Monster Cookie Pancakes July 10, 2009

1 cup rolled oats
1/2 cup plain or vanilla yogurt
1/4 cup natural peanut butter
1/4 cup canola oil
1/2 cup whole wheat flour
1/2 cup milk of your choice
1 egg
1 tsp. vanilla extract
1 tbsp. baking powder
1 tsp. cinnamon
2 tbsp. brown sugar
1/4 cup raisins
1/4 cup chocolate chips
1/4 cup plain M&Ms

Mix the oats and yogurt together.  Add in the peanut butter, oil, flour and milk until well-combined.  Mix in the egg, vanilla, powder, cinnamon and sugar.  Lastly, fold in the raisins, chips and M&Ms.

Spray a skillet or large saucepan with nonstick cooking spray.  Over low to medium heat, scoop 1/6 of the batter (for large pancakes) or 1/12 of the batter (for small pancakes) for 3 to 5 minutes, or until golden brown.  Flip the pancake over and cook the other side for another 3 to 5 minutes, or until golden brown.

Serve with maple syrup, more peanut butter, a garnish of crushed walnuts – the toppings are endless!

Makes 6 large pancakes or 12 small pancakes
