There are certain places in a gal’s life that no matter where she is in the world, feel like home.

My “homey” places are: (1) Target (obv) and (2) farmer’s markets. ¬†I could be in the middle of Ulan Bator, Mongolia but hell, if there’s a Target or farmer’s market to be had, it would feel just like good ol’ Minnesota. ¬†Since I hit up Tarjay last night, naturally this morning was the perfect time for the Dane County Farmer’s Market.

This morn was rough.  Real rough.

You ever have those mornings where you look in the mirror and are like, whoa – what the hell beat me up last night? ¬†I’m all about self-empowerment and encouragement peeps, but sometimes, there is no saving face (literally) no matter how many compliments you give yourself.

Luckily, washing my face always seems to make things 100% better, so I lathered up real nice, slathered on my fave Aveeno face lotion and felt a whole lot better. ¬†I was still 1/2 hour later to work than norm, but it was worth it to take time and enjoy this…

I finally busted open my last box of Zoe’s granola sent to me awhile ago as a free sample: Cinnamon Raisin! As with all Zoe’s granolas, my first reaction was mmmmmmmmm! Honestly, I wasn’t the hugest fan of their bars, but their granolas are really good. I love the sweetness, crunch and texture of the mix, and the Cinnamon Raisin was no different.

Finally, lunchtime struck and it was time for the challenge: The Gas Station Challenge!

Since the next week and a half is going to be a bit crazy, I don’t know if it will be worth it for me to grocery shop because I am grabbing lunch with friends, have a couple events to go to and obv going to be uber busssyyyy. ¬†So, I decided today I would give myself $10.00 to buy myself lunch, snacks and dinner for the day. ¬†You may be asking me, $10 bucks at a gas station, are you kay-ray-zee woman?

Most likely.

However, all of us are busy and quite frankly, don’t always have time to prepare lovely, gorge homemade meals featuring organic, homegrown ingredients all the time (or even half the time!). ¬†Sometimes, dinner is chowed down while driving, talking on the phone and trying to navigate the mean highways of MN…I mean…

I wanted to see how far $10 would go at the gas station and see how I could navigate our fave neighborhood hot spot for some healthy eats. ¬†Here’s how it went…

  • Bumblebee Sundried Tomato & Basil Tuna with Crackers
  • Crystal Farms Marble Jack cheese stick
  • Crunchy Peanut Butter Clif Bar
  • Veggie platter with dill dip
  • 1 (6-oz.) container Kemps¬†1% fat cottage cheese
  • Green apple
  • Dark Chocolate Peanut M&Ms

Two meals and a snack for $10.20…if I do say so myself, I rocked that challenge!

Lunch: Tuna cracker pack + cottage cheese + veggie tray. ¬†One can get quite creative with this combo, if I do say so myself…

Volleyball was a bit bittersweet. ¬†We lost. ¬†Bad. ¬†However, in brighter news, next Wednesday is now my going away shindig (instead of a playoff v-ball game). ¬†I’ll take that trade-off.

Now, it’s time to make my master moving to-do list and get to bed. ¬†I haven’t worked out since Sunday (eeek…there is marathon training to be had!) and haven’t gotten to bed before 11pm in a week! ¬†That just ain’t okay with my healthified g-ma ways :).

Seriously, I could not be more excited tomorrow is Friday.¬† This has been a long, draining week, and I can’t wait to relax and enjoy doing nothing.¬† Today was another busy day…the day started out with a groggy wake-up followed by a bowl of Kashi Honey Sunshine (aka Cap’n Crunch) with vanilla almond milk and a banana with peanut butter.¬† Perfect and filling!

The morning at work was really busy and around 11am I broke for a small lil’ peach

My peaches this week have been amazing!¬† One of life’s simple pleasures really, a perfectly ripe and juicy peach ūüôā¬† Work was a bit stressful today, but with the help of my yummy Tempeh Thai Peanut Stir Fry from last night, it was a little more delicious.¬† Too delicious.¬† I ate the whole thing before I realized I had yet to take a picture!

I had planned on taking a long walk during lunch, but due to some logistical issues, I didn’t get to go :(.¬† Today I really could have used the endorphin boost.¬† Instead, I relied on an nice (yet oddly-shaped) apple with some PB for a perfect protein + carbs + fiber afternoon snack.

After work, I was happy to get out and bask in the fresh air.¬† Not for long however, I had a 5:30pm dinner date with one of my high school friend’s Stacy who I haven’t seen in 4eva!¬† She is probably one of the¬†the cutest, funniest gal I know and also can appreciate the balance of a healthy life.¬† Hence why we two ladies hit up one of my all-time faves…Good Earth Cafe.

It definitely deserved a holy yum!

It was soooo good to catch up with Stacy!¬† I love seeing people like that – sometime you forget how good it is to see old friends :).¬† The delicious dinner + company definitely brightened my dismal day.¬† After dinner, I headed over to my sister’s house to pick-up a lovely delivery…

Thanks to the fabulous people at Chobani for sending me some of their Greek yogurt to try, especially you Morgan!¬† Chobani Greek yogurt comes in six flavors – strawberry, blueberry, vanilla, peach, honey and plain – and is all-natural, hormone free and low in sugar.¬† Don’t forget too, it’s creamy, has lots of probiotics and full of protein.¬†

I am especially excited to try it because I have not been able to find Chobani Greek yogurt at any of my local grocers, and that peach Chobani has been calling my name!  You better believe you will see Chobani once (or twice) on the blog tomorrow, complete with a full review!

Also…I have some more big news…

I signed up for the Medtronic Twin Cities Marathon on October 4th!!!

Yes, I am pretty sure I have gone mad, but my sister and I are doing in TOGETHER!¬† Ahhh…training shall commence in July, then hopefully 16 weeks, I will be crossing the finish line.¬† We already decided this is not going to be a thing where we worry about time; as long as we finish, we will be happy :).

On that note, this girl is out.¬† My bed is calling my name…can you hear it…

Was anyone else’s day busy crazy like mine?¬† Please tell me I’m not the only one!

Hey guys – I am working on some updates as promised!

Check out the about me section for an updated bio and some new after pics.¬† I am still working on getting some better before pics, but they are all at the parent’s house, so I need to make a trip to Wisconsin soon!

I added one new recipe (courtesy of my mummy!) but am planning on adding a few more this week, so stay tuned for that!

Don’t judge me, but my running shorts and t-shirt I just went running 6 miles in, eek!¬† I’m that dirty girl :).

What’s the last thing you read and/or currently reading?
I am currently reading “The Shack” by William P. Young.¬† I’m not going to lie.¬† I’ve been “reading” it for two weeks and only on chapter 2.¬† Oops!

Do you nap a lot?
I almost never take naps.  Once I am up, this girl is like the Energizer Bunny!

Who was the last person you hugged?
My grandpa when I visited him over my lunch break today.

What’s your current obsession/addiction?
Raw almond butter, peanut M&Ms (more like a perma-obsession) and checking Anthropologie every morning for cute dresses.

What was the last thing you bought?
Coincidentally, a berry-colored dress on sale from Anthropologie, haha!

What are you listening to right now?
Nigel Lythgoe telling a dancer he won’t make it to Vegas on So You Think You Can Dance.

What time do you usually wake up?
Usually between 6 and 6:30am during the week and perhaps 8am on the weekends.  I am hoping to start waking up 1 Р2 days a week to squeeze in a workout before work, so on those days, even earlier Рsend me some good vibes to make this happen!

Name one thing you can’t live without.
Sleep.¬† Oh yeah…family and friends is a close second :).

What time is bedtime?
Ideally, between 9:30 and 10pm.¬† I’m kind of a grandma who likes tea and going to bed early.

If there is one place you could be right now, where would that be?
In my favorite city in the world…LONDON!¬† Preferably eating a gooey toasted cheese sandwich and washing it down with some cheap Strongbow cider.
