Running Well, Wedding Bells + Internet Hell August 16, 2009

Yep, that pretty much sums up my weekend.

Let’s start with the good stuff – I got up at 7am bright n’ early on Saturday morning and ate a nice carb-heavy pre-run meal consisting of a 1/2 cup Special K with 1/2 cup skim milk and a chocolate chip granola bar.  There is no better running fuel than pure white carbs.

Then, yours truly did what she has NEVER done before – run 16 miles!

The first 9 miles went well despite the Minnesota heat and humidity.  I made sure to make frequent water stops (also stopping to splash water on my head to cool down) before returning back to my friend Ashley’s where I popped 3 Clif Black Cherry Shot Bloks and some Diet Cherry Pepsi (don’t judge).  Then Ashley headed out with me to finish the last 7 miles, and my other friend Megan joined us for the last 3 miles.  My friends are seriously the best :).

In the end? The run went AWESOME.  I finished in my marathon pace of just under 10:00 minutes/mile, equaling about 2 hours and 40 minutes.  I seriously think I could have gone even further. It was that kind of glorious running day.

Seriously…if I could marry Indian food I would.  Shhhhh, don’t tell McMac I am cheating on him ;).

After lunchie, it was off to IKEA –  ummm, holy anxiety!  Soooo many people, soooo many things to look at and tooooo little time.  Luckily, I had my trusted Meggy Moo in tow.  If this isn’t a friend, I don’t know what is:

Then, I gussied myself up and headed off to my girl Charlotte’s wedding!  Charlotte and I studied abroad together in college in London, and we’ve pretty much been soulmates ever since.  LOVE that girl.  I also got to see Brittany (who also studied abroad with us) for the first time in years.  LOVE that girl too.

Yeah, that’s right.  My girl Char had a plethora of CHEESECAKES at her wedding instead of regular ol’ wedding cake.  That is reason #4,276 that we are friends.  Brittho and I may have split an additional piece of Key Lime Cheesecake.  Just sayin…

When I got home, I crashed harder than Lindsey Lohan’s career.

After almost 10 hours of glorious sleep, I woke up to coffee and a lovely chat with Ashley.  Then, right as I started contemplating eating Ash’s carpet, it was 10:30am and time for me to meet another fabulous lady you all know – Ms. Angharad!

We met at the Uptown Diner…looks like a total dive from the outside, but inside you will find such fabulous delicacies such as this…

After brekkie, I skedaddled back on the road (wasn’t I just driving?) back to Madison.  Five LONG hours later, I arrived safely.  After successful shopping trip #2 at the co-op (including a free coupon for a French Meadow bread product and a bottle of organic agave syrup – score!), I made it back to my apartment to find the Internet still not working.


I can’t handle this.  ATT is apparently coming on Tuesday to fix it, but that means another two days of paying for coffee at the cute coffeeshop for free Wi-Fi.  I guess there could be worse thangs…

After getting really frustrated and angry speaking calmly with the Internet peeps, I needed a snackie.  Enter in perhaps, my other new love (sorry McMac AND Indian food :()

I just scrolled through the post and realized it’s practically a marathon long, which by the way, the Twin Cities Marathon is in T-minus 49 days.  Eeeeeeek!

Happy Monday my friends!

I literally just got back from Madison a couple hours ago after 9 HOURS of driving in the past 24 hours.  Ugh.  I hate driving.  I would happily give up driving and stare out the window in la-la land the rest of my life if I could.  Luckily, I made it home just in time for The Bach finale!

In short, she picked ED!  Yay for his green mankini him!  

Not going to lie, as much as I like cute, charming Reid, he looked like a TOTAL TOOL coming back to propose to her.  Anybody else agree with me?  Yeah, I know ya do.  What am I going to do on Monday nights without my Bach fix?  Hmmmm….any ideas for a new trashy TV show hobby?

The interview went well – I think I definitely still would pick my job offer over this position, but it was awesome to get more interview experience, make connections, yadda yadda…you know, the usual grown-up job drill.

For lunch, I met up with my old boss and a couple of co-workers from a pubic relations internship I had in college.  It was sooo good to catch up with them!  They have been so supportive, helpful and fabulous (not mention, hook me up with some freelance writing gigs!).  We hit up Sa Bai Thong, a fab Thai restaurant in Madison for some YUMMY lunch eats.

I had the Squash Red Curry with rice…it was amazing.  Just trust me :).

Then I came home, unpacked my shiz, put on The Bachelorette, caught up on blogs and am now watching Flight of the Conchords. They are genius.  For reals.  Watch now.

Now, this gal is off to bed – lots more craziness, blog reading and major life decis to make this week!  I am still determined to make it to yoga and relax this week – my two weekly goals.

It’s a Matter of Equations July 22, 2009

For the record, yours truly has always been a writing and English kind of gal.  Math and me, although acquaintances throughout grades K-12, could never quite solidify a close relationship.  Until now.

Apparently, it’s taken a love of healthy yummy food to reunite math and I in a well…loving, healthy relationship.  The key to our happiness?  Equations, of course!


1/3 cup oat bran + 1 (6-oz.) container Stonyfield French Vanilla yogurt + 1/3 cup skim milk +

Without equations, how would I ever concoct the perfect bowl of Overnight Oat Bran (based off of Miss Snackface’s recipe)?  Hmmmm…I really need to reconsider math.  He has single-handedly revolutionalized the morning oatmeal industry and made Kath oat-famous ;).

Most of all, I would probably coming crashing down on my keyboard (with key indentations on my face) in the afternoons if it wasn’t for my yogurt-mixing abilities…courtesy of Mr. Math (obv).


1 container any type of yogurt + 1 cup berries (+/- 1/4 cup granola (optional)) = perfection

The one place me and math differ?  M&M’s.  You can’t count them.  You just need to eat them.  Lots of them.  Preferably of the peanut or peanut butter variety.

These three dishes – split between the three of us ladies – was the perfect dinner (plus a nice lil’ 2nd helping of each).  It was also perfect pre-volleyball fuel for our last regular season game…which we WON!  Hallelujah…we do actually have some talent!

R.I.P. Michael Jackson :(.


I am seriously so sad you guys – I literally grew up on MJ’s music.  It’s really the best cure-all when you are in a bad mood…how can you not smile when you hear “The Way You Make Me Feel”?    Thank you MJ for your ragin’ music, awesomer dance moves and for always giving us something to talk about (you know what I’m talkin’ about…).  My thoughts and prayers are with the Jackson fam!

Onto happier things…breakfast started out with a cool bowl of cereal – perfect for this lil’ heatwave we are having.  Tarjay Heartsmart, sliced naners, slivered almonds and vanilla oat milk~


I had my usual cuppa joe with skim milk when I got to work, and then the morning absolutely flew by!  I have no idea where it went.  That rarely happens, so I enjoyed it to the fullest by having this snackarooni at about 11:30am…


At around nooner, this gal headed out into the less hot (but still quite warm) sunshine and sweated her way through a lovely 30 minute walk.  It felt soooo good to get outside, especially because mis ojos were glued to the computer screen all morning, and I am pretty sure I was on the verge of going blind.  Upon my return, I had the most gl-gl-gl-gl-glorious bowl of yogurt (an idea I stole from the fabulous Miss Jenny)…

Peace.  The world needs it.

This fab combo seriously held me over all afternoon – with the protein-packed yogurt + peanut butter, it kept me cruising through an afternoon of work.  However, mid-afternoon, I did have to bust out a 4th of July Tootsie Pop in Cherry.


Then later in the afternoon, it was more YOGURT!  My fridge is sparse and looks quite sad :(.  Soooo…it is that time of the week to use up what I have, and thankfully I have my Oikos Greek yogurt!  Not only was the plain yogurt delicious (tangy, thick and creamy) but the vanilla was even better.  The touch of sweetness in the vanilla is just enough to set off that sometimes too tangy taste – and with only 11 grams of sugar (some of which are the natural milk sugars).  Holla!


Then I got the sad news about our friend, The King of Pop.

I worked until 5pm, braved the still horrendous traffic home and quickly made dindin.  Berry salad with slivered almonds (with a drizzle of EVOO/honey/lime juice), whole wheat kaiser roll and some beets on the side (I was going to name this post Beets, Bears, Battlestar Galactica after Dwight, then refrained).  Mama Everythingtarian introduced me to beets like a year ago, and I LOVE THEM.



After dinner, I organized my to-do list (it never seems to get any shorter), got ready for Fitness Yoga and popped a couple of True North Citrus Burst nut clusters before gettin’ my chi centered.


This handful x2.  I sweated my little buns off in yoga today – lots of Vinyasa-esque flows, chaturangas, downward dogs.  I was supposed to run 3 miles (per Hal Higdon) today, but I wasn’t feeling it, so I headed off to yoga instead.  I think I will make up the 3 miles tomorrow or just skip it – I have to run 9 on Saturday anyways :).

When I got home, I popped two more nut clusters.

Alrighty, I think I’m going to sneak in some reading, take a quick rinse off before bed and hit the hay, because tomorrow is Fridayyyy!!! 

Any weekend plans for anyone?  I have a buncha movies I want to see (Away We Go, My Sister’s Keeper & Food, Inc.), but other than that, my schedule looks pretty open.  Ahhh…I love that feeling…


Fruitful Day June 9, 2009

Good evening my little online blogarinos!

As the title of my post suggests, today was full of fruit!  The fruitaliciousness started bright and early this morning with a poopy green monster!  Today’s concoction included:

1 cup vanilla almond milk
4 cups spinach
1 banana
1 cup berry frozen fruit mix (cherries, raspberries, mango & boysenberries)



I’m not going to lie, I was drrraaggggiinnnggg today – the past week really took it out of this gal (and that is hard to do!).  However, the green monster and getting almost all my veggie servings by 7am did perk me up a bit.  However, due to lack of protein, this gal was starvin’ by 10am.  Enter…my newest Larabar purchase


It was delicious – Lara just doesn’t disappoint.

Over my lunch break, I headed back over to the gym for a nice lil’ lunchie workout.  I created a quick cardio and toning plan to keep my heart rate up and my glutes a-burnin’.  If you only have a bit of time to work out, this is really a fast, all-over workout.  Here’s the plan Stan:

Lunchtime Cardio/Toning Circuit

5 min.     Run
5 min.     50 walking lunges + 10 walking push-ups
10 min.   Elliptical
5 min.     50 wide leg squats + 25 bicep curls + 25 tricep kickbacks + 25 shoulder shrugs
5 min.     Run
5 min.     Various ab exercises (scissors, leg raises, crunches, etc.)
5 min.     Stretching

For a grand sweating total of….40 minutes!

When I got back to work, I dug into one of the easiest and most delicious meals there is….CEREAL!  If you were a childhood fan of Senor Captain Crunch, please drop what you are doing right now (except if you are reading my blog, of course!) and run to the store and buy Kashi Honey Sunshine.  It’s like healthified Cap’n Crunch!

Along with skim milk and a fantastic, juicylicious peach….



Before I forget, I feel like y’all need a little Holly Investigates… update.  You see, with my busy schedule of late, I haven’t really had the time to devote to investigating all those little health-related bits I love so much.  Sooo, I’ve decided it won’t quite be feasible to post a new one every Monday, but I will do my best to churn out a couple a month.  Deal?

After work, I headed over to my sister’s NEW house to help her paint her bathroom.  Nothing like a little sisterly bonding time over a tub of gray paint in a confined bathroom :).  It surprisingly was quite the workout – between crouching in crevices, holding up lighting devices and painting up a storm, my arms are feelin’ it!

On the way to her house, I snacked on an oats + honey granola bar as I swore/cursed/raged with anger patiently navigated the rush hour traffic.


Driving to my sister’s was complicated by a slight bloody nose in the car (nuff’ said there).  Upon arrival and before painting, I dug into the salad I had brought (pat on the back to me for thinking and planning ahead – patpat!).

While painting, I snacked on these babies + a Diet Coke…


These almonds were delicious – there were about 2 servings in the bag.  They were roasted with paprika, onion powder, garlic powder and some other spices.  They were savory and super delish!  I might have to buy these suckers again…I might have also had a couple handfuls of my sister’s Gardetto’s – anybody else have a deep childhood love for Gardetto’s like myself?

After painting, it was errands to the bank and Target, then home to sadly throw away two of my favorite pairs of ballet flats.  Tears.  They were good to me while they lasted; however, I wasn’t the best to them.  They were worn down, a bit smelly and had seen their days.  Rest in peace my favorite gold and magenta flats.  Rest in peace.

More sad news today…I found out that the possible nanny job in Australia fell through.  Apparently, the doctor I was going to nanny for found another job, so no heading Down Under for me :(.  Guess that means SOMEBODY has to hire me before my temp job runs out.  Any takers?

Now, I am going to finish blogging, finish a freelance writing project due tomorrow then get my buns to bed, hopefully for 5:30am yoga.  I don’t know if it is going to happen (I am one tired girl!), but there is no harm in hoping.

Anybody have any good ideas for a potential career/job/future for moi?  Let me know PLEASE :).

Sleepyhead June 4, 2009

Good morning my dears!

Sorry for the late post – this gal was one sleepyhead last night.  But may I start at the beginning…

Yesterday, yours truly woke her buns up at 5am and made it to 5:30am Vinyasa Flow with yoga diva Deb just in time.  However, I’m not going to lie, it was NOT the best feeling yoga class I’ve had.  I don’t know if it made a difference, but I didn’t have a snack before I went.  The whole class, I was tired, fatigued and super tight.  However, by the end, I did feel better for going and woo – we did some revolved pyramids that I am still feeling this morning!

When I got home from yoga, I devoured a bowl of TJ’s blueberry muesli with skim milk as well as a naner with some good ol’ raw almond butter… 


Mid-morning, I snacked on another naner with raw almond butter (the choices are slim pickins!).  However, I got some great feedback on the PB/AB in a bag trick, so I thought I would show you some of the fun decorating you can do by putting any nut butter in a bag, cutting the tip and piping it out like a frosting bag.  Here I go (I was clearly working REALLY hard at work:))…

The naner/AB combo kept me full for awhile, so I ventured off on a nice 1/2 hour walk at noon and enjoyed some lunch upon my return.  I had some pretzels, black bean salsa (black beans, tomato, onion, green pepper, cumin, garlic powder, drizzle EVOO, lime juice & S+P) as well as a little veggie wrap (leftovers from a work luncheon).


I couldn’t resist a small handful of my faves…


Lunch held me over pretty well, so late afternoon, I munched on some carrots as I finished up work for the day.


After work, a friend and I went apartment hunting!  Yes!  If all goes according to plan, I will hopefully find a super cute apartment here in the next month.  My three basic requirements are, (a) cheap, (b) super cute and (c) in a safe neighborhood.  If you can’t tell, I don’t really have too high of standards, haha!  We did find some good prospects, so I have lots of calling and appointment scheduling on my hands for next week.

Dinner was quick, cheap and oh so delicious: CHIPOTLE!  By the way, I found this awesome Chipotle Nutrition Facts Calculator online – I don’t know how accurate it is, but I figure it’s a better guesstimate than my own.  Here is my burrito bowl concoction:

1/2 cup cilantro rice
mild salsa
fajita veggies


According to Mr. Calculator, that will be about 515 calories, 23 grams of fat (5 grams saturated), 7 grams of fiber and 36 grams of protein.  I will take that!

Honestly, I do not eat a lot of red meat at all.  Normally, my bowl is the exact same as this one minus the steak and plus the black beans.  However, I’ve been feeling a bit lethargic and tired this week, and after some thinking, I think I might be a little low on iron, hence the steak option.  I did feel better afterwards, especially because I also treated myself to this…


Knowing I had a big ol’ game of late beach volleyball coming up, I had a small Mocha Hazelnut Latte made with soy milk.  I had 1/2 the amount of chocolate & syrup, and it was delicious!  My friend got the Turtle Cake for dessert, and I’m not going to lie, I made a little dent in that piece of cake as well :).

Volleyball was uber-fun as always last night, even though we lost all 3 games again.  Our record may be 1-8, but we did make some major teamwork/communication/skill improvements last night.  I wouldn’t be surprised if we made like the best comeback ever to win the whole thing…

This morning, I whipped out the blender to make a green monster.  I’ve been craving these buggers!

Something old, new, borrowed and blue… June 2, 2009

…and I’m not talking about a wedding! 🙂

Today was full of random eats, but the good news is I am slowly but surely eating up all the food I have in the house.  To start off the morning, it was something new



1 cup Oat Dream oat milk
1 banana
1 cup frozen fruit (raspberries, cherries, boysenberries & mango)
2 cups spinach
3 tbsp. berry acai hemp protein powder

Honestly, the addition of the hemp protein made it a little too gritty for my taste.  I loved the mixture of the berries and bananas, but the protein powder muddled that too much.  Next time, no hemp protein.  I’m going to go out and have to splurge on some yummy vanilla brown rice protein powder!  Along with a nice Caribou coffee with 2% milk


Mid-morning, I had a good ol’ banana (one of the only fruits left in the house!).


Lunch took care of my something borrowed… I borrowed some honey whole wheat bread to have a delicious AB+J along with a side salad of spinach, cuc, onion, sunflower seeds, green pepper and Organicville Sesame Goddess Dressing.  I had avocado in the mix, but I took it out because it just did NOT taste right :(.


The afternoon flew by, thanks to the fact that (a) I got to leave work at 4:15pm, (b) I left early to go pick up my hemmed bridesmaid dress for this weekend!  I am soooo excited for the wedding – there are going to be tons of fabulous pictures, and my college bestie Jess is going to make the most gorgeous bride! 

Before I left work, I had a yogurt parfait I got from Caribou Coffee (from the early morning coffee run) – lowfat yogurt, granola, blueberries & strawberries.  It was yum-o!


After I got home (at 5:15pm – woowoo!  That hasn’t happened in forever!), I went for a quick handful of plain popcorn to munch on while dinner was reheating in the microwave freshly cooking :).  This picture x 2 or 3…


Then I devoured something old by immediately heating up the remainder of my Oaty Cakes (recipe courtesy of Ms. Polly) from Sunday morning.  Smeared with about 1 tbsp. almond butter, a drizzle of maple syrup and a hefty handful of blueberries (my something blue!), I totally devoured this delicious stack.


After dinner, I enjoyed almond butter (about 1/2 tbsp.) with half a naner before heading out the door for a nice 6 mile walk…


The long walk was much needed today – my monkey mind was in full force, swinging from limb to limb, thought to thought (props to one of my favorite ladies, Elizabeth Gilbert, for coining the monkey mind phrase in possibly the best book ever, “Eat, Pray, Love”).  I may not have solved world peace or anything, but I came back from the gorgeous walk a whole lot saner.

When I got back, I just had to have the other half


Now, I am pretty pooped, not going to lie.  I’m going to finish up stretching, take a quick shower, get in my comfy jammies and head to bed early.  This girl has 5:30am Vinyasa Flow with Deb to attend to tomorrow morning!
