I love those Sundays when you have nothing to do and can do anything you want!  They don’t come often, so I try to take advantage of them.  Today after breakfast, I met up with a hilarious friend for some coffee/hot chocolate (coffee with 2% milk for me, hot chocolate for him :)).  He seriously puts me in such a good mood – he’s that dang funny.

An hour and a half later, I got back and felt like running.  I genuinely wanted to go running, and the fact that it was like 80 degrees, sunny and gorgeous out didn’t hurt either.  Tackling a nice 6 mile loop, I ran the first 5 miles then walked the last mile, enjoying the smell of yummy lilacs and basking in the sun (with a lil’ SPF protection of course!).  When I got home, I wasn’t super hungry and just made up a small snack plate to munch on while I stretched.

1/2 cup carrots
1.5 tbsp. raw almond butter
1 Cherry Pie Larabar (finger-food style!)


After running, I showered up and ran some errands to the usual, gas + Target.  Then I came home, cleaned up a bit, got some shtuff done on the computer and put away my laundry.  I know, a party, right?  Late afternoon, I concocted Green Monster #3 aka The Winning Recipe!  Yep, it’s official: I’m addicted.

1 cup Oat Dream oat milk
1 banana
1 cup frozen tropical fruit blend (pineapple, mango, banana)
1 large handful (2 cups) spinach
1 handful ice cubes

You are looking at perfection…


Since I was quickly running out of things to do (LOVE when that happens!), I took another walk.  It was probably about 1.5 or 2 miles, but when the weather is soooo nice out, I can’t be inside.  Blame my mom for ALWAYS telling me as a kid, “It’s too nice out to be inside!”  My guilt continues today.

For dindin, I concocted a super easy pasta dish to use up some ingredients I had in the kitchen.  It was penne pasta with olive oil, garlic, sundried tomatoes and spinach.  Simple and delicious.

After dinner, I decided to head over to my favorite Sunday yoga class with Deb.  Today I definitely got my fill (plus some!) of exercise, but if you can’t tell, I have a slight problem being bored and really can’t stand it, haha!  Since I had nothing left to do (and TV really has crap on these days), I headed to center my chi and stretch my body.  My mind was extra monkey-like today, and I didn’t focus too well, but by the end I was feeling better.  Maybe that was because I had this on the mind…


Got home from yoga/pilates combo class and had 1/2 naner with some almond butter, especially with a nice cup of mint tea!

Now I am off to shower, crawl in bed and conk out – tomorrow is already Monday!  Hope you all had a good weekend!  See you bright and early tomorrow for a return installment of Holly Investigates… (cue dramatic music).

Hey guys – I am working on some updates as promised!

Check out the about me section for an updated bio and some new after pics.  I am still working on getting some better before pics, but they are all at the parent’s house, so I need to make a trip to Wisconsin soon!

I added one new recipe (courtesy of my mummy!) but am planning on adding a few more this week, so stay tuned for that!

10 Hour Night

Due to my frugal Saturday night…I got 10 hours of sleep! 

Last night, I just kind of hung around the house and got some little things done.  Cleaning? Check.  Laundry? Check.  Job applications? Check.  Trashy TV?  Check. 

For some reason, I wasn’t very hungry last night.  Since this happens like NEVER, I took advantage and munched on my last Heart Thrive vegan energy bar in Raisin Spice.  These bars were good – dense, chewy and flavorful, if not a little bit dry.  Paired with tea or coffee however, they are really good.  I think my favorite flavor was the Raisin Spice…


I took a short brain-break walk later in the night, then came back and made Green Monster #2!  This recipe was much simpler and basic than my first one but still good!

1 cup Oat Dream oat milk
1 banana
1 large handful baby spinach
2 handfuls of ice


Now that is one green monster!  With all the banana-ness going on, I don’t think I could really taste the oat milk.  I might have to have it with some cereal or something to give a proper review.  Didn’t hurt the smoothie though, so far so good!

This morning, after a luxurious 10 hours of sleep, I relied on one of my FAVORITE blogger recipes to make for breakfast.  Enter Oaty Cakes from Miss Yoga is Yummy


I made three slight modifications: organic nonfat plain yogurt (for Greek yogurt); 1 tbsp. raw cane sugar (for the brown sugar); and 1 tsp. of cinnamon (instead of 1/2 – I LOVE my cinnamon!).  Served with some joe & skim milk, and smothered with about 1 tbsp. raw almond butter, 1/2 sliced banana and a drizzle of maple syrup: HEAVEN!  Seriously, these pancakes are my new favorite.  Try.  them.  now.

Does getting lots of sleep sometimes make other people MORE tired?  I think that is what’s happening to me right now.  I need to wake up, scoot my buns outside and enjoy another glorious, sunny Sunday.  Enjoy!


The rice, the rice, the rice is on fire! May 30, 2009

After breakfast, I checked the schedule for my yoga class and lo and behold, there was no more 11:30am yoga class!  Good thing I checked – it must have been my intuition because I ever rarely check class schedules; I just assume they are always on.  Instead, I ran a couple of errands – headed to the bank and then ran to the grocery store for a $10 grocery run.  Yes, that’s right, 10$!

Since I know I am going to be super busy next weekend with wedding #2, I didn’t want to buy a full set of groceries, so instead I am going to (yet again) try using up what I have, plus a couple more staples.  I picked up a big bag of spinach, bananas, carrots, 1 can of black beans and this new product…


Polly and Kath – you can have your favorite yummy oats in milk form!

Here are the stats:

Serving: 1 cup (120 calories, 3 g fat, 3 g fiber & 4 g protein)
Enriched with vitamins A,D,E, B12 and calcium
Lactose & dairy free, 100% vegetarian

I will let you know how it is when I try it – since I’m keeping it low-key tonight, I’m thinking of a second try at a green monster perhaps?

After errands, I came back and did some little things around the house before starting on lunch….cue dramatic music.  So, yours truly thought it would be a fabulous idea to cook up a batch of brown rice for the week.  You know, prepping ahead?  I got the pot of rice and water together, let it boil then reduced to a simmer while I parked my butt on the deck in the glorious sunshine.  Well, the sunshine was just soooo intoxicatingly warm, I didn’t realize I had forgotten about my rice until a funny burnt smell suddenly tickled the little hairs in my nose…

I darted up, ran into the house at super sonic speed and grabbed the pan immediately off the stove.  I opened it to find a half-burned pan of brown rice.  Ugh!  Fortunately, about 1 cup was salvageable, which I consequently used to make a fabulous Mexican Brown Rice Bowl for lunch.

1 cup brown rice
drizzle of EVOO
pinch cumin, garlic powder & S+P
1/2 cup black beans
1/4 cup sliced green pepper
1/4 cup diced onion
1/4 cup mild salsa
dollop of Greek yogurt
1/2 diced avocado

Layered all together to make this…

Oops – in the midst of the burning rice insanity (I definitely had to open the windows :)), I totally forgot to take a picture of this colorful, delicious lunch!  Honestly, the rice actually added a nice smoky flavor to the dish.  Who would have thought?  Afterwards, I munched on a TJ’s fruit leather.


After lunch, I met up with my sister for a nice hour-long walk through some trails at our old elementary school.  Looks like somebody else was in the mood for a walk too…


Suddenly, out of nowhere, my sister Alli and I saw this HUUUGGGEEE turtle just scooting along the path!  Poor thing, I hope he found his way home.

After the walk, we decided on a day like today, there was only one thing left to do: go get ice cream!  We headed to Cold Stone Creamery, where I got the Berry Berry Berry Good with Sinless Ice Cream (made with Splenda).  I’m usually not one to get the artifical sweeteners, and honestly, I wish I hadn’t.  My sister’s Berry Berry Berry Good with the Sweet Cream Ice Cream was soooo much better!  Oh well, you live and you learn.


I don’t what to do with myself the rest of the day – all my friends are busy, my family doesn’t live here, I don’t have that many things left on the to-do list.  I’m not good at being bored – help!!!!  Have any fun ideas (that don’t involve money) I can do tonight?  Let me know!


Sleepin’ In

Top o’ the morning to ya!

Hope you all had a fabulous Friday night – I had lots o’ fun out with my ladies last night.  We did a little barhopping, got to catch up a bit, did a little dancing, maybe a little UBing (that’s for you Lisa :)) and a whole lotta fun.  On my way downtown, I had a Heart Thrive Raisin Spice vegan energy bar, knowing that I would be up wayyyy past my bedtime and would most likely be getting hungry very soon.


I also had a couple handfuls of baked Cheetos (one of my favorites as a kid!) before we headed out, but they will remain unpictured.  I was too busy licking the yummy cheesiness of my fingers – totally gross, I know :).

Then all us ladies headed out for the night!

After bebopping to a couple bars, I headed home at about 1am.  Since I clearly do not have the stamina of my college days, I (a) only prefer to have a couple drinks max out (I had one beer tonight), (b) like to get home at a reasonable time.  I know it sounds all granny and lame, but honestly, I just feel soooo much better this way.  Not like I don’t have a crazy night here or there, but…this morning was absolutely gorgeous, and if I had been drinking tonight, let’s just say I would not be enjoying it like I am right now :).

This morning I relied on a simple bowl of oatmeal to fuel me up:

1/3 cup rolled oats + 1 tbsp. oatbran
1 medium banana
LOTS of cinnamon
drizzle of honey
HEAPING tablespoon of TJ’s raw almond butter


Along with coffee with skim milk, it was a good refueling breakfast.  Now, it looks like yours truly has the whole day ahead of her.  What to do?  I think some 11:30am yoga is on the menu, as is some grocery shopping (I am on the prowl for a cheap grocery bill this week!) and whatever else I FEEL like doing.  That is one of the best feelings in the world.

That’s right – T.G.I.F. baby!

This Friday morn, my day started out fabulously due to the other half of my green monster from last night.  It was just as good as last night, although I think next time I make it, I might add a smidge less avocado (maybe 1/2 – 3/4 of one).


Doesn’t look so green in that pink cup :).

A couple hours later, my tummy was grumbling for some more eats, hence this…


Delicious as always.  Since I had a bit of a later lunch, I munched on this gorgeous, juicy peach an hour or so later:


Luckily, I stayed pretty busy at work today (sometimes Fridays can be boorriinggg!).  Lunch today happened to be a treat – a coworker and I had a lunch “meeting” at one of my favorite local spots.  I had one of the specials of the day, the Chicken Cobb Salad.  Filled with mixed greens, red onion, cherry tomato, avocado, beets, egg, chicken and drizzled lightly with some buttermilk ranch, it was sooooo good!  I ate about 3/4 of the chicken and all of the salad.


The crusty white baguette didn’t hurt either :).

Back at work, I grabbed a small handful of these as a nice Friday treat.  One of my all-time faves, peanut M&Ms!


The rest of the afternoon, I jammed to James Morrison’s new CD “Songs for You, Truths for Me” (if you haven’t heard it, get your buns out there and get it now!) and waited for the clock to hit the ever elusive 5pm.  Finally, it happened and I darted out of there so fast, you would not believe!

When I got home, I broke open this lovely for dinner:


Then paired it with a organic nonfat plain yogurt/blueberries/coconut/blueberry muesli/drizzle of honey combo, and voila! – a delish, easy, nutritious and quick dindin.  Exactly what I need when I get home from work with no patience to cook!




Whew – I don’t think my brain can think anymore this week :).  I am soooo excited for the weekend!  I think tonight is going to be a fun ladies’ night on the town, so I am saving myself for perhaps a beer or two and LOTS of dancing.  Tomorrow I plan on getting lots of things done but squeezing in some fun as well.  I hope you all get to spend time enjoying the freedom of the weekend – my favorite weekend activity is going to the farmer’s market, which I think I am going to do tomorrow morning.  Alright, I am off to get myself beautified for my lovely ladies tonight!

Don’t judge me, but my running shorts and t-shirt I just went running 6 miles in, eek!  I’m that dirty girl :).

I am currently reading “The Shack” by William P. Young.  I’m not going to lie.  I’ve been “reading” it for two weeks and only on chapter 2.  Oops!

Do you nap a lot?
I almost never take naps.  Once I am up, this girl is like the Energizer Bunny!

Who was the last person you hugged?
My grandpa when I visited him over my lunch break today.

What’s your current obsession/addiction?
Raw almond butter, peanut M&Ms (more like a perma-obsession) and checking Anthropologie every morning for cute dresses.

Coincidentally, a berry-colored dress on sale from Anthropologie, haha!

What are you listening to right now?
Nigel Lythgoe telling a dancer he won’t make it to Vegas on So You Think You Can Dance.

What time do you usually wake up?
Usually between 6 and 6:30am during the week and perhaps 8am on the weekends.  I am hoping to start waking up 1 – 2 days a week to squeeze in a workout before work, so on those days, even earlier – send me some good vibes to make this happen!

Name one thing you can’t live without.
Sleep.  Oh yeah…family and friends is a close second :).

What time is bedtime?
Ideally, between 9:30 and 10pm.  I’m kind of a grandma who likes tea and going to bed early.

If there is one place you could be right now, where would that be?
In my favorite city in the world…LONDON!  Preferably eating a gooey toasted cheese sandwich and washing it down with some cheap Strongbow cider.
