Running Well, Wedding Bells + Internet Hell August 16, 2009

Yep, that pretty much sums up my weekend.

Let’s start with the good stuff – I got up at 7am bright n’ early on Saturday morning and ate a nice carb-heavy pre-run meal consisting of a 1/2 cup Special K with 1/2 cup skim milk and a chocolate chip granola bar.  There is no better running fuel than pure white carbs.

Then, yours truly did what she has NEVER done before – run 16 miles!

The first 9 miles went well despite the Minnesota heat and humidity.  I made sure to make frequent water stops (also stopping to splash water on my head to cool down) before returning back to my friend Ashley’s where I popped 3 Clif Black Cherry Shot Bloks and some Diet Cherry Pepsi (don’t judge).  Then Ashley headed out with me to finish the last 7 miles, and my other friend Megan joined us for the last 3 miles.  My friends are seriously the best :).

In the end? The run went AWESOME.  I finished in my marathon pace of just under 10:00 minutes/mile, equaling about 2 hours and 40 minutes.  I seriously think I could have gone even further. It was that kind of glorious running day.

Indian buffet of love from Whole Foods...with a Cilantro Chutney Samosa!

Seriously…if I could marry Indian food I would.  Shhhhh, don’t tell McMac I am cheating on him ;).

After lunchie, it was off to IKEA –  ummm, holy anxiety!  Soooo many people, soooo many things to look at and tooooo little time.  Luckily, I had my trusted Meggy Moo in tow.  If this isn’t a friend, I don’t know what is:

Then, I gussied myself up and headed off to my girl Charlotte’s wedding!  Charlotte and I studied abroad together in college in London, and we’ve pretty much been soulmates ever since.  LOVE that girl.  I also got to see Brittany (who also studied abroad with us) for the first time in years.  LOVE that girl too.

Yeah, that’s right.  My girl Char had a plethora of CHEESECAKES at her wedding instead of regular ol’ wedding cake.  That is reason #4,276 that we are friends.  Brittho and I may have split an additional piece of Key Lime Cheesecake.  Just sayin…

Did I mention Charlotte also had a photo booth AND late-night pizza?  Reasons #3,231 and #6,121,989 we are friends.

When I got home, I crashed harder than Lindsey Lohan’s career.

After almost 10 hours of glorious sleep, I woke up to coffee and a lovely chat with Ashley.  Then, right as I started contemplating eating Ash’s carpet, it was 10:30am and time for me to meet another fabulous lady you all know – Ms. Angharad!

We met at the Uptown Diner…looks like a total dive from the outside, but inside you will find such fabulous delicacies such as this…

After brekkie, I skedaddled back on the road (wasn’t I just driving?) back to Madison.  Five LONG hours later, I arrived safely.  After successful shopping trip #2 at the co-op (including a free coupon for a French Meadow bread product and a bottle of organic agave syrup – score!), I made it back to my apartment to find the Internet still not working.

WTF?!?!?!?!

I can’t handle this.  ATT is apparently coming on Tuesday to fix it, but that means another two days of paying for coffee at the cute coffeeshop for free Wi-Fi.  I guess there could be worse thangs…

After getting really frustrated and angry speaking calmly with the Internet peeps, I needed a snackie.  Enter in perhaps, my other new love (sorry McMac AND Indian food :()

I just scrolled through the post and realized it’s practically a marathon long, which by the way, the Twin Cities Marathon is in T-minus 49 days.  Eeeeeeek!

Bloggy thangs I still have planned (even if they are taking uber-longer than I expected):

  • Marathon training post
  • Holly Investigates… post (It’s been 75% done for like three weeks now!)
  • Two exciting announcements
  • Updates

Hang in there my children…mama WILL eventually get there!

Now, I am downing the rest of my drank and gettin’ down to read some bloggy love!  Say a prayer for my Internet por favor and have a relaxing Sunday night!

Highlight of the weekend?  Put it out there peeps!  Mine was probably the amazing run on Saturday morning and the pictures Char, Britt and I took in the photo booth.  They were epic.

Fun Lunch Friday August 15, 2009

Good morning dudes…I don’t think I’ve ever blogged this late.  Being a g’ma, it’s often hard enough just to find me up past midnight :).

Brekkie was especially delish this morning thanks to the tag team of champions: yogurt mess + Heart Thrive:

CIMG4638

nonfat plain yogurt + ground flaxseed + shredded coconut + strawberries + dollop o' raspberry jam (straight-up Smuckers - the good stuff)

Cranberry Heart Thrive Vegan Energy Bar

Cranberry Heart Thrive Vegan Energy Bar

Sorry Heart Thrive peeps…the Cranberry is BY FAR my least favorite.

However, my snack more than made up for it.  A homemade concoction of Banana Nut Cheerios + sunflower seeds a.k.a the ying (sweet) and the yang (salty).  Makes for maximum satisfaction.

I can’t believe I have totally forgotten to tell you how WELL my first week at the new job went.  My boss is fantastic.  My co-workers are incredibly helpful and funny.  And there is minimal scanning involved in the job.  Give it up!

Yesterday, we instituted Three Question Thursday at work a la Kristin, and today we proclaimed Fridays as “Fun Lunch Friday!”  Where is the most obviously funnest place to go ever?  Chipotle, obv!

CIMG4641

burrito bol: rice, black beans, mild salsa, fajita veggies, truckload of guac and lettuce

Shoutout to my homegirl Alison who recently had her first Chipotle and obv, loved it!

Friday flew by and before I knew it, I was done with my first week of work.  Woowoo!  Then, I skedaddled on to my new flat (yes, I want to be British so I am calling it “my flat”) to whip up a quick dindin before hitting the road BACK across the border to Minnesota for a wedding.

CIMG4644

black bean burger kale wrap

This bugger was delish!  Also quite easy to make: I sauteed lots of kale in EVOO + garlic (ends up tasting a lot like Kath’s “Kale Chips” – which if you haven’t tried, you must!) then stufffed it in an Ezekiel tortilla and topped with a Morningstar Spicy Black Bean Burger. Voila!  Dinner is served.

Not without some frozen applesauce for dessert of course…

CIMG4646

zucchini slices + almond buttah

I had maybe 1/2 the zucchini and 2-3 tbsp. of the AB…about?

After I finally arrived back in the Minneapolis, I met up with my besties for some drinks at the bar where our other bestie works.  Quite vague details, I know.  However, I had a slight headache and was uber-tired from the drive (anybody else MORE tired from driving than actually working out and doing something active?), so I munched on some bar popcorn (a couple cups?) and just chatted.  Drinks before a 16-mile run doesn’t sound like a good idea to me.

Tomorrow’s agenda: run, shower, IKEA run and then wedding time!  Woowoo!

Good night y’all and again, it’s good to be back 🙂

Eat, Shop, Run + Wed, Part 1 July 26, 2009

Here we go, here we go, kick it!

Dudes….get ready for a serious two-part MONSTER of a weekend post!

***FRIDAY***

Last time I left you all, the weekend had just begun!  I raced out of work and straight home to take care of the beast (1st priority) and then make some dindin (2nd priority).  The beast?  Check.  Dinner? Cheeccckkkk.

Verdict? Delish, as always.

Verdict? Delish, as always.

After dinner, I met up with my friend Meggy Moo for some Friday night shopping.  Does anybody else LOVE going to the mall on Friday nights?  Less crowds, more relaxed and better deals!  We hit up the Nordstrom’s Anniversary Sale, but naturally, even though so many things were on sale, they were still way too expensive for moi.  Ugh.

However, we did hit up Nordstrom’s Rack (like an outlet version of Nordstrom’s), where we found KILLER deals.  Two pairs of Hue tights in black and brown for $5 and a Trina Turk orange-striped cardigan for $40.  A girl just can’t resist a good bargain…

***SATURDAY***

I fell asleep Friday night knowing it was the big 1-3 mile run in the morn.  I got up and carb-loaded like a champ with about 7 cups of Banana Nut Cheerios and 1/2 cup skim milk (all I had left)…

Maybe not 7 cups...but definitely 2 or 3...

My sister Alli, who is also running the marathon, came up to my neck of the woods to run with me.  What a difference!  Seriously, does anyone else find it way uber-easier to run with somebody else than just by themselves?  Mama Everythingtarian ran the first 6 miles with us, then went to meet up with my dad and younger sister while we completed the 13.  We walked warmed-up for the first 1/2 mile, ran 12 around the lakes, then took her easy and walked the last 1/2 mile.  Barbie, Ken and sissy #3 were waiting for us with water and bagels when we were done – hallelujah, I love you family!

After blasting through the awesome run, which took us about 2 hours (roughly 10 minute miles), I got back to la casa de mi prima and showered up to meet Angharad for lunch at the fabulous, organic, seasonal and locally-grown Birchwood Cafe!

Seriously, the is the 2nd time me and Miss Eating for England have met up, and it gets creepier and creepier each time with the number of things we have in common.  From traveling to jobs to loving Cher’s “Believe,” the blog heavens clearly knew we were meant to be friends.  Also, she had just run a 10K so we talked LOTS of running over a Green Goddess Salad for me…

CIMG4376

locally-grown lettuce, English hollow aged cheddar, sunflower seeds, carrots, snap peas, cucumbers, kohlrabi, scallion + green goddess dressing

That hunk o’ bread with a pat of butter on the side was pretty dang good too.  Angharad had the Cilantro Lime-Smoked Turkey Salad Sandwich, which also looks divine!  I totes forgot to take a pic, so head over to her blog and check that outtttt!

After lunch, it was wedding time!

Needless to say, it was an extremely fun night, and this gal was pooped.  I fell asleep on my sister’s shoulder on the car ride home, nuff’ said.

Stay tuned for Parte Numero Dos later tonight….now I have to skedaddle off to a wedding shower!  Hope you are all having a FABULOUSLY FUN WEEKEND – can’t wait to read and hear about what you all are up to!

Happy Sunday :).

All Cranked Up July 15, 2009

My neck that is.

Ugh, I woke up this morning, and literally YELPED in pain trying to move my head.  No morning run, no morning yoga, no morning sleep.  Holly is not happy when her AM starts like this.

However, she does perk up significantly with breakfasts like this…

CIMG4246

PB+B on toasted Ezek...I needed some cheering up.

Since I arrived at work at bright and early time of 7am (figuring, I would make myself useful since I couldn’t sleep), I most def needed a morning snack – the hangry beast in me was roaring by 10am.

CIMG4247

Zoe Foods Heavenly Apple Bar with AB frosting

I polished off the remaining AB by squeezing it from its pipe (a.k.a Ziploc baggie) and literally SQUEALED out loud again in pain.  First of numerous neck spasms of the day.  What up with dat?

Did I sleep on it wrong?  Have I been keeping poor posture at work all day?  Do I have some exotic disease that is slowly eating away at my muscles and causing my nerves to pinch which will eventually end up with me having a forever frozen neck?  Hmmmmm…

A parfait a la K

CIMG4248

Vanilla yogurt, Banana Nut Cheerios, sprinkle o' flax + a mountain of blueberry love.

And a TJ”s Fiberful Fruit Leather in Apricot from my mom, who I got to meet for lunch along with sissy #3.  However, I didn’t eat with them (already had 1/2 of lunch ^^^^) and was pretty mad about that, because we ended up meeting at Chipotle.  I totes bet that would have made my neck feel 10x better.

CIMG4249

Oops...where did all the raisins go?

A salad for afternoon snack? YEPPERS!

After a bit of a slow day of worksky, I was soooo excited to meet our bloggy gal Angharad from Eating for England out at one of my fave healthy joints – Good Earth Cafe!  Now, after meeting her, I can tell you that this gal is just as lovely, funny and fabulously British as she seems on her blog!  We literally chatted for 2 1/2 hours about anything and everything over some delicious, droolworthy and delectable food…such a jolly good time!

Carrot Cake (nuff' said)

And that lil’ lady even brought me a sample of the Kashi Mocha Almond Bar, which I am insanely anxious to try at work tomorrow!  We’ve definitely already planned meet-up #2 :).

Now, this gal has got work to  do:  clean, pack for Chicago (yep, didn’t do that last night!) and get all my ish together before I leave for CHI-TOWN tomorrow after work.  Woowoo!  I didn’t get my run in this morning, but I am hoping if my neck feels better tomorrow morning – I will run 3 or 6 miles (errr…haven’t decided) in the AM.  We’ll see what happens – this gal has got to get back on marathon schedule…and fast!
