Pedal Pub-a-palooza June 14, 2009

Good morning dudes (yes, it’s 12:30am!)!  I don’t know why I am not going to bed yet – for some reason, I was still awake when I got home from the bachelorette party so I thought I would blog now :).  The bachelorette party was a blast!  But as always, first things first…

After staying in last night, I woke up at 9:30am this morning, and it was glorious.  I felt well-rested (almost too well-rested!) and ready to begin the day.  The best part? It was ABSOLUTELY GORGEOUS out today.  Sunny, warm and 80 degrees.  It would have been the perfect morning for a green monster, but instead, I couldn’t resist my last bowl of Kashi Honey Sunshine!  I am definitely going to need to restock this stuff.  With vanilla almond milk…



The cereal itself didn’t quite fill me up, so I hit up my Chobani stash and dug into the blueberry flavor with about 1/4 cup raspberries on top.  Ummm….SCRUMPTIOUS people!  I think the blueberry is my favorite thus far, which I am shocked because I thought for sure it would be the peach.  There is something about fruit + yogurt combo that just cannot be beat.

After breakfast, I engaged in my favorite weekend activity: bumming around!  I grabbed some coffee from the ‘Bou, grabbed a couple miscellaneous items at the grocery store, walked around and then headed home.  Seriously, that is like my ideal Saturday morning.  If there had been a trip to the farmer’s market involved, it would have been perfect.

When I got home, I laced up my tennis shoes and bounded out the door to enjoy the sunshine.  I walked 1 mile, ran the next 2 miles, walked 1 mile, ran 1 mile and finally walked the last mile – for a total of 6 miles.  After really not working out all week, it felt so good to move my legs, get my heart rate up and break a sweat.

When I got home, I was so excited to make and devour this…



Homemade Mexican Black Bean Burger and Kale Chips!

For the bun, I used a slice of toasted Ezekiel bread and layered the ingredients (instead of putting them in the black bean patty) and it was messy deliciousness!

After lunch, I ventured on a little baking experiment with help of VeggieGirl…you see, if you don’t know already, Miss VeggieGirl is quite famous for her blondies.  Well, I couldn’t stand to see one more picture of them without drooling on my computer (or worse, myself :)) so on my morning grocery store run, I grabbed a few more ingredients and prepared to make my blondies based off of this recipe.

Unfortunately, I deveganized them…sorry VeggieGirl :).


Nuff’ said.

Here are my substitutions:

Chobani Vanilla Yogurt -> soy or coconut milk yogurt
1.25 cups half regular/half whole wheat flour -> 1.25 cups gluten-free all-purpose flour
1 (3-oz.) bar 72% dark chocolate bar chopped -> 1.5 cups vegan white chocolate chips
3/4 cup organic unsweetened  coconut -> 1 Coconut Cream Pie Larabar


The verdict?  I’ve never tried VeggieGirl-made blondies, but these were pretty fantabulous!  They had all the right flavor combinations and weren’t too sweet.  You bet I will be bringing the rest of these babies to the pool tomorrow when I meet up with my gal pals and bask in the sun…

On my way to the bachelorette party, I snacked on a banana – knowing I would need a little more food in my stomach if I was going to go out for some drinks :).


And for my girl Charlotte’s bachelorette party, welcome to the Pedal Pub!!!


Yes people, that is a pub.  On wheels.  That moves.

It was seriously SO MUCH FUN!  We went on a 3 hour pub crawl, pedaling ourselves (at a very slow rate) through NE Minneapolis as people honked, cheered and wooed at us.  Beer and wine are allowed on the Pedal Pub, and we stopped at about 4 different bars throughout our journey.  Not to mention, you get a good lil’ leg workout in the process of it all!   Here is me and Miss Charlotte – the soon-to-be bride…

I also had another beer at one of our bar stops.

By the end of the three hours, we were tired, hungry and of course, a bit drunk :).


We headed over to a Minneapolis classic – Elsie’s – for some grub at about 8:30pm.  We ordered a ton of greasy appetizers, but I went with the Deluxe Grilled Cheese (Cheddar + Pepperjack) on 12-grain bread with a side of fruit and potato chips.  However, I didn’t eat the potato chips while instead, eating the greasy food I really wanted – waffle fries with seasoned sour cream.  Yum, yum and yum!



I may have also stolen a cheese curd or 7 :).

Alrighty, I’m still feeling mighty full from that dinner but think I’m ready to hit the hay.  I had an awesome day, and I hope you all did as well.  Woohoo for the weekend!

    Sounds like a fun day! I’m so glad you had fun! I know what you mean on your breakfast choices.. I always think well I should eat this but nope I’m craving this! lol
