It’s just another manic Monday…gotta love a good 80′s tune! It was back to the work grind today, starting off the day with a little Apple Cinnamon Quinoa! Today was the first edition of Holly Investigates and only found it appropriate to show off the recipe I concocted for quinoa. Along with a nice cuppa joe with nonfat milk, it was a dandy breakfast that held me over until snack time.

For snacky time, I grabbed what is definitely my new favorite Larabar. Apple Pie = major deliciousness. These raw food bars are made with the simplest yummy ingredients. I swear this tastes just like an apple pie but it’s only made with dates, walnuts, unsweetened apples, almonds, raisins and cinnamon!
This held me over until lunch at noon, where I also debuted another new recipe. Garbanzo Guac! Made with all the classic guac ingredients, I throw in some chickpeas for extra protein and yumminess! Paired with Trader Joe’s whole-wheat Indian naan and a crunchy Braeburn apple (I guess it’s apple day today, huh?), here’s lunch!



Afternoon snack time was a lil’ Trader Joe’s Nonfat Vanilla Greek yogurt with a cup of blackberries & strawberries.
Finally, the work day was over, and I was starving! I raced home and concocted a mish-mash of things. I took some refried vegetarian beans, topped them with a little Wisconsin raw goat cheddar and microwaved it for 1 minute. I garnished with some diced tomatoes, onion and a bit of cilantro and served them with red pepper and carrot sticks. On the side, I couldn’t resist a slice of toasted Ezekiel bread with almond butter and all-fruit raspberry preserves (which I think was my favorite part of the meal!). PB&J never lets you down.
Now, I have about a million things to do – laundry, still have to go work out (my motivation is flagging by the minute!), cleaning, organizing, banking, planning – you name it. Ugh! Wish me luck!
