Why I chose to start this blog on the weekend of my college roommate’s bachelorette party is still unbeknownst to me…I mean, bachelorette parties aren’t exactly known for their health factor (wink, wink).  Anyways, I had a fabulous weekend catching up with my old roomies (look at how cute they all are!) and friends in Madison.  I managed to stay pretty healthy in the midst of all the festivities, including a couple of tasty Wisconsin beers!


This morning, I even got in a six mile run with my roomie Jamie and her mom.  We are running the Madison 1/2 Marathon Memorial Day weekend, which means t-minus 29 days until the big day.  One of the best ways to stay healthy and active is definitely keeping like-minded people in your life!

Before running, I scarfed down a sesame bagel with a little bit of Smart Balance butter on it (no picture).  Although that’s not my regular breakfast, those white carbs are FABULOUS pre-run fuel.  Eating protein and dairy products too soon before running causes me to want to keel over and take a nap in the grass mid-run (mostly due to those dastardly side cramps).  Simple carbs on the other hand digest quickly and give you that quick energy – I seriously felt I could have gone another six miles!

After running, Jamie and I had to hit the road to head back to Minnesota.  We decided to grab Panera Bread for a nice lil’ ladies luncheon in the car – half Mediterranean Veggie on wheat, black bean soup and multigrain baguette (ate about 3/4 of the baguette).  Caffeine is a road trip MUST, so I ate my meal along with a nice medium coffee with 2% milk.









Midway through the 4 1/2 hour drive, I was needing a little snack to keep me busy.  Hello PUMPKIN SEEDS!  High in good for you fats and protein, this held me perfectly until dinner.  Between my seeds and James Morrison’s new CD “Songs for You, Truths for Me,” I was a happy gal!


Back in MN, this gal headed straight to Trader Joe’s (one of my Favorite Things) to grab some groceries for the week.  For dindin, I kept it simple: Junk Salad (baby spinach, red peppers, red onion, carrots, raw goat cheddar bits, chickpeas & Wee Willy’s Red French salad dressing) and plain nonfat Greek yogurt with blackberries and a drizzle of honey.  Dee-lish!
