Alright kids, hold onto your britches because we got a big one coming your way! Since there has been no “This and That” post this week, I am going to weave it into today’s.  So please, follow along (if you can).

First and foremost, I need to thank y’all for your “get out of a funk” suggestions yesterday.  Even though I’m not feeling completely out of the hunches yet, I just got back from a 3 mile run + yoga and am feeling lots better. Amazing what a lil’ endorphin rush can do, no?

Brekkie went unphotographed because I was inhaling my Barbara’s Vanilla Almond Shredded Oatmeal + skim milk plus a naner + AB as I was walking out the door.  Funny thing is, I wasn’t late for work.

Listen up peeps, this is how we do,
Delish dot com has some sammie ideas too.
I know y’all need some inspiration,
so pack up your lunch boxes for a meal celebration!

I was def a lil’ funkalicious throughout the day today, including splaying myself on the floor in our office.  Suddenly, our co-worker came barging in with a metal jousting helmet on and scared the bejeezus out of all of us.  Yes, a guy that works down the hall is a legit medieval times jouster.  No lie.

Lunchie was leftovers from last night’s Veggie Thai Red Curry

CIMG4806

mmmm, mmmm good!

and some bluebs just for good measure

and some bluebs just for good measure

Miss Special K only treats us kind,
encouraging us to share yourself and mind.
Head on over to swap some goodies,
and share the love with all your fellow foodies!

After the red curry, I think the spiciness upset my tum-tum a bit so I dug into my snack a bit early…

CIMG4808

Chocolate Brownie PURE Bar (smaller than a business card - fo reals)

I know, I really need to get over the size of these bars.  However, the flavor? AMAZING.

My snacky lil’ girl with the fabulous face,
is VegTastic and leaving her fave place.
She giving away some uber-awesome schtuff,
so head on over because Kailey’s off the cuff!

Later in the afternoon, I let my funk get the best of me, and I dived (or dove?) into a handful of these…

CIMG4809

Milk Duds...my fave candy eva.

A handful of Raisinets might have also entered my mouth. And I’ve been reminded, some sour watermelon slices.

My new fave blog has the biggest prize,
Jessie’s got a Vita-Mix – ain’t no lie.
Enter now for this magic machine,
smoothies, sauces and goods – you will gleen!

After gorging myself on sugar and on the verge of a fructose coma, I finished up the day and walked my buns home. Then I threw on my running gear, ran 1.5 miles to the gym, sweated out with a 75 minute yoga sesh (FULL of downward dogs + chaturangas = sore arms) and ran 1 mile home.

Then I devoured the most delicious bowl of yog eva!

CIMG4813

Plain Chobani, mushed naner, buttloads of cinnamon, Vanilla Almond squares + raw AB

After dindin, I had a phone date with our fave Brit Angharad and now I gots to shower, clean this place up and hit the hay.

My bloggy changes are comin’ soon,
so don’t go leaving to rocket to the moon.
I promise the same stuff with a bit o’ sass,
peace out and much love from this g-ma lass!

Whoooooooo whooooooooo!

Weird Wednesday August 26, 2009

So if yesterday’s word of the day was “iffy,” today’s is “weird.”

I don’t know what’s going on peeps – has the sinus infection gone to my brain and is secretly screwing with the world? Today was plain and simply…weird. I felt weird, feel weird and work today, well…we acted like total weird-os (including a rendition of the Cha-Cha Slide in our office a.k.a. the classic wedding dance song).

Brekkie today was a new cereal I bought. Barbara (creator of our fave PB Puffins) has these Vanilla Almond Shredded Oat Squares and well, they tasted kinda weird.  Not bad, just weird.

CIMG4796

Barbara's Vanilla Almond Shredded Oats, skim milk + naner

Sarah’s Breakfast Challenge? Check.

Thursday: Oikos Strawberry Greek Yogurt + strawberries & AB+J sammie

Friday: Overnight Oats

Saturday: Plain bagel + bit o’ buttah

Sunday: Classic Bowl of Hot Oatmeal

Monday: Surprisingly Delicious Savory Oats

Tuesday: Breakfast Cookie a la Fitnessista

Shoutout to Sarah for coming up with a challenge to make us all step outside the box (or bowl, whichever you prefer). The biggest surprise? The savory oats – I was totes scared to try them, but they were delish!

Snackage included an Apple Cinnamon PURE Bar (my fave flav so far) while lunch included more wrappage…

CIMG4800

Hummus Avocado Ezekiel Wrap, kohlrabi + applesauce

A couple of you dudes asked what the heck kohlrabi is. Well, technically our friend kohlrabi is in the cabbage family and looks something like this…

Jellyfish? Sprouted brain? Paper weight?

Jellyfish? Sprouted brain? Paper weight?

When you trim off the tops and outside skin, the inside looks like somewhat like a radish – white, translucent and uber-crunchy.  It’s the perfect (weird) snack food!

Mid-afternoon snack was the usual, plus a DC to try and get me out of this funk.  Yeah, the DC didn’t work.  I only felt nauseous after drinking it.

CIMG4801

Pomegranate Chobs + strawberries (and Diet Coke)

On the way homesky from worksky, I mapped out my weekly running sched.  Since I will be back in Minnesota this weekend, I think I am going to change my long 18 mile run (eeeeek, 18 friggin’ miles!) to Friday so I can have all day on Saturday to go to the MN State Fair (2nd largest in the country) and chow down on my top 3 fair foods: cheese curds, corn on the cob and Sweet Martha’s Chocolate Chip Cookies.

Yeah, it’s definitely going to be a greasefest, in which I will love every minute.

So, back to the story, I needed to run 9 miles tonight but instead, I am going to run 4.  That’s if I can get my butt out the door because this weirdness has me all up in a funk.  I know running will help, but tell that to my body who might need to be shoved, kicked and thrown out the door for encouragement.

When I got home, I should have just gone right away and ran but instead, I started dinner.  Shoutout to my girl April – the purple pepper is for you!

CIMG4803

cut-up veggies ready for some red curry love

CIMG4804

Veggie Red Thai Curry over brown rice

Ooh, before I forget, Michelle asked if there was a reason I bought expeller-pressed canola oil instead of just plain ol’ canola.  Always a reason, and here it is: expeller-pressed means there are no chemicals used in extraction.  This often results in a lower percentage of oil than using other methods requiring chemicals (which is why many companies DON’T do it).

Enough of my procrastinating and complaining right?  Weird is no excuse to skip marathon training!

Help! How do YOU get out of a funk? Usually I work out, but you know how that is going right now…

Happy Monday my friends!

I literally just got back from Madison a couple hours ago after 9 HOURS of driving in the past 24 hours.  Ugh.  I hate driving.  I would happily give up driving and stare out the window in la-la land the rest of my life if I could.  Luckily, I made it home just in time for The Bach finale!

In short, she picked ED!  Yay for his green mankini him!

Not going to lie, as much as I like cute, charming Reid, he looked like a TOTAL TOOL coming back to propose to her.  Anybody else agree with me?  Yeah, I know ya do.  What am I going to do on Monday nights without my Bach fix?  Hmmmm….any ideas for a new trashy TV show hobby?

Alright, here are the eats for the day.  Short and sweet (TWSS)…

CIMG4452

blackberry yog + blackberries + strawbs + Dylan's Chia Granola (my new fave!) + handful walnut/almond mix

post-makeover: A HOT MESS

car snack: ate 1/2 pre-interview

car snack: ate 1/2 pre-interview

The interview went well – I think I definitely still would pick my job offer over this position, but it was awesome to get more interview experience, make connections, yadda yadda…you know, the usual grown-up job drill.

CIMG4456

other 1/2 post interview...a bit small for 370 kcals, no?

For lunch, I met up with my old boss and a couple of co-workers from a pubic relations internship I had in college.  It was sooo good to catch up with them!  They have been so supportive, helpful and fabulous (not mention, hook me up with some freelance writing gigs!).  We hit up Sa Bai Thong, a fab Thai restaurant in Madison for some YUMMY lunch eats.

I had the Squash Red Curry with rice…it was amazing.  Just trust me :).

CIMG4457

car snacks for the 4-hr. drive back to MN

Subway...a classic road trip dinner

Subway...a classic road trip dinner

I got my usual…veggie sub on toasted honey oat with pepperjack cheese (a la spicy Jess).  Hit the spot.

Then I came home, unpacked my shiz, put on The Bachelorette, caught up on blogs and am now watching Flight of the Conchords. They are genius.  For reals.  Watch now.

Now, this gal is off to bed – lots more craziness, blog reading and major life decis to make this week!  I am still determined to make it to yoga and relax this week – my two weekly goals.

To help me update on all your lives, what are you looking forward to most this week?  Since I’m uber-indecisive, I have two – (1) Volleyball playoffs start Wednesday, and (2) hopefully I will have a brand new job by the end of the week!

It’s a Matter of Equations July 22, 2009

For the record, yours truly has always been a writing and English kind of gal.  Math and me, although acquaintances throughout grades K-12, could never quite solidify a close relationship.  Until now.

Apparently, it’s taken a love of healthy yummy food to reunite math and I in a well…loving, healthy relationship.  The key to our happiness?  Equations, of course!

1/3 cup oat bran + 1 (6-oz.) container Stonyfield French Vanilla yogurt + 1/3 cup skim milk +
2 spoonfuls unsweetened shredded coconut + 1/2 mashed naner
——————————————————————————————-
1/2 cup strawbs + spoonful raw almond buttah

breakfast heaven

CIMG4344

Berrynananut Overnight Oat Bran

Without equations, how would I ever concoct the perfect bowl of Overnight Oat Bran (based off of Miss Snackface’s recipe)?  Hmmmm…I really need to reconsider math.  He has single-handedly revolutionalized the morning oatmeal industry and made Kath oat-famous ;).

whole wheat tortilla
1/2 mashed avocado
glob o’ pine nut hummus
handful spinach

Mrs. May’s Almond Clusters

scrumpdiddlyumptious lunch

Most of all, I would probably coming crashing down on my keyboard (with key indentations on my face) in the afternoons if it wasn’t for my yogurt-mixing abilities…courtesy of Mr. Math (obv).

1 container any type of yogurt + 1 cup berries (+/- 1/4 cup granola (optional)) = perfection

CIMG4349

fave afternoon schnack

The one place me and math differ?  M&M’s.  You can’t count them.  You just need to eat them.  Lots of them.  Preferably of the peanut or peanut butter variety.

M&M handful (x2) + chickety chai green tea = afternoon munchie perfection.

my fave are the yellows...probably b/c they are the worst artificial coloring

M&M handful (x2 or more) + 1 cup of chickety chai green tea
= a serious addiction

The best math however, involves both inanimate and animate objects.  In my case, that would be food + friends.  Probably one of the real tried and true equations there is out there.  Sorry Einstein….e=mc^2 just doesn’t cut it.

Roat Osha Thai food + long-time friends + a night of beach volleyball = a good night

Chicken Pad Thai

These three dishes – split between the three of us ladies – was the perfect dinner (plus a nice lil’ 2nd helping of each).  It was also perfect pre-volleyball fuel for our last regular season game…which we WON!  Hallelujah…we do actually have some talent!

My final math equation:

X = breakfast
Y = all other food
Z = stress
a = friends
b = a job interview
c = handfuls of peanut M&Ms
d = going to bed

(X +3Y) x 3c
————————-
3a – 1/2Z + (bd)
=
good times

Take that Sir Isaac Newton.

Don’t forget to check out the Twinkie Challenge!  There will be a special, customized prize for the winner!  You have until 8am CST tomorrow – get on that people!

She’s Like the Wind July 9, 2009

Or rather, time is like the wind because this day absolutely positivefrickinlutely flew by.  But I do still love a good “Dirty Dancing” reference.  Nobody puts Baby in the corner :).

Breakfast started out fantastically, thanks to the lovely Sarah from Running to Slow Things Down.  You see, this genius of a gal took the standard breakfast cookie recipe and turned it into Breakfast Drops!  (BTW – I can totally see why she didn’t call them Breakfast Balls – there is just something inherently wrong with that ;)).  Mine were of the ol’ strawberry + coconut variety, and I loved every last drop!

CIMG4139

Like I said, the morning flew by and before I knew it – bam! – 11:30am and my tummy was rumbling!  Good thing for another killer sammie (same as yesterday) – 2 sliced toasted Ezek, 1/2 smashed avocado, cherry tomatoes, spinach + yellow mustard.  Along with two clementines, it was a good, satisfying lunch.

CIMG4142

CIMG4143

Work was supa busy today!  I would look at the clock and suddenly two hours had flown by.  That like never happens.  Unfortunately, I didn’t get out on a lunch walk today but instead worked on a freelance writing project.  Sometimes a girl has got to make sacrifices!

Luckily, my snack made up for the missed walk.  You know how I haven’t exactly been diggin’ the Zoe bars?  Well, I take that back because this Chocolate Delight bar was well – delightful!  It didn’t have any of the funny after tastes the peanut butter and peanut butter chocolate ones did and was perfectly chocolatey.  Nice work Zoe!

CIMG4144

Since my 9 mile run was planned for after work, I had snacky #2 around 3:30pm as pre-run fuel.  The standard combo: Stonyfield vanilla + blueberries + Zoe’s Cranberry Currant granola.  I think my favorite way to eat Zoe granola is as a topper in yogurt – it gives the whole thing the perfect sweet crunch!

CIMG4147

After work, I’m not going to lie – I was dreading the 9 mile run.  However, I tried not to think about it.  Instead, I got dressed, laced up the tennies and headed out the door (before I could rationalize not going, because if you give me long enough – I can rationalize ANYTHING).  The first mile was a lil’ rough but I fell into a groove after that.  However, it got raging hot out, my yogurt combo wasn’t sitting too well, and in the end, I had to stop at just over 5 miles.  I walked for another 1/2 mile or so, then guzzled this baby:

CIMG4148

The Vitamin Water 10 was good – I am still a bit skeptical just how “naturally sweetened” it is.  They use rebiana (stevia extract) along with some others I am not sure about.  Anybody heard of erythritol or crystalline fructose?

I came home a sweaty beast and made this colorful concoction:

CIMG4152

Tempeh Thai Red Curry!  Totally delish!  I made dinner for myself, my sissy and her boyfriend and it got rave reviews all around.  My sister – who FYI has a sensitive stomach, doesn’t like anything “weird” or “organic” and is not a spice monster – even ate it.  You don’t know how big of a day this is for me!  The mix included:

brown rice
TJ’s Thai Red Curry Sauce
bean sprouts
onion
tomato
carrots
spinach
1 pkg. three grain organic tempeh

And what’s dinner without somethin’ sweet?

CIMG4154

That would be 1/2 Monster Cookie to be exact.

Soooo…this gal will be running her 9 miles on Sunday instead.  Ugh, lil’ upset over the run, but I think I might have the ultimate pancake concoction tomorrow morning that is going to blow Miss Chocolate-Covered Katie’s pancake contest out of the water!  Stay tuned tomorrow for all the monster (hint, hint!) goodness ;).

Shower, recipe research, grocery store, freelance writing, possible SYTYCD results show and off to bed.  Woowoo for the weekend – tomorrow is Friday!

Whatcha all up to this weekend?  I’m heading off to my friend’s cabin – holllllaaaa!

Just Call Me Martha July 3, 2009

…or VeggieGirl, whichever you prefer :).

After work, I skedaddled home on a mission: FREEDOM BAKING BONANZA 2009.  Since I finally made to the decision to go visit Barbie, Ken and the family in Wisconsin this weekend, I knew I had to bring some mayjuh treats for everyone to enjoy.  First up, a blondie bananza using Miss VeggieGirl Genius’s basic recipe.  I present…Berry Oatmeal Almond Blondies!

CIMG3952

Then, my personal fave, Almond Joy Blondies (w/ dark chocolate chips, shredded coconut + slivered almonds)!

CIMG3956

Then, I figured it was time to maybe come up with something on my own for a change.  In Wisconsin, where the fam lives, they have a stand at the farmer’s market that sells these amazing cookies.  I’ve been working on perfecting a recipe of my own based off of them, and gosh darn it, I think I finally got it!  I now present to you…Tahini Cookies!

CIMG3967

These suckers are so good!  They are the perfect balance of sweet + salty and come in at about 120 calories (give or take).

While all the treats were a’bakin, I used a glorious bag of homegrown spinach & greens Ellie, one of my co-workers, brought me from her garden to  make a big ol’ salad.  It tasted so good and fresh!

2 big handfuls spinach/greens
1 zucchini, sliced
1/4 avocado, diced
1/4 cup shredded carrots
1 tbsp. sunflower seeds
1/4 cup tomato, diced
Hidden Valley Light Ranch (the best!)

CIMG3958

Even though I sampled bites of batter in the cooking process, I knew I just had to make myself a sampler platter of all the goodies

CIMG3964

Delish.  Delish.  And delish.  The only slight problem was with the berry blondies – I think the water content of all the fresh berries was a bit much for the dough.  In other words, the middle of the batch were pretty doughy.  But still delicious :).

After baking, I raced to downtown, picked my one of my best friend Ashley’s NEW fiancee and went to visit her at the bar she works at in Minneapolis.  Maxx and I had so much fun, and the bar was pretty dead, so we got to talk with our gal Ash most of the night.  Of course, being the stellar lady she is, she hooked us up with free eats and free drinks – dangerous!  I sipped on some new mixed drink they had (maybe drank 1/4 of it) then munched on some bar food – a bit of nachos, some tater tots and a bit of popcorn.  Honestly, I was so full by the end of the night, I was ready to have a little food baby.

However, we had so much fun, and I must have crashed pretty hard because I slept in until almost 10am this morning!  Literally dudes, I haven’t done that in YEARS.  When I woke up, I wasn’t very hungry (due to the above mentioned bar food) so I noshed on a fresh, juicy mango.

CIMG3969

Then I ran a couple errands, including an unplanned trip to Caribou for some joe + 2% milk…

CIMG3970

Who am I kidding?  That was totally planned.

When I got home, I mixed myself up a nice bowl of fresh berries because I still wasn’t that hungry.  How absolutely gorgeous are berries to photograph?  (Warning:  I got really berry happy this morn!)

CIMG3971

CIMG3973

CIMG3974

Then, this gal got cleaning crazy!  I scrubbed the kitchen, cleaning the living room, watered the plants, wiped down the bathrooms, reorganized cupboards and hauled ace in my bedroom.  Again, just call me Martha.

Since I cleaned out my pantry area, I thought y’all might be interested in a look to see what staples I currently have on-hand.  Here is the spread:

CIMG3975

From left to right…

  • Tahini
  • Pomegranate Acai Hemp Protein powder
  • Madras curry powder
  • A tower of brown rice, oat bran + coconut
  • Honey
  • Wheat bran
  • Ground flaxseed
  • Garam masala
  • Peanut butter
  • Evaporated cane juice (aka sugar)
  • Molasses
  • Yummy Earth organic suckers

At around 12:30-ish, I finally got tummy-rumbling hungry.  I opened the fridge and whipped out the last leftovers of my Thai Tempeh Curry.  Still delicious!

CIMG3977

Classy bowl, huh?  Plus a Yummy Earth sucker in pomegranate for after…

CIMG3978

Now, I gots to finish up blogging, run a bazillion errands, finish packing up for the trip cross the border and meet up with Ashley + Maxx (the newly-engaged ones) later for a quick bite before hitting the road home!

I promise more fun from Wisconsin – trust me, my family is uber-weird.  There is good stuff coming ahead.  Plus, I need to get some pictures with Ash & Maxx so you can see just how in love and happy these kids are.  Also, I need to go catch-up on blog reading – so much to do, so little time!

See you later gators!

Computer Glazed July 1, 2009

You know when you sit behind a computer for way too long – everything starts getting fuzzy, you are glazed over like a big ol’ bakery doughnut and feel completely spaced out?  Well, that was me today :).  I had a total computer-based project I was doing all day, and I walked out of work like a total zombie.

Luckily, it was truly of breakfast of champions to start the day – toasted Ezekiel bread layered with peanut butter, smooshed naner and cinnamon.  Man, I LOVE me my cinnamon!

CIMG3927

The haziness and glazed over eyes (doesn’t the word glazed just totally make you WANT a doughnut?  Seriously.) slowly but surely increased until I gave myself a break around 11am to eat Stonyfield Organic Blueberry Yogurt. Since I had another lunch date today, I just needed something small to tide me over a bit longer.  I love the color of blueberry yogurt – it’s one of those weird small things that just makes me happy :).

CIMG3930

For lunchie, I met up with my hilarious friend Brad for some yummy eats at Cheeky Monkey Deli in St. Paul.  If you don’t remember, it’s where I devoured the famous Nutella + Banana Sandwich not so long ago.  The Cheeky Monkey is totally adorable – it is healthy, sources from local ingredients and has cucumber water.  Yes, I said cucumber water.  It was practically like being in a spa ;).

Today, I tried something new and went for the Roasted Veggie + Hummus sandwich on ciabatta, along with a side of pickles and I stole some of Brad’s yummy spiced potato chips.  Divine food, divine company, divine time!

CIMG3931

The afternoon zoomed by, thanks in part to a long lunch and a lovely snack.  Lunch was totes filling, but I knew I when I got home I needed to hammer out 5 miles so I did a little pre-fueling.  If I come home hungry, you can forget about running.  Soooo…I prevented the hunger with my favorite Lara and a cup of lemon green tea:

CIMG3932

When I got home, I entered the kitchen to the sweet smell of Megan throwing a baking party.  Dangerous!  She’s getting prepared for her 4th of July fiesta, which meant the kitchen was filled with chocolate Special K bars, rice krispie bars, muffins and other goodies.  Ummm..yum!  I got dressed and ran out the door to bang out my 5 miles, which took me about an hour (including walking an extra mile afterwards).

Then when I got home, I grabbed a whole wheat mini cherry chocolate muffin

CIMG3933

Watch out Martha Stewart!  Good work on the baked delights Meggy Moo!

I stretched, drank lots of water and watched the new TV show Dance Your Ass Off  prepared to make dinner.  On the menu tonight….some Thai food goodness!  Every week, I usually get nostalgic for my travels abroad and crave Thai food (even though, let’s be real, mine doesn’t even compare to the food I ate there).  Here is a picture of me at Wat Phra Kaew, which is on the grounds of the great Grand Palace in Bangkok…

CIMG3913

Don’t I look simply fabulous in my gecko-printed skirt?

One of my favorite dishes in Thailand was a good Thai curry.  So, I bought a premade Thai Kitchen yellow curry simmer sauce, mixed it with veggies and tempeh, then served it over brown rice for a little Yellow Tempeh Thai Curry.  Honestly, the yellow curry simmer sauce wasn’t the best, but it was still good nonetheless.

CIMG3936

Then it was an after dinner cocktail to further hydrate…

10 oz. sparkling water
4 strawberries, pureed
1 tsp. lime juice
1 tsp. sugar

CIMG3937

Looks gross & chunky but tasted ah-may-zing!  Probably would have tasted better with a splash of…I can’t quite put my finger on it…

Sorry dudes and dudettes, but this gal has got to run – I’ve gots a 10:15pm beach volleyball game coming my way tonight, which means I need to slam a Diet Coke take a nap to keep me up until midnight.  Let’s pray that we don’t lose all 3 games again tonight!  Happy (for real) humpday – 4th of July fun is just around the corner!

What are everyone’s plans for the 4th?  I might stick around MN or head to hang out with Barbie & Ken and the fam this weekend – haven’t decided yet :).
