Falafel My Breakfast Cookie Larabar June 29, 2009

None of that really makes any sense.  It’s just a hint of what’s to come on this post, haha!  A breakfast cookie Larabar, quite frankly, would just be too good to be true :).

This, however, is both good AND true.

A lovely strawberry coconut breakfast cookie!  Oats, peanut buttah, hemp protein powder, coconut, yogurt + water (ran out of milk), strawberries and this time I added 1 tbsp. of flax to it too.  Shoutout to Keith for reminding me to buy this wonder ingredient!

Unfortunately for some reason, as much as I love my breakfast cookies, they don’t quite feel filling to me.  I know I am definitely getting enough calories (400-500 depending on the cookie) that I should feel more satiated than I do, but I don’t know.  Has anyone else had this problem?  Let me know dudes!

No worries, however, because mid-morning I hung out with one of my favorite Laras.

Lunch brought me a goodie that I have been dying to find (which I finally did at our friend WF)…Sunshine Burger in Falafel!  OMG – this burger is soooo good, especially if you are a falafel fiend like myself.  Unfortunately, my mustard flower art didn’t turn out at pretty as the PB art, but no worries because it tasted just as good.  Those MN grown tomatoes are also the best thing eva – I never used to like tomatoes, but now these are like poppin’ candy to me!

And here are the all-organic ingredients…

Raw ground sunflower seeds
Brown rice
Chickpeas
Split peas
Tahini
Sesame seed paste
Parsley
Cumin
Garlic
Sea salt

That’s it!  Amazing, no?

After lunchie, it was a fabulous 30-minute walk outside in the cool weather.

Afternoon coffee you ask?  Of course not!  I’m cutting down my consumption with the help of Senor No Meat Athlete – it’s a cup of lovely organic black tea with milk and sugar, an idea I stole from Eating for England.  You see, Miss Angharad just started her blog last week so show her some bloggy love by heading over to her site for lots of yummy eats and British treats!

Snackytime was the usual combo – yogurt + TJ’s blueberry muesli + raspberries.  Simple and delish!

The weather is cool and cloudy – not the best weather to perk yourself up on a Monday.  I’m going to have to muster all the energy I can to get my buns to the gym before The Bachelorette starts at 7pm – I’m officially addicted!  Tonight is the hometown visits, so it should make for some interesting/good dramz on ABC.

Stay tuned for dinner – I think I got something good brewing ;).

    i have never had a falafel before but it seems like everyone and their mother is tryin’ ’em! I’ll have to keep my eyes peeled – they sound awesome!

    Holy shmol – that falafel burger needs to be on my plate STAT! Sorry the breakfast cookie doesn’t have much staying power. I’ve never had one!

    It’s fall basically in MI today. WHERE did summer go?!

  3. That falafel patty sounds wonderful. I rarely go the patty route. I’m afraid of sodium. I have this horrible reaction of bloating so much I can’t fit in my clothes. Sigh…

    I’ve got goodness brewing for dinner too!!! Looking forward to it.

    How much oatmeal do you use? I use a heaping 1/2 cup and the breakfast cookie is definitely my go to breakfast when I know I’m going to need a breakfast with staying power. I use more oats with the breakfast cookie than I do with overnight oats or oatmeal cooked on the stove top, because I use less milk, no yogurt, etc, so I feel like I can add a little more oatmeal to “make up” for those missing calories and I think the extra oats/fiber makes it stick with me longer.

    There’s my very long answer to your breakfast cookie question! 😉

      You are such a sweetheart.

      I do use 1/2 cup – the breakfast usually holds me over but I don’t feel satisfied. Does that make sense? I might have to play around with my recipe. Thanks dear!

  7. i swear i’m gonna make a breakfast cookie someday soon…does it crumble in your hands or can you hold it in your fist it in the car? not that i’m advocating eating so rushed like…..;)

      It stays together enough to where you can break off a piece and chomp on it, yes. Many of my cookie breakfasts are sadly eaten on the run, haha. I don’t advocate but whatcha gonna do? A girl is sometimes a little short on time!

    Did you just say.. a falafel burger?! My my that sounds deliciouss! I love your mustard art! I suck at that so I just opt for dots lol. PEANUT BUTTER COOKIE LARABAR IS MY FAVORITE!! then comes the coconut cream pie. Larabar should just endorse me. You hear that Humm Foods?!

    Those burgers look awesome! They are more caloric than the ones I typically eat but do they hold you awhile?

      They do actually – that sammie + tomatoes I had held me for about 3-4 hours for sure! They are pretty dense too, so I think you will find they will hold you over fabulously!
