any food pictures on Saturday.  Honestly, I was too busy having fun/helping the bride/running errands/gettin’ myself pretty to even think about it.  My food intake wasn’t the greatest (not necessarily unhealthy, but lots of it!).  There were lots of snacks, treats and yummy food though, along with a couple beverages of choice from a certain open bar, of course.

Say hello to the new Mr. and Mrs.!!!!!

CIMG3506

Jess seriously looked stunning!  She was a hella gorgeous bride, and well, Brad didn’t look to shabby either :).

After the ceremony, it was time to get down to business and dance!  I loved the fact that I knew so many people at the wedding – from family to friends to family friends, it was so much fun to see everybody.  Throughout the night, I sipped on a couple glasses of red wine, along with a beer and a mixed drink.  By the end of the night, I was chugging water because we were sweating so much on the dance floor.

Here is another college roomie pic…

CIMG3529

And then it was time to get down…

…and this is Nate.  Nuff’ said right there.

CIMG3546

The group gettin’ low, low, low…

CIMG3551

Oh man…we literally did not leave the dance floor from about 8pm to midnight.  I woke up this morning to find that my abs, calves and legs are totally sore.  Dancing is a stellar workout – and wayyyyyy more fun than the gym!

This morning/afternoon, we regathered (looking all quite tired, haphazard and joyful from our awesome night) for the present opening.  We were lavished with a wonderful brunch array, in which I downed a couple pancakes, some mini cinnamon rolls, lots of fruit and two cups of coffee.  Oh man, I felt great after that brunch!  After present opening, it was lots of catch-up errand running and whatnot, as well as the movie Up (which you must see – it’s adorable!).

Since I ate all that around noon, I wasn’t really even hungry until dinnertime.

My appetizer (carrots + AB)…

CIMG3559

The main course (Kale Chips, the genius invention of Miss Kath)…

CIMG3561

And dessert (Stonyfield Farms Raspberry Lemonade lowfat yogurt with raspberries)…

CIMG3563

Unfortunately, there is no bedtime for me yet.  I still have lots to catch-up on (including LOTS of blog reading!), and so this girl has got to skedaddle.  Thanks so much for reading, hope you all had wonderful weekends, and I will finish catching up with you all tomorrow.  Stay tuned for some exciting news later this week too!

Sweet dreams!

Flippin’ Friday May 29, 2009

That’s right – T.G.I.F. baby!

This Friday morn, my day started out fabulously due to the other half of my green monster from last night.  It was just as good as last night, although I think next time I make it, I might add a smidge less avocado (maybe 1/2 – 3/4 of one).

CIMG3311

Doesn’t look so green in that pink cup :).

A couple hours later, my tummy was grumbling for some more eats, hence this…

CIMG3312

Delicious as always.  Since I had a bit of a later lunch, I munched on this gorgeous, juicy peach an hour or so later:

CIMG3314

Luckily, I stayed pretty busy at work today (sometimes Fridays can be boorriinggg!).  Lunch today happened to be a treat – a coworker and I had a lunch “meeting” at one of my favorite local spots.  I had one of the specials of the day, the Chicken Cobb Salad.  Filled with mixed greens, red onion, cherry tomato, avocado, beets, egg, chicken and drizzled lightly with some buttermilk ranch, it was sooooo good!  I ate about 3/4 of the chicken and all of the salad.

CIMG3316

The crusty white baguette didn’t hurt either :).

Back at work, I grabbed a small handful of these as a nice Friday treat.  One of my all-time faves, peanut M&Ms!

CIMG3318

The rest of the afternoon, I jammed to James Morrison’s new CD “Songs for You, Truths for Me” (if you haven’t heard it, get your buns out there and get it now!) and waited for the clock to hit the ever elusive 5pm.  Finally, it happened and I darted out of there so fast, you would not believe!

When I got home, I broke open this lovely for dinner:

CIMG3319

Then paired it with a organic nonfat plain yogurt/blueberries/coconut/blueberry muesli/drizzle of honey combo, and voila! – a delish, easy, nutritious and quick dindin.  Exactly what I need when I get home from work with no patience to cook!

CIMG3320

CIMG3323

CIMG3321

Whew – I don’t think my brain can think anymore this week :).  I am soooo excited for the weekend!  I think tonight is going to be a fun ladies’ night on the town, so I am saving myself for perhaps a beer or two and LOTS of dancing.  Tomorrow I plan on getting lots of things done but squeezing in some fun as well.  I hope you all get to spend time enjoying the freedom of the weekend – my favorite weekend activity is going to the farmer’s market, which I think I am going to do tomorrow morning.  Alright, I am off to get myself beautified for my lovely ladies tonight!

What’s your favorite weekend activity?
