First and foremost my friends and family (they are indeed readers!), I need to give YOU all a big THANK YOU!  All your congratulations on the new job and support for the blog have been nothing short of AMAZING and have helped quell all the moving nerves – so muchas gracias!

B’fast was totes a repeat of yesterday…

However, unlike yesterday, I got to work early today.  I chalk that up to my 9:30pm bedtime :).

When I got to work, I saw this beast hangin’ out in the parking lot…

WELCOME TO THE 2009 COMPANY BLOOD DRIVE!

Our accounting firm hosted a blood drive this morning in conjunction with the Memorial Blood Centers of Minnesota to round up a bunch of accountants’ blood along with my lowly administrative assistant blood!  Honestly, and in all seriousness, I have been donating blood since high school, and it is so important!

(Warning: Public service announcement ahead)

One pint of blood can save up to 3 lives, which is crucial when 1 in 7 people entering the hospital need blood.  It really takes no time at all (about 1/2 hour from registration to blood donating for moi today) and really SAVES LIVES.  Plus, you get free snacks at the end.  It’s a win-win on both ends.

giving the gift of life

i don't know why my neck looks creepy like that. however, i have O- blood, so even if my neck looks funky, people still want blood from the universal donor blood type (that's me!).

post-blood donating snacks

Click here to find out where YOU can donate in your area.  Every TWO seconds someone (yep, two seconds right there!) needs blood in the U.S., yet only 5% of Americans donate (another two seconds).  Need more motivation to give?  Click here and help out a brotha and a sista.

Onto other thangs…it was a b’fast for lunch day with a smashing jar of Overnightmorning Oats!

1/4 cup oat bran
1/4 cup rolled oats
1 (4-oz.) container Stonyfield YoBaby pear yogurt
1/4 cup skim milk
2 tbsp. unsweetened shredded coconut
2 tbsp. dried cranberries

~ soaked all morning ~

1 torn Organic Archer Farms pomegranate fruit leather
the rest of my Zoe’s Honey Almond Granola

Overnight Lunch Oats

what did i ever do before overnight oats?

After lunchie, it was a nice 30-minute walk around the lake to clear my crazy mind.

Then back to work, where I think I also managed to find an uber-cute apartment in Madison.  Cross your fingers it’s as cute in real life as it is in Craigslist pictures (which almost never happens!).

Now, the end of the day is here, and I am off to a company BBQ.  Haha…gotta love those!  I don’t know what kind of eats will be there, but I will try to fly MacGyver style and sneak some pics when no one is looking.  Heck, what do I care if people look and stare?  I’m gone in just over a week.  Pics WILL be on their way later :).

After the BBQ, it’s off to yoga to fulfill my week’s mini-goal!

P.S. Newsflash!  There are limited edition COCONUT M&Ms now in stores!  I repeat COCONUT M&Ms now in stores!  (Thanks to Mama Everythingtarian for keeping us up-to-date)

P.P.S. No strenous activity for 12-24 hours after donating blood.  The lady practically fainted when I told her I was going to run 7 miles tonight…guess that’s not gonna happen…

2009 Gas Station Challenge July 29, 2009

This morn was rough.  Real rough.

You ever have those mornings where you look in the mirror and are like, whoa – what the hell beat me up last night?  I’m all about self-empowerment and encouragement peeps, but sometimes, there is no saving face (literally) no matter how many compliments you give yourself.

Luckily, washing my face always seems to make things 100% better, so I lathered up real nice, slathered on my fave Aveeno face lotion and felt a whole lot better.  I was still 1/2 hour later to work than norm, but it was worth it to take time and enjoy this…

I finally busted open my last box of Zoe’s granola sent to me awhile ago as a free sample: Cinnamon Raisin! As with all Zoe’s granolas, my first reaction was mmmmmmmmm! Honestly, I wasn’t the hugest fan of their bars, but their granolas are really good. I love the sweetness, crunch and texture of the mix, and the Cinnamon Raisin was no different.

Finally, lunchtime struck and it was time for the challenge: The Gas Station Challenge!

the scene of the challenge

the scene of the challenge

Since the next week and a half is going to be a bit crazy, I don’t know if it will be worth it for me to grocery shop because I am grabbing lunch with friends, have a couple events to go to and obv going to be uber busssyyyy.  So, I decided today I would give myself $10.00 to buy myself lunch, snacks and dinner for the day.  You may be asking me, $10 bucks at a gas station, are you kay-ray-zee woman?

Most likely.

However, all of us are busy and quite frankly, don’t always have time to prepare lovely, gorge homemade meals featuring organic, homegrown ingredients all the time (or even half the time!).  Sometimes, dinner is chowed down while driving, talking on the phone and trying to navigate the mean highways of MN…I mean…

I wanted to see how far $10 would go at the gas station and see how I could navigate our fave neighborhood hot spot for some healthy eats.  Here’s how it went…

CIMG4480

the loot = $10.20

  • Bumblebee Sundried Tomato & Basil Tuna with Crackers
  • Crystal Farms Marble Jack cheese stick
  • Crunchy Peanut Butter Clif Bar
  • Veggie platter with dill dip
  • 1 (6-oz.) container Kemps 1% fat cottage cheese
  • Green apple
  • Dark Chocolate Peanut M&Ms

Two meals and a snack for $10.20…if I do say so myself, I rocked that challenge!

Lunch: Tuna cracker pack + cottage cheese + veggie tray.  One can get quite creative with this combo, if I do say so myself…

Snack: Dark chocolate peanut M&Ms

Mini-dinner #1: Clif bar + cheese stick + apple

Volleyball was a bit bittersweet.  We lost.  Bad.  However, in brighter news, next Wednesday is now my going away shindig (instead of a playoff v-ball game).  I’ll take that trade-off.

Mini-dinner #2: Red pepper hummus + pita chips (split three ways…although I prob could have wolfed em’ all down)

post-game cheering up

Now, it’s time to make my master moving to-do list and get to bed.  I haven’t worked out since Sunday (eeek…there is marathon training to be had!) and haven’t gotten to bed before 11pm in a week!  That just ain’t okay with my healthified g-ma ways :).

What is your fave gas station find?  Dudes, that sundried tomato tuna cracker pack was pretty delish!

Angus, meet my foodie friends.  Foodie friends, meet Angus (a.k.a. The Beast)…

Angus the Beast

objects appear much smaller than they are in real life

He’s my bud for the week.  At least I won’t have to worry about kidnappers or anything – this dog would scare anyone away.  Good thing he is secretly uber-mild mannered.  Just don’t tell the kidnappers that :).

Breakfast was quick and satisfying (T.W.S.S.) – Banana Nut Cheerios + skim milk alongside a naner + AB.

A classic b'fast combo.

classic b'fast combo

One of the benefits of taking care of your cousin’s dog is (a) having a brand new eco-friendly apartment to stay in for the week (made of astroturf and recycled materials!), and (b) raiding other peep’s pantries!  I had full permission from the cuz to eat whatev, and I happily found these little darlings in the cupboard…

Who is this Mrs. May and why haven't I met her before?

Look at those kernels of goodness.

kernels of goodness

Holy yummola, these were fabulous!  They are little crunchy nut clusters filled with dried berries, almonds, cashews, pistachios and sesame seeds (bound together with rice malt + evaporated cane juice).  Dee-lish!  It was 2 servings in the bag (pooey!), but those 350 kcals were well worth it!  I am definitely going to go purchase these on my own, which is saying a lot since I am totes poor.

Lunch was a lovely colorful snack plate of assorted goods…

Afternoon snack was no surprise…

1 cup strawbs + bluebs
Stonyfield Organic nonfat lemon yogurt
sprinkle Zoe Honey + Almond granola

Classic afternoon snack bowl.

I got a pile of work at the end of the day, which kept me busy until check-out time at 4:30pm.  I tried to get home ASAP because quite frankly, even though I’m not the hugest fan of dogs (due to a traumatic childhood incident involving my neighbor’s LARGE show poodles – it’s a long story), Angus looked really sad this morning.  I felt so bad leaving him all day :(.

However, I got home, let the beast out in the dog park (yes, the apartment building has a courtyard dog park!) and prepared to make a smashing good dinner…

spinach
hunk o’ pine nut hummus
1/2 avocado
sprinkle of onion
celery sticks
handful of bluebs
2 Wasa crackers
drizzle of flax oil (another pantry find!)

Rando combos = the best ever.  This will be the perfect 12-mile run fuel – I don’t feel weighted down at all but yet totally energized.  A good mix of protein, carbs + fat to hopefully not die complete the 12 miles in record time!

Alright, enough procrastinating.  I gotta go let Angus out once more before I go running, then I need to get dressed (often the toughest part for me!) and get my buns out the door.  Let’s hope it doesn’t rain on me (the clouds are a bit ominous!) and a snack will DEFINITELY be had when I get back…errr…if I get back….

What is your favorite rando combo?  Let me hear it dudes!  I grew up with a dad who LOVED vanilla ice cream + raspberry jelly + Lay’s potato chips.  To this day, it might still be my fave rando combo.
