1/2 cup honey
1/4 cup tahini (sesame seed paste)
1 tsp. salt
1 tsp. vanilla extract
2 cups rolled oats
3/4 cup dark chocolate chips
1/3 cup unsalted sunflower seeds
Canola oil, as needed
Preheat the oven to 350 degrees.
In a large bowl, mix together the honey, tahini, salt and vanilla until well-combined. Add the oats and mix. The mixture will be thick. Once the honey-tahini mixture and oats have come together, add the chocolate chips and sunflower seeds.
Rub the oil on a 1 tablespoon measuring spoon. Spoon 1 tbsp. of the cookie mixture onto cookie sheet. Bake for 10 to 12 minutes, or until slightly browned, and enjoy!
