1 cup all-purpose white flour
1 cup whole wheat flour
1/2 cup oatmeal
1/4 cup evaporated cane juice crystals or turbinado sugar
3/4 tsp. baking soda
3/4 tsp. baking powder
1/4 tsp. sea salt
8 tbsp. chilled butter
1 cup dried berry mix (cranberries, blueberries, cherries & raisins)
3/4 cup nonfat or soymilk (you could also use almond or rice milk too)
Preheat the oven to 375 degrees F.
In a medium bowl, combine all the dry ingredients. Then, cut the chilled butter into the dry ingredients until the mixture is crumbly. Add the dried berries and milk, mixing until the dough forms a ball.
On a lightly floured surface, pat the dough into a circle about 1 1/2″ thick. Cut the dough into 8 wedges. If desired, sprinkle the tops of the scones with extra cane juice crystals or sugar. Bake in the oven for about 25 minutes, or until lightly brown. Enjoy!
